Saturday night was McDonald's. Dh had to pick up a computer from my aunt to fix so we let the kids decide.

We don't really have supper on Sunday's. We just eat a big lunch. We had hamburger/zucchini soup (it's fried hamburger mixed with zucchini and cream of mushroom soup.) Mashed potatoes, green beans, fried okra, tomatoes, and Grands Biscuits.

We had a late lunch. Country style hashbrowns, sausage, eggs. Tonight I bought hamburger & onion to cook off. I put them in small bags for easy suppers. icon_biggrin.gif Makes it easy for tacos, sloppy joes, spaghetti. So I made hamburgers or patty melts. There choice what they wanted and left over hashbrowns. It was a lazy day thumbs_up.gif

Hi Everyone & Welcome to all Newbies gaveled in.

Please excuse my extended absence from the Supper Table. Crisis management has been my role since last Sat. when my MIL suffered a series of small strokes. With her in CA. & us in TX. managing her care long distance has been a full time job. She is receiving excellent care. While some brain damage is apparent, it is minimal. I'm thankful that prognosis is good, anything other than that would be hard on my DH and our kiddos.

On the menu tonight:

Rigatoni with Ital. sausage & ground pork meat sauce
French Bread
Salad
Sweet Ice tea.

I really hope you and yours the best. I know how it is--my dad was 89 and sick with cancer 18 years ago, when my oldest was a new baby. I was only a few miles away, but still--my thoughts are with y'all!

You so funny knox!! icon_redface.gif I seriously thought it was a joke because honestly there are alot of folks on here that bang out some serious cake. I have a couple that I'm proud of but shoot I'm always just a little suprised that they actually work out in the end! icon_lol.gif Now I really wish I had the pics from my baby shower cake this past weekend. I left the stupid camera 2 hours away at the preggo's house.

What have I eaten??? Friday night I made fajitas, homemade salsa, homemade guacamole (my fav!!)
Sat-baby shower food
Sun-dad to be is a chef (mmmmmm) and he grilled steak covered in his homemade rub. To die for! If I was married to him I'd weigh 900lbs!!
Tonight-quickie meal-ravioli, sauce and garlic green beans

Karen-be strong and check into classes at your local hospital to help with diabetes education and diet management. I used to be a case manager so I can't help giving out resources!

Same for you Gloria-so sorry to hear about your family. I used to work in speech therapy and case management so if you have any questions, just give me a hollar! Check to see if she is eligible for any home health services (that insurance covers)since you guys are so far away.

We had salsbury steak with brown gravy and baked potatoes. Bad mommy here didn't fix any other veggies....lol. The kids got spoiled to garden veggies and now they don't want green beans from a can...lol.

juju Yum salsbury steak and gravy aand baked tators.

I wanted to make meatloaf but to hot for oven without air conditioner. And tomorrow or next day it will be cold here icon_cry.gif So I made my stand by my mom use to make. Use the meatloaf mixture to make big meatballs. Fry in electric skillet then add tomato soup with alittle water and simmer. Close to meatlaof without the heat. Mashed potatoes, corn, green beans. I have no clue for tonight (Tues.)

We are having fried fish (Mom fried it the other night, I'll just warm it up...lol), Beanie weanies (only because I don't want to eat fish...bad experience when preggers), and fried potatoes.

Forgot to add last night we had no bake cheesecake (homemade) with the French Vanilla coolwhip. It would have been awesome with toasted coconut or some bananas with it...lol. May have a request for another cheesecake as they are hubby's fav.

I am so proud of me! I made my very first pot roast! And it was pretty good too! I just wish I'd had them cut it in half for me at the store. I could have easily made two + meals out of it. Oh well-leftovers for a couple of days!

How big is the cake you're doing knox? I had a girl e-mail me the other day about doing a cake for 230-250 people and I guess she wanted somthin' for nothin' since I don't have a storefront and I haven't heard back from her. blah, cheapo brides!

OMG--that's a HUGE cake you're talking about! Wow...hope you're ready to lose the kitchen for about 5 days on that one, girl!

This one I'm doing is due Friday at 1:00, and it's for 50-60 people. It's going to be a 6-8-10 inch square. The bottom will be stacked, and the bride's layer will be pillared. The groom's cake is a 13x9 chocolate on chocolate with the American flag starred on top.

