Last night was grilled steaks, roasted potatoes, sweet corn and cottage cheese. Tonight we are going to a banquet thing. The only good things will be no kids and I'm not cooking. Oh, on second thought, not so bad after all.
Have a good day ladies.

Christie, I am praying for you. I hope you feel much better real soon.

Oh my gosh---I forgot to tell you all my great news. On Sunday April, 22 I was in charge of the dessert station for the MVACF (maumee valley chapter American Culinary Federation) scholarship dinner. We made 9 different desserts. Each had 75 pieces to 200 pieces. There was 300 guests. It went wonderful!!!!!!!!! I couldn't have been happier.

Towards the end of the evening I recieved the top scholarship for $2000. This is great because I can't afford to pay for culinary school anymore and might have had to drop out.
About 5 minutes later I was called back on to the stage. I was shocked to recieve the Aspiring Culinarian of the Year award. I recieved a medal on thick ribbon (to wear around my neck while in uniform) a plaque and a whole roll of chef's knives. I was so happy--still feels like a dream. I was like a scared bunny up there when they handed me the microphone to say a few words.

At school I said nothing-- didn't want anyone to know--seems Angie (who I'm in class with and is also a member of the same chapter) came in early to school that day and told the chef because she knew I would be to modest. Well the chef ended up announding it to the whole class and I wanted to slink under the table while they all applauded. That day the chef hand me a small pamplet--says he got it in his mail on Saturday and thought of me (this was before he even knew about the scholarship and award) it was for the French Pastry School in Chicago! He says I'm ready to start taking more classes and that if I go to some of the workshops he'll even excuse me from class with no penalty. Only problem is paying for it--those classes are expensive icon_cool.gif and I can't use my scholarship money for it.

On wed. I was using my new chef knife and sliced to quick and not careful enough (turned my head when someone said something) and cut the tip of my finger 3/4 of the way off icon_redface.gif It was an interesting week last week that's for sure!

Chrisit--How are you feeling--I've been praying for you!?

We went to friends house last night for Cinco de Mayo. They had all kinds of stuff. Every one was supposed to bring a side dish, I made a cake (shocker icon_eek.gif ). I did a search for a Mexican cake, and came up with tres leches cake. It was SO yummy. Not much left over, I was a little nervous since I had not ever made it before.
I will probably cook out today, I don't plan to do much else.

mkolmar...CONGRATULATIONS!!!! That is so awesome. You should be so proud of yourself. How is the finger?

mom2seven...the White Chicken Enchilada Slow-Cooker Casserole, sounds yummy. Do you use the boneless chicken breasts? I read the recipe and it says 15 chicken breasts, and that sounds like a lot. Just wanted to make sure it's correct.

Hope you all have a great day.

I used about 20 chicken tenders but I cook for 9 people (you can change the serving size on that recipe just by typing in the number in the serving size in the box right under the photo.

Thanks everyone! I was shocked and still am about the award and scholarship. My finger is doing good. I got the stitches out but have to be careful or it will pull back open, so I'm leaving it wrapped up. The good news is that it looks fleshy and the blood flow was getting back to the tip of the finger, so it won't turn black and fall off like the doc's said it might. My thumb is doing good too. The connective tissue has pretty much grown back since it was only a small chunk out of it. It will be flat on the tip for a while but that's ok.

Christi---I'm scared to death of the meat slicer. I'm always REALLY careful when using it, since it's so easy to cut your fingers off in one clean sweep. OUCH! Your poor fingers. How long till you can start eating normal again. I mean--vanilla, strawberry, coffee and chocolate flavored Ensure or Boost is good and all but you have to be sick of just having that to drink all day.

Tonight is penne pasta with chicken, cheese and bacon in a light sauce. Portabella mushroom caps drizzled in olive oil and topped with sundried tomatoes and cheese then baked, baked bread topped with garlic butter and a light cheese, green beans. (lots of cheese dished tonight) For dessert is the WASC cake with buttercream and chocolate dipped strawberries all over it.

Hate to say it but I'm getting burned out on cakes. People are coming over and I just slapped it together. This is soooo unlike me.

Tonight was penne pasta with olive oil and sundried tomatoe oil with mushrooms, chicken, sundried tomatoes and cheese, sauteed yellow squash with onion ---this was for DH and me. Kids had corn on the cob, chicken, mandarin oranges and bread.

Tonight at the ACF meeting I was asked to become the Editor for the Junior members section of the newsletter. I said yes because it will be (I think?) like 12 points for when I go for my certification. I need more than 70. I'm glad about the points, but because of how busy I am I hope I can do it icon_cry.gif

Christi-- Hope you get well soon!

Welcome to the table Sammi.

Tonight was Pizza and cookies with buttercream. I was going to go to the YMCA tonight with the kids and go swimming (to burn off the dinner) but couldn't find the diaper bag with my membership cards in it. Looked for 40 minutes while my kids are yelling because we are not there yet as they wait in their swim suits.

Finally call my grandma's house (after calling my mom's cell phone 3x) and my mom is there. She was too busy eating and talking to answer the phone icon_mad.gif Finally get her to the phone and she says "OH, I have had the diaper bag in my car since Sunday morning---do you need it???"
NO tapedshut.gif I'm asking so you can keep it another few days. I only have 4 small kids---why would I need my diaper bag???? icon_evil.gif

So I can't take the kids swimming and now all 4 of them are crying and telling me how sad they are.

I just want to chew out my mom so bad---but I won't.

Christi, no , she started out with a sore throat and head ache. The next day she was stuffy and runny( all at the same time) No fever, so today I sent her to school. She came home coughing and almost without any voice icon_eek.gif . It almost sounds like croup. Tonight her temp is up a couple of degrees. I guess we'll see what morning brings.

Thanks Christi. She suffers from head aches and migranes some what regularly. I thought she might have streph, as it is going around the school, but her throat isn't very red and no white spots? I just worry, it's my job.
