mmmm brownies

Tonight was eggplant parmesaen, spagetti with cheese-chicken and crisp crumbled up bacon, chessy bread with ice water.

Dessert is a chocolate cake (cut into thin layers and cut out with a round cookie cutter) filled with sweetend whipping cream and sliced strawberries drizzled with a light chocolate sauce.

Hmm didn't realize I had been away from the table for so long.

Friday- We had dinner at Granite City, i had the Bedda Chedda burger, fries, and their dip for fries (mmmm)

Saturday - For lunch I had a Pampered chef party and I am still full from the Chicken Club Ring we had. Also had a pineapple upside down cake (thankfully about half is still left icon_lol.gif , but I should probably pass some of it along to someone else)

For dinner tonight I am thinking Baked chicken breast, brocolli and some sort of red potatoes (BF will want mashed, i'm thinking baked!)

Well we never made it to dinner last night hehe =)

But tonight I am finishing up some Baked season chicken, mashed potatoes, corn and a nice tall glass of milk =))

LOL, Hmm which way should I answer this? My mind automatically went the wrong direction =) I finished up school for this year a couple of weeks ago. Nope last night I was working on a 3D Grave Digger cake =)

I can hardly stand my classes. If it wasn't past the drop date I would drop them. I'm so lost in my science class (astronomy) it's pathetic. Don't be suprised if I'm not on here as much because of it.

Ok I ahave been busy the last few days. So here is what we had

Wed. Hot Pockets your choice LOL But I premade Lasagna for tonight.

Thurs. I had Gumpaste and Fondant class So I had the Lasagna already to put in the oven when I got home. YUM

Hey Christi I have a sweet and sour kind of meatball recipe with homemade meatballs if you are interested. I can't go to a get together withoout them they are AWESOME. If you want the recipe let me know. They are alittle time consuming but they are worth it YUMMY

Christi Ok I will get the recipe to you later today. It has pepper/onions and pineapple in the recipe so fruit and veggies LOL

I will post for you all if you are interested. They are a great appitizer or put on top of rice or noodles for a meal. I do them for a appitizer and put in a crockpot. But they are AWESOME. Man now I going to make some and I don't have a reason LOL My anniversary don't count LOL

Ok I am going to try to type all this for the meatballs bear with me.

Ingredients

1 1/2 lbs ground beef, 2/3 c. cracker crumbs, 1/2 c. minced onion, (I also chop up 2/3 c. peppers at this time and sit aside for later) ,1 egg, 1 1/2 tsp. salt, 1/4 tsp. ground ginger, 1/4 c milk. Mix these ingredients and shape into T. size meatballs. Then in a large skillet melt 1 T. shortening(I use Veg. oil). Fry them up. Then I place them in a crockpot when done. But if you don't want to serve them this way sit them aside. Drain fat from skillet.

Next
mix 4 T. cornstarch,and 1 c. brown sugar in a bowl. Next drain 2 14 oz.cans of pineapple tidbits. Set aside pineapple. Add the liquid to the cornstach mixture. Stir in 2/3 c vinegar , 2 T. soysauce and 3 tsp.ground ginger until smooth. Pour into skillet, cook over medium heat, stirring constantly until mixture thickens and boils. Boil and stir for 1 minute.

I then add the pineapple and green pepper to the crockpot. And pour the sauce over and stir. I do this a day ahead usually because it is usually for get togethers and I had alot to do. I put in the fridge overnight. Next day I heat the crock pot up on High then turn to low or warm to serve as appitizers.

Or you can add all ingredients back the to the sauce in the pan. Now heat thourghly. You can serve over rice or noodles.

Tonight I seasoned some sliced up meat put that on top of a rice pilaf and had sauted zucchini-yellow squash and onion on the size. Oh and chocolate ice cream!! icon_razz.gif
