Oh guys I feel like such a pig. I have eaten so much in the last 2 days. Last night we wentout for a late anniversary dinner with DD. We went to Kings Buffet an oriental place. I was so stuffed when I came home. And today we went to MIL and had MORE AND MORE GOOD FOOD. But now it is getting latter and I am starting to get hungry I am asking myself WHY?? Oh well we don't do it often and it was so YUMMY. Hope everyone is having a great weekend.

Went to Illinois for the weekend. Ate all weekend I think. Last night when we got home we had pizza. Our favorite pizza place is in Illinois, but we didn't have time to go there to eat. So DH went there and picked up frozen pizzas and we cooked it at home. You just have to let it thaw and rise, then cook. YUM!!!

Last night we went to my sister's house and grilled burgers and potatoes, my sister makes really good seasoned grilled potatoes! And we also had fruit and dip, fresh green beans and chips. Oh, and some Mandarin Orange Smirnoff's...my bad?? icon_lol.gif

We had steak on the grill, broccoli and cheese and toast. I love grilling, it's so easy isn't it?

Last night was pinto beans with salt bacon, corn bread, hot dogs, veggies plus dip, shrimp plus dip, grilled corn and chips. (cook out at my parents house) For dessert: cherry pie, grilled peaches with vanilla bean ice cream and choc. kahlua mousse stuffed strawberries that were dipped in chocolate.



Tonight was breaded pork chops, red skinned baked taters, green beans plus cookies.

I have a ton of school work to do--that's why I'm on here! icon_lol.gif

Tonight was grilled italian herb and plain chicken breasts, grilled corn, fresh green beans and cookies.

Pray for me ya'll! I have my mid-term exam in nutrition in the morning and then straight to my Astronomy class for a presentation that's a good part of my grade. Tomorrow is also my daughter Raya's 7th birthday so I'm finishing up those treats for her to pass out too. icon_cry.gif I'm gonna be up really late tonight.

Ya I am still stuffed. LOL

Tonight was a throw together meal my kids love. It has velveeta shells and cheese, frozen peas and carrots boiled with the mac. and then sliced up smoked sausage that I warm in a skillet with alittle water. When the mac is done boiling add the cheese packets and the sausage and stir. The kids totally love this. We like it also just not a huge fav for DH and Myself.

Tomorrow is cake class so it will be another easy meal. Don't know what yet....

Hey twin GOOD LUCK and I don't know how you do it all.

Well, mid-term went well (I think icon_confused.gif ) Presentation went really well. Teacher said I did great. I took in star shaped NFSC with MMF, oreo truffles and chocolate dipped pretzels to the class. So hopefully the bribe worked in my favor icon_wink.gif Raya's class liked the cookies too!

I was up till 2:30 am and got up at 6:30 am to get ready for classes and study for a few minutes.

Anyways, tonight we are having cheese pizza with cinnamon sticks and a chocolate chip cookie cake

The fondant & gumpaste. The last one was tonight. I just finished up the cake at home here a few minutes ago. I am very pleased how it turned out. Now I want to learn how to do the model people and things like that. I will have to teach myself I guess. I got a book from the library but I learn better watching someone do it.

Anyway I made Frozen sweet and sour chicken from Schwans for DD and DH. I had a late lunch so I don't know what I will have.

Ohara your supper sounds YUMMY just leave out the mushrooms and send me any leftovers

My grandparents came over so we had pizza. They usually come unexpectedly so I didn't have anything nice planned. They don't care tho, the main reason they come over is to see the kids anyways!

First night we had grilled HB's with all the fixing
one night we went to a restaurant and had seafood combos mmmm (yeah I ate and I paid but oh well we only live once !! icon_smile.gif )

Tonight I made a big supper. DH is HAPPY I made his favs. Fried Chicken, homemade mashed potatoes,gravy,corn and cornbread. And for dessert Wasc cake with stawberries on top. I finally bought them and got to make them before they all ate the strawberries first. I am so FULL

Tonight will be Grilled Chicken with a herb rub , grilled corn on the cobb with a parm butter and broccoli salad

DH made a chocolate cake last night so I guess they will be having that for dinner (he wants me to post his cake to see if anybody will comment on it LOL)

Believe it or not...Hunter has asked for melted cheese on a hotdog bun with spagetti sauce to dip into and 4 min. mac and cheese.

Gotta love summer!!!

I could get use to the "easy" way he likes dinner. In a week when Morgan gets home, its back to a full course meal. icon_lol.gif

Tonight will be grilled mushroom swiss burgers, pasta salad, corn on the cob, and baked beans. I'll be so full the only thing I'll be able to do the rest of the night is surf the galleries here at CC!

Christi- and to anyone else that might be interested.

Grandma's Swedish Meatballs

1 lb. ground beef
1/4 lb. ground pork-mix together

1/3 C chopped onion
1/2 C cracker crumbs
1/2 C milk
parsley flakes (I'm not sure how much, I just add whatever looks good!)
1 egg
1 Tbls corn starch
1 Tbls sugar
1 tsp salt
1/4 tsp nutmeg

Mix all together

Shape into balls to whatever size you like. Brown them well, I usually do it til they are just cooked through. Take out of pan and make the gravy in the same pan.

3 cubes of beef boullion
3 C water
5 Tbls flour
3 bay leaves (you can use less if that seems too strong)

Whisk together over stove until slightly thickened.
Return meatballs to pan with gravy and simmer covered for at least 1/2 hour. You could also add the meatballs and gravy to crock pot on low.


This was my great-grandmothers recipe, she was swedish and these were her specialty, she couldn't go to any family function without those meatballs! They are my favorite! Please let me know if you make them and if you liked them!

YUM YUM YUM Flava (will try it soon and I'll tell ya how it went icon_biggrin.gif )!!! Oh the mexican lasagna was Pace icon_biggrin.gif in the frozen section at good ole Wal-Mart, wasn't homemade but it was VERY good and was on sale for 5 bucks!! Can't beat that!
