last night was mushroom chicken (which seems to be the meat of choice lately) and steamed rice.

tonight is spaghetti, salad, and garlic cheese bread. oooh - and i made tres leches for the first time last night so that's whats for dessert. icon_biggrin.gif



on a side note - i finally got to the gym this morning. ds slept through the night icon_surprised.gif and i woke up early enough to take my little brothers and stepdaughter to school and then stop by the gym after. hopefully tonight goes the same way and i can keep this up! thumbs_up.gif

I did cool down here by about 25 degrees in a day icon_smile.gif So tonight I made enchiladas. Something warm for the tummy icon_biggrin.gif I don't know about tomorrow last course 3 night and DD dance class. So it has to be easy icon_biggrin.gif I am excited yet sad that it is the last night of class. I love getting out and learning and having fun icon_lol.gif There is suppose to be another class with gumpaste offered after the first of the year at hobby lobby. I am looking forward to that icon_biggrin.gif I will see you all tomorrow at the dinner table after my class icon_biggrin.gif

Ok what I posted yesterday for supper isn't what we had. Guess that's what I get for posting early...lol. Mom treated us to Pizza Hut buffet. It was kid's night and my kids got to eat free. On the down side their a/c was out and it was extremely hot in there.

Tonight we had the fried fish, baked potatoes, and beanie weenies.

For whoever was looking for the chicken recipe, this is one I use for my picky hubby.

2 Tbsp. PHILADELPHIA Cream Cheese, softened
1 cup KRAFT Shredded Cheddar Cheese
1 cup cooked MINUTE White Rice
1 cup frozen chopped broccoli, thawed
8 small boneless skinless chicken breast halves (2 lb.), pounded to 1/4-inch thickness
1/4 cup KRAFT Ranch Dressing

PREHEAT oven to 350°F. Mix cheeses, rice and broccoli until well blended; set aside.
PLACE chicken breasts, top-sides down, on large cutting board; spread evenly with rice mixture. Starting at one of the short ends, tightly roll up each chicken breast; place, seam-side down, in 13x9-inch baking dish. Drizzle evenly with dressing.
BAKE 35 to 40 min. or until chicken is cooked through (170°F).

Ok I got this off the Kraft website as if you can't tell...lol. I don't use broccoli since hubby won't eat it. And I marinade it in a different marinade as hubby won't eat ranch dressing either. I add salsa to mine but not his. It is yummy.

At any rate.........We had:

Honey BBQ Chicken Breasts
Asparagus
Biscuts
Mexican Hot Chocolate (Abuelita) SOOOO yummy!

If you haven't tried it before, it is made by Nestle. I get it at the grocery store in the Ethnic Food asile. It comes in these chocolate disks that you throw in the blender with hot milk (I use whole milk when I make it cause it is just SO good) and whip it up. It has Cinnamon and cane sugar in it. YUM!

Well, my plan didn't go so well last night.

I got home from doctor's appt and had a massive migraine (this is day 4 with this stupid thing coming and going when it pleases) so when DH got home we just had chicken nuggets and french fries. was very good though.

Tonight we're lucky and get to go out to dinner to my fave restaurant. I already know what I'm having. Filet Mignon, side salad, and steamed veggies. YAY!!!!!!!!!!!! love it! hehe

Ok, and here's what I did with my chicken breasts last evening. The Old Man just went NUTS over it! This makes the rice really cheesy and saucy, and it's cheap and easy. What else could a cake bakin', cleanin', laundry doin' old lady want? icon_wink.gif

Old Timey Chicken Casserole:

4 boneless breasts
1 cup plain white rice (not Minute rice)
1 can "cream" soup--I use mushroom, but any flavor works!
1 can water
1 can milk
4 slices deli ham
1 bag cheese crumbles (I use the italian blend, but any will work!)
Seasonings of choice
Buttered bread crumbs

Sprinkle the dry rice over the bottom of your 13x9 dish. Stir soup and milk together. Pour can of water over rice. Place chicken breasts, cut side UP over rice. You'll have a little "dent" facing you with the chicken breasts. Place a handful of cheese in the "dent." Top each chicken breast with a couple pieces of ham, to cover the cheese. Pour soup mixture over everything. Top with buttered bread crumbs, and put plenty of your favorite seasonings on top.

