Received no notices, sorry.
Had bagels with cream cheese and fruit last night, didn't feel like cooking with a headache.
This past week I made creamy chicken cajun pasta, fried chicken, Beef tenderloin that was stuffed with cheese-spinach and sun dried tomatoes, Eggplant parm, and ham steak with all the fixins. There were side dishes but I don't feel like listing them all at the moment.

mkolmar so great to hear from you...I have been wondering about you. I hope all is well with you and yours.

Dinner last night was take out. We had a Chinese chop salad and Japanese pan noodles with shrimp. It was yummy!

This past week I made a roast pork loin with roasted veggies, a pot of white chicken chili, a creamy chicken soup and a sausage stew. Gee...we had lots of soup dinners thumbs_up.gif That time of year for me. The cold and snow will not be gone soon enough for me.

Hugs to all!

Hey Ladies,

Hope that all is well. Dinner for me tonight was a sun-dried tomato and chicken flatbread wrap courtesy of Lean Cuisine icon_redface.gif .

I made a pot of chili a couple of days ago with jalepeno and cheddar cornbread. Other than that...most of my meals have been on the go.

Have a great night!

Yesterday was Subway subs. We had a training class all day. We have to take so many hours in a year to keep our foster care license current.
Saturday is usually "free"day, but not yesterday....we saved free day for the Super Bowl! We have friends coming over to watch the game and eat.
Hope all are having a great weekend!

Pizza from a local bowling alley (they put honey and sugar in their crust and it's the best pizza i've ever had!... ok, a close second)

I am looking to add some more meatless meals into our menu, do any of you have any ideas? and recipes? Lettuce and onions are pretty much the only things i can't use. I can use onion salt or powder instead, but real onions are out since my BF is allergic to them.

Well we were going to have nachos tonight with black beans and taco meat. But at supper time, Meredyth (my 1 1/2 yr old) fell and split open her lip requiring us to take her in for a stitch. So we had McD's and Burger King.

Oh butterflyjuju I'm so sorry. I know how stressful that is with your little ones. I hope today is a better day at your house.

Last night was leftovers. I had chicken soup. Tonight I'm going out with my daughter and her best friend and her mother. We are going bowling and then to dinner.

Warmer weather is supposedly coming. I am already thinking of what I can cook on my grill!

Last night DH and I went to Cheddar's for our Valentine's dinner. We had steak, loaded baked potatoes, and texas cheese fries. He also had mozzarella cheese sticks. I had Sante Fe spinach dip. We both drank raspberry lemonade.

We are going back next Saturday with the kids for their Valentine's from us. They haven't been to any restaurant except fast food since Meredyth was 5 months and she'll be 2 in April. She is allergic to pork. So we're hoping that there are no reactions while we are there and that we can get the Texas cheese fries minus the bacon. And that whatever is cooking in the kitchen doesn't bother her. We've just now started eating pork around her on occasion but I will not cook it.

Homemade shepherds pie. Made with slow roasted lamb, mashed potatoes with garlic, peas and carrots with a homemade crust. Topped with a layer of cheese. Dessert was strawberry cream soda floats. Made the strawberry sauce, but bought the ice cream.

Creamy cajun chicken pasta with salad and artisan bread. Dessert was stout cake balls dipped in chocolate, marzipan and raspberry tiramisu.

Italian breaded chicken, roasted apples with sweet potatoes and walnuts, green beans with slivered almonds, roasted red skinned potatoes, tomato soup, butternut squash soup and yeast rolls. Dessert was a black forest cake with a layer of marzipan on the bottom.

We've ate leftovers the last 2 days. Tonight is homemade chicken noodle soup and homemade vegetable beef soup with grilled artisan bread.

Tomorrow will be lamb with pitas and hummus. Friday will be spaghetti for the kids and stuffed spinach cheese shells for us adults. Of course there will be garlic bread also and roasted cauliflower.

Care to share what you did? I know you don't always have recipes, but approximate temp and time? And about what size you're apples and sweet potatoes where in?

