We had another busy couple of days. Tonight was hot dogs and fries. Last night was my chicken over biscuits. Easy and the kids totally love it.

Tonight was Swiss steak, mashed potatoes w/ gravy, sweet corn and pineapple.
Kay...chicken over biscuits??? Do tell...
SOOOO EASY You start off putting grands or jumbo biscuits in the bottom of a baking dish. In a bowl I mix a couple of cans of cream of chicken and a can of cream of celery and the thawed chicken with about half can of milk. Stir and dump over biscuits and bake. I go according to the time the biscuits need to bake and also if they look done not gooey. I always have cooked off shredded in the freezer. You can use canned chicken or left over fried chicken pulled of the bone. The thing with this recipe is you can make it however you want to. You could sub hamburger for chicken or you could use a different flavor of soup. It is so EASY

Thursday the 14th, was our 10 year anniversary so we went out to a swanky restaurant called the ROUGE. Jon had one of the best pieces of NY strip he said he ever had covered in a demi-glace with sauted morel mushrooms with potatoes and creamed spinach, plus a salad with candied walnuts and a whole bunch of other stuff. We had homemade fresh baked bread too--fresh from the oven and piping hot! I had the veal cutlet that was stuffed with spinach and cheese with potatoes, snap peas and a salad with blue cheese crumbled on top with fruit and nuts. The service was amazing!!!!!!! When the server asked at the end of the meal how everything was and how we heard about the restaurant (it just opened up in Nov.) We said we had a gift certificate from christmas and thought we would use it for out anniversary and told him we have been married for 10 years. He comgratulated us and went to get the bill, but came back with a plate instead. Said he told the chef today was our anniversary and the chef said to say congrats and then handed him a dessert (made in house) that was HUGE! It was bread pudding soaked in rum with ice cream. It was sooooo good. (Jon hates bread pudding and he scarfed it up) There was a candle in the dessert and the waiter had us each make a silent wish and blow it out together. The manager/owner even came out and met us on our way out the door to say Thanks for coming here on such an important day and Happy Anniversary.
We then went to the man made pond at the hosptal down the road, that has ducks and swans, fountains and built decks with seating. It was dark so we could barely see but it was the perfect setting to exchange gifts. I got us a one night stay at the Belamere Suite Hotel, the presidentail suite. This place rocks! Jacuzzi, 3 sided fire place, fridge, attached garage, and a small pool in our room and more. I gave Jon cards through out the day too and the one with his gift had a hand written note. (he cried
) Then Jon gave me my card and told me how much he loved me. At the bottom of the card he said he wishes he could do something great for our anniversary to show how much he loves me so HOW DOES 7 DAYS IN COSTA RICA SOUND? Sounds great to me!!! Condo right on the black sand beach at a resort. We have not had a vacation in 8 1/2 years. I'm so excited. He made a deal with one of his clients to exchange work for his trip he was unable to use.
Tonight is a cookout at my mom and dad's house for fathers day. I'm making the food so I better get going. Hope ya'll are doing well! I'll come back later to read all of the past posts I've missed.

We will have a family camping vacation if you want to call it that over the 4th. We are only going about 5 miles out of town to a state park. But have to come back everyday to do DD's paper route and feed the dog. And maybe get on CC while she folds the papers
But we have a blast. The last time DH and I got away by ourselves for a vacation was the year before we were married and we went to South Dakota camping and had a blast ![]()

Hey Christi I eat Prilosec and pepcid like candy. I need to take the samples I got for acid reflux but they are gone now. So back to over the countrer for now. They don't work as good. My reflux has caused all kinds of problems. I cough and get bronchiall(sp) problems all related to reflux. And I know that is the problem now that I am out of the samples. But I don't have the money to go to the doc. To get the meds... GGGGGAAAAHHH I feel for ya girl!!!!!
My youngest is at summer camp this week. I haven't cooked all week. I know we are going out tonight, we have plans with friends. I may not be cooking but I miss her so much ![]()

The good news is they haven't called me to come get her. For those of you who don't know she has a form of Autism, and we sent her to a "normal" camp. I did tell them about her "issues". She was successful last summer, but that doesn't mean anything.lol