Cover with foil, tightly; Bake at 325 degrees for about an hour. Uncover, bake til' bubbly and a little bit brown. Stir and serve!

tonight is we are totally having goulash. easy, fast, and cheap! plus its my turn to cook tonight and i'm really not in the mood.

spaghetti last night made everyone sick. for some reason ground turkey just doesn't agree with my family. thank goodness i didn't eat it! but dh, mom, dad, and brothers are all sick.



butterflyjuju - i thought my little brothers were picky! lol...oh my goodness!

hockeygirl658 - omg i loooove abuelita! i use it for like everything! lol. last year i found abuelita hot chocolate packets! yummy! my great grandma makes atole with it and its great!

daisygurlvb - my mom and i get migraines really often. the store brand from vons (safeway) really works. its cheaper and has the same stuff as excedrin migraine.

mxpark...well unfortuantely I get them pretty bad to the point where really all I can do is take a percocet and head to bed.

Exedrin Migraine doesn't work. it has caffiene in it and that's a trigger for my migraines.

If it's just coming on, usually Advil Migraine will work.

I've been under a lot of stress this past week so I think that's why it hasn't fully gone away. I'm going to watch CSI tonight and head to bed and rest all weekend!!

mxpark- It just occured to me last night that I should try using it in ganache! I don't know if it will turn out very smooth because of all the cane sugar and spices, but it should be TASTY!

DH won tickets to the local comedy club tonight. The catch is you have to buy at least one drink each. No problem. And they have the best appetizer plate there for $12! So that is what we are having for dinner. If I remember right it comes with:

Mozzerella Sticks
Buffalo Wings
Pot Stickers
Chicken Strips
Nachos
Potato Skins
Artichoke Dip & Chips

Ah yes, the best in nutritious offerings! icon_wink.gif I think I feel my cholesterol level rising right now.

Since I had cake class tonight (Happy and sad that they are over icon_lol.gificon_cry.gif ) I put a roast in the crockpot. So we had french dips, cheesy mashed potatoes, pork and beans.

knox thanks for the recipe I am going to have to try it. They sound so YUMMY icon_biggrin.gif

But I won't be trying either of them for a few days. It is going to warmup again here for a few days (back up to 90) then down to the 60's after that. Tonight was grilled cheese sandwiches. Kids had popcorn too (I know real healthy combo but they've been begging for popcorn all week.) Hubby had leftover beanie weanies with his sandwiches.

mxpark: You have no idea how hard it is to cook for someone who will only eat potatoes, corn, cooked until mushy carrots, some types of beans and peas for their veggies. Absolutely no crunchyness to any veggies at all as he will gag and puke. But I've adapted to it. Mostly I cook something the way he'll eat it and then cook the rest for the rest of us. Thankfully the kids aren't as picky.

Well y'all, I'm gettin' to the table pretty dang'd late tonight!

Been wrappin', mixin', squirtin', tapin' and runnin' all dern'd day, and boy am I feelin' it! My legs are literally so swollen all I can wear are my old ugly Birkenstocks. And, well--we won't discuss my beaten and torn psyche! dunce.gifouch.gif

I did something totally self destructive this afternoon: I took a birthday cake order for tomorrow at 3:00 p.m., and the dang'd WEDDING CAKE is due at 11:30 a.m.........GAH! dunce.giftapedshut.gif

So, after making it to the cake supply AT THE LAST POSSIBLE SECOND, and dealing with rush hour traffic, coming home and squaring up SQUARE CAKES icon_mad.gif , I just ran through KFC for dinner.

Thank goodness for the Colonel! I'd have an affair with him if he was still here... icon_twisted.gif (jokes--I have jokes at this hour!)

Well, Y'all--this old day's just about OVER!

Three cakes in one day. Whew. Y'all should SEE my swollen feet and ankles! thumbsdown.gif

The pics are in the gallery. Birthday cake, flag groom's cake, and wedding cake with RED on it. GAH!