Tilapia, garlic lemon pasta, broccoli (covered and steamed with olive oil, garlic, and red pepper). Ice cream with chocolate sauce (i also bought the ice cream hehe icon_smile.gif )

Enchiladas with all the toppings, spanish rice, refried beans and a mock twix bar.

Those are the only good meals this week since my BF is out of town again and it's just me and the kids. Quick easy meals for me and my daughter.
Chicken strips, green beans, strawberries, and a cookie.

Homemade cheese pizza

Yeah I guess it does sound kind of funny now that you mention it. icon_lol.gif

For the sweet potatoes with roasted apples and walnuts my MIL does them all together and puts pats of butter and some cinnamon on top. I find that this makes the dish more watery since the juice from the apples cook out before the sweet potatoes are done. I usually just roast off some sweet potatoes that are in slices with a little butter. While that's going I roast the apples tossed in cinnamon and a little sugar with a tiny bit of nutmeg. Put some butter pats in with it while cooking. Once done I take out the apples and add them to the sweet potatoes. I usually have a decent amount of juice left and just drizzle some of it on top of the sweet potatoes. Top that with the walnuts and bake just for a few more minutes. Or you can do the nuts before hand and just sprinkle them on.
This can be done with sweet potato chunks and apple chunks also. Just depends on what you like to do. This can also be made more into a savory dish just by switching out the spices.

If you need to you can cheat and put it in the microwave. Sometimes it's easier just because the sweet potatoes and apples will be done and different times depending on how thick you cut them. I usually bake at around 375 degrees. Apples take around 45 minutes. I stir them every 15.

Yes, I laughed at the ice cream comment. mkolmar your dinners sound so amazing. Your family eats well!

I made white chicken chili last night.

Tonight I made steak fajitas and a black bean rice. It was so good. The flavors must have been just what I wanted.

The weather was nice today. I know it won't last though! Counting the days until warm weather is here to stay.

I meant to ask you all if you typically make dessert? I rarely do as I am so tempted to eat it. I did last night, only because our daughter and her fiance came over for dinner. I made pineapple upside down cake. I only ate 1/2 a piece...but I wanted more. icon_redface.gif

toinght i ended up making bean and cheese quesadillas and we had grapes.

Ohara - I usually don't make dessert for dinner. I do usually have something sweet around the house though. We always have ice cream as i stock up when its on sale (we only buy blue bunny so i buy 2-3 when there's a good deal during the summer) Most of the time if i "make" something for dessert it's jello. LOL. It's a treat for my daughter and my BF eats it like crazy. We don't really have a sweet tooth in this house, usually one scoop of ice cream or a small root beer float is enough for us.

We don't typically eat dessert either. It was my husbands birthday a few days ago so we had lots of birthday dinners. It was his weekend of celebration so to speak.

We have big sweet tooths in this house, I prefer savory though.

Hi everyone.. I am new to this site, and very excited to look around and hopefully learn alot of useful things. I live in nebraska, have one son in college and a daughter graduating this year, a son in 7th grade and a 5th grader..

My whole interest in decorating cakes/cookies came because I want to make my daughter a cute personal cake for her graduation party.. I wanted to learn how to use fondant.. I have become obessed.. lol

Thought I would share last nights dinner with you as I haven't even thought about tonights and here it is after 3. We had sweet and tangy grilled pork chops, baby baked potatoes and steamed whole green beans with garlic seasoning.. was yummy

Welcome Staci71 ! Your dinner does sound yummy.

The weather is warm today (for this time of the year in Ohio). I should be grilling out, but I have an exercise class tonight, so I made a pot of Italian vegetable soup for dinner.

Welcome to the table.

Tonight wasn't pasta after all. I had bought fryer amish chicken on sale for .79 cents a pound. WOO-HOO. I broke it down and then did a crispy skinned baked chicken with roasted parmesan asparagus, galic-parmesan roasted cauliflower head and roasted fingerling potatoes. Some of the potatoes were purple and my kids weren't sure what to think about it.

Going back tomorrow to buy more chicken since there was a limit, then I'll just break it down and pop it into my freezer.