Well we ended up having vegetable spaghetti last night with a small salad and tonight we are going to have left overs. DH isn't to pleased but hey, why waste all the leftovers (he doesn't like pasta that much or Potatoes , wondering whats wrong with him LOL)

Tonight we're having sweet italian sausage cut up in whole wheat pasta with stewed tomatoes, and green peppers and onions I sauteed in olive oil. YUM!

awww, you all are so sweet! I'm checking in real quick to say HI to ya'll. I just finished with my Astronomy class today. I have my nutrition class final tomorrow and I still have the paper to write yet
after that i just have to go back to astronomy class to go over the final exam answers (to make sure he didn't grade anyone wrong on it) and then get my final grade in the class. Right now I have an 82% in the class which is a B. I'm hoping that I have kept that B or with the extra credit I did, hopefully bumped it up to an A. But an A would be wishful thinking--this class just about killed me! I just turned in all my info for the note taking I was doing for the girl who is def in nutrition class, so I'm glad I'm done with that!
Tonight I'm going to eat at an ethnic restaurant called Berute. (It deals with my paper I have to write for extra credit in nutrition class---can you tell that I ALWAYS do extra-credit when offered
) They have authentic mediteranian or Lebanise foo, can't remember which one. So I'm eating there tonight, I hope I like it because it's not really cheap.

Ohara--I think sometimes the kids not being home is worse on the parents than it is on the kids. Jon and I are going on vacation sometime soon and we'll be gone for 7 days and I'm almost crying just at the thought of leaving my kids for one night let alone 7. My son's habits (they think he is probably autistic---aspbergers) may just drive who ever is watching him crazy.
but I love him and wouldn't change him for the world!! Best luck this week coping, I'm sure she's fine, I'm just worried about you.

Sorry I have been so busy it seems the last week. I am in the process of getting new car and we are in the process of buying a house (trying to verify financing with the bank and find a house that we both like)
Plus my BF's sister had a hysterectomy a week and a half ago and she has been back in the hospital this week for an infection. My BF has been busy working nights so I have gone with him a couple of times so we had some time together, we have visitors coming next week (to stay for two weeks) so getting the house together, a family reunion trying to get together. We have had my BF's nephews a few times through the week since it is summer vacation along with attending their sporting events. Oh and my BF is now on two softball leagues so he has a minimum of 3 games a week, thankfully most of them have been opposite of his newphews so we can do both.
Oh yeah... And I have been trying to go the the grocery store for groceries for over two weeks now and still haven't made it! (good thing we've been eating out a lot)
So tonight we went to visit BF's Sister and then we went out to eat with his parents and grandparents (it was grandma's birthday) went to texas roadhouse which was absolutely delicious as always. I had the sirloin, loaded mashed potatoes, chili, lots of rolls too! Believe it or not I stopped myself from eating to much and now have some good leftovers for lunch tomorrow.
So I promise I will try to stop in everyday again instead of once everyother week =) I appreciate you keeping my chair at the table.
I also wanted to say welcome to the new faces I see. I am glad to see more chairs pulled up to join us!
Mkolmar - congratz on your grades! last I saw I knew you were having a hard time with that astronomy class. And Happy anniversary a little late. Glad to hear your DH took great care of you!

Thought I'd tell you all that Beiruts food is lebanese and boy, I didn't care for it much at all. I can't get the taste of lamb and wierd spices out of my mouth. I've had mediteranian food before and like it, had lebanese food before and thought it was okay. EGADS! This style of food is not my style after tonight. But I wrote my paper on the restaurant so I can't complain. Plus my mom bought the meal for my belated birthday present. So all in all --not too terribly bad.

leily glad ya had a chance to sit down at the table. I am with you on the running around. DD has library activities, A reading session with a teacher to help her over the summer, a paper route and swim lessons. We leave th house around noon and don't get back for good until about 7 or 8. We stop in to fold papers and change clothes. Tomorrow should be as crazy but I am not sure yet. And I delivered cakes amongst all the other things.
So tonight supper was real healthy NOT
I ran into the grocery store deli and got chicken legs(they were on sale and my family loves them) And deli sliced roast beef and buns. So you took your pick of what you wanted and there were chips if you wanted them. No veggies or nothing.
Last night was alittle better. I made DH some hamburger and fries before work and made the kids my meatballs, fried potatoes, and corn.
I am so looking forward to or camping trip over the fourth. For one thing I will get a chance to relax and read. Second I will cook better out there over the fire pit and campstove. I make some kickbutt meals out there. And don't forget the Smores YUM