So, today at 12:00, I threw in the crockpot some Swiss steak. We'll have a salad with it too, I reckon.

last night was pizza hut. little brothers got certificates for free personal pan pizzas so we took all the kids out. tonight i have a migraine icon_cry.gificon_sad.gif so i made the kids chicken nuggets and the grown ups baked salmon and steamed rice. i had top ramen because the seasonings from the salmon were making me feel sick. thumbsdown.gif


hockeygirl658 - i love using this with cinnamon and kahlua in a chocolate cake...yummy! icon_biggrin.gif i've never tried ganache before but if you try it, let me know how it turns out! i try to use it for everything i can!

knoxcop1 - congrats on getting through those cakes!!! thumbs_up.gif

butterflyjuju - i don't mean to sound rude but your husband's veggies sound like my grandpa's!!! icon_lol.gif he likes his stuff mushy...even his steaks! they have to be boiled! yuck!

Hubby and I had some Italian dish that came with our Food Co-Op delivery this week. It was kinda like mannacotti filling in between lasagna noodles. I added a jar of Garlic and Tomato Spaghetti sauce and a can of mushrooms. It was pretty good!

Tonight I made homemade cheese pizza. I went cheap wal-mart brand mix for crust, sauce and cheese. So cheap and somewhat easy. Been cravin pizza icon_cry.gif and no money icon_cry.gif

Wow lots of good recipes posted lately! Thanks everyone.

I am working on our food menu for the next week so I can get some groceries today, thought I would come here for ideas and I love all those chicken recipes. Think the Old Timely chicken casserole will get tried this week. I appreciate everyone sharing those! anything to make dinner a little bit quicker around her helps

Last night we went out for pizza

Otherwise the entire last week we have been eating out or having delivery. Been pretty hectic around here so anything quick and easy. But have to get better about eating at home the next few months. Just bought a new car yesterday!! Yeah me! (ok used, but new to me)

Not sure what we're having for dinner tonight. Have some softball games to go to tonight.

But since everyone seamed to be sharing their chicken recipe. This is the favorite of the house atm (was requested 3 times in a week by my BF) So enjoy!

1 box 4-cheese Rice-A-Roni (plus ingredients on box)
1 bag Frozen brocolli (we like a lot of brocolli-could do half a package)
1 lg Can of Cooked Chicken (I have used tyson's this week, but you could also substitute skinless boneless chicken breasts)
Seasonings as desired (we're garlic eaters so I like to used fresh garlic)

Brown rice per package. Add water/seasoning from box, brocolli,chicken (here is where I like the precooked chicken-I then just shred in my hands), and seasonings.

Bring to a boil, turn to med heat and simmer for 15-20 mins or until chicken and rice are done.

If you use Boneless skinless chicken breasts it is best to cook them for two mins on each side before you start browning the rice. Just cook in same pan and set aside until ready to add in again.

We like the caned chicken b/c it is requested to have it in smaller pieces or shredded in my house. But I have also used chicken tender strips-just make sure you adjust for the thickness of your chicken

tonight we're keeping it simple... black bean pasta (with salsa and sour cream) (YUM!) and salad..... of course last night was simple too... cuz i didn't have to cook! dh and i took the kids out for pizza because i had destroyed my kitchen making a cake for today... and as usual, the kitchen cleaning fairies didn't come make my kitchen beautiful while we were gone...lol

I had frozen the left over roast from french dips earlier this week. So thawed it out added potatoes, carrots, celery and a packet of stew mix. So we will have beef stew and fried bread. It is cold here so something to warm us up icon_biggrin.gif

tonight is return of the killer migraine (i haven't figured out my triggers yet...i didn't have any of the same things today and y-day) so we're having el pollo loco.


here's my chocolate kahlua recipe:

1 packaged devil's food cake mix
1 large box (i think its 5.9 oz.) instant chocolate pudding
3/4 cups Kahlua
3/4 cups water
3/4 cups oil
4 eggs
1 tablespoon ground cinnamon
2 tablespoons grated mexican chocolate

i usually pair this with a chocolate cinnamon buttercream but instead of using regular unsweetened cocoa i use grated mexican chocolate. it really brings out the mexican flavors in the kahlua. mmm...now i have a craving for this!