YES!!!! I'm done with classes to the end of August!!
I should be either getting an A or a high B in Nutriton. The horrid Astronomy class ended better than I thought. I got an A on the final exam and my presentation plus 150 extra credit points so it bumped my grade up. I ended the class with a 98%, so I got an A.
I'm sooooo glad that school is over for right now. My stress level seems to be doing better too.
Tonight was baked chicken breast, with sauted veggies, penne pasta in a marinara sauce and apple sauce. Kind of just grabbed a bunch of stuff and made a meal out of it.

CreativeCakery--The french dip is an awesome sandwhich that just rocks!!! (Kay got us all hooked on them) You take a 4# rump roast and trim off the excess fat that you can. put in into a slow cooker, then dump 1 can of condensed French Onion Soup on top and 1 can of beef broth, plus 1 can of beer. Put on low and cook it for 7 hours. (It stinks at first but the smell goes away) Once done take out a sheer into pieces. Place that on a buttered and cooked (so nice a warm) hogie bun. (I put BBQ on my bun and meat then add carmelized onion on top) Then you take a little dish of the soup mixture and dip your sanswhich in it and sit back and enjoy! Even my 7 year old can eat a whole one and she is a twig. We love em' here!

Last night we took my BF"s dad out to Texas roadhouse for fathers day.

Thursday night I actually cooked at home! Made spagetti.
I haven't had any orders for a few weeks now and have a chance to make one for my BF"s family reunion next week and that is all I can think about! I have so many schetches and thoughts about it through out the day, good thing I only have another week to go! But also have to get ready for some visitors this next week! My oh my where does the time go I can't believe it is almost July!
Ok it was very laid back Sunday. I made a very late breakfast for lunch. Pancakes, eggs,hashbrowns and toast. So it was kind of munchy night. But I just made BBQ country ribs in the oven and homemade potato salad for DH when he gets home for Supper/ Breakfast.
So now we are off for a week of crazy again. Swim lessons, Library, Reading with teacher, paper route and ON AND ON AND ON till Friday OUR REDNECK VACATION WEEK YYYYYAAAAHHHHHH
The countdown is on and so is the packing. Ya we are going south of town about 5 miles and will be to town everyday. But we camp in a tent so you gotta take alot of stuff. And like My DH says did ya pack the kitchen sink. My reply is YEP I got my plastic wash tub. LOL

Well here is the start of another hectic week. Planning on getting a new car this week, have 3 softball games, still working on finding a house, My mom is coming one evening this week to visit me, have two house guest arriving this week (one on friday and the otherone anytime this week), a 3D cake for 120 for next weekend, with 5 different flavors (why don't I think these things out before I offer to do it?) and I know I forgot something!
So please forgive me if I don't make it to the table this week to sit down and eat, but I will be passing by to keep up on everything going on.

So sorry to hear your lonely this week! Isn't it nice sometimes though to make something quick and not a full meal? My comfort food when my BF isn't home is the bluebox macaroni, but I don't make it when he eats at home b/c he doesn't like it. So it is almost a treat anymore!
Speaking of the bluebox LOL DD wanted that for supper. We had that and hotdogs. She doesn't like them so she had potato salad with it. And DH doesn't like the mac and cheese. So he had the potato salad with his dogs. I had alittle of each I was to hot to eat much. I will want something later. Gotta make something for DH when he get off of work.
Oh and DS finally showed up at about 9 he had eaten at a friends. So he had a huge bowl of ice cream with mashed strawberries on top.
Well I gotta go bake some cakes for my twin nephews 21st B-Day tomorrow.
We were out of town over the weekend. We went to DH family reunion.

It is Kraft Mac N cheese. It is the one that has the powder cheese instead of the creamy cheese in the packet. You have to add 1/4 C butter and 1/4C milk and the cheese to the noodles after you bake them.
I just refer to it as Blue Box b/c of the commercials they use to have about the Blue Box Blues