Get this--they want a white bride's cake with RED on it. Guess I'll do some swirls and dots! (like the last BIIIG one I did) I was SOOOO glad to have that big cake finished!

OMG--WHY do people think they're not supposed to pay home bakers??!!?!? Don't they know we end up spending MORE than big bakeries do? Evidently not.

People kill me. I never cease to be amazed. You should hear the stories I could tell...

When I did that cake for 250 + the anniversary tier for my sil in June we ate sitting at the couch for the week. I had cake coming out of my ears!! 7 cakes-all layers of white choc cake and dark choc cake torted and filled with dark choc ganache.

I'm really glad I don't have anything special cake/cookie wise till 10/20 then all hecks gonna break loose. I have at least 2 possibly 5 birthday cakes for that weekend! icon_eek.gif At least I know a couple of them would be really simple but one is for my little noodle's 2nd b-day icon_cry.gif so it has to be really great. We're doing Bear in the Big Blue House and of course there is not a stitch of party supplies for that to be found within reason! Good thing he's only 2-he doesn't know the difference! At least I know I can do the cake!!

Ok tonight was basically feed yourself night. I am making cakes for course 3 final. It has been hot here again and didn't want to turn air again. So I waited till tonight. We are going from 90 as a high to 65 as a high in a day. Then back up again in 2 days then back down icon_cry.gif

So Dh had bologna sandwiches. Son had some left over sausage gravy and toast. DD had left over meatballs from last night with mashed potatoes. Me I don't know probably cake scraps.

I was dieing earlier no cake central I was havin withdrawls icon_cry.gificon_cry.gificon_cry.gif

Dodi good luck on the cakes. I will have a big month also. Niece wants some cakes for auction at sons preschool. Other niece B-Day cake. Then DD haunted Castle cake for Oct. 28th. And I was asked about a few others but may turn them down. Time is the issue icon_cry.gificon_cry.gif I love to use leftover roast alot of ways. You can shred it and add B-BQ sauce and nuke it for easy sandwiches. Or use shredded meat add to cooked of ramen noodles drained. Stir fry some veggies with the meat. Add the drainned noodles and spice packets and some soy sauce to taste. Lots of ideas for left over at this house icon_biggrin.gif

Just jumping into this forum for the first time, I hope no one minds.

I have a little bit of a delima on my hands. Tonight we're having chicken, like we have about 5 times a week!! hehe.

My problem is I'm tired of always just having chicken in marinade (usually either italian dressing or bbq sauce).

Any ideas? I'm not a great cook, usually my DH cooks. but I'm going to be home early today and would love to surprise him with dinner on the table.

Preferably something very easy to make or put in the oven LOL.

Hey ginny! Pull up a chair! I love this super easy simple recipe that is actually an American Heart Association recipe:

I use boneless, skinless chix breasts
green onion, chopped
mushrooms, sliced
garlic, chopped
red port wine
salt and pepper chicken

Place all ingredients in oven safe dish with tight fitting lid, cover (about half way up,maybe a little less) with red port wine and bake at 350 for 45 min+ (you may have to adjust time up or down depending on how thick the chick breasts are).I buy frozen 5oz portions from sam's and throw them in frozen and it takes about 45-50 mins.

I serve it with wild rice and a veggie.

If this doesn't work for ya let me know. We eat chicken alot so I can probably come up with something else!

I'm hoping it'll be something that I can make using ingredients I have on hand. Cash flow's a little low this week til Friday (stupid me spent like $40 on candy decorating ingredients LOL)

OH and I'd be using boneless/skinless chicken as well.

LOL I'm such a loser hehe. Like I said I'm not the one that usually cooks. DH does.

I don't have lemon/lemon juice. I do have a lot of spices, EVOO, balsamic vinegar, lots of marinades, cream of celery soup, lipton onion soup mix, bread crums, parmasan cheese.

Does that help any?

I also sometimes just cook the chick in the pan with some evoo and add lots of spices on the chicken(garlic, onion powder, thyme, oregano, basil) and serve it with rice or pasta, potatoes. You can also put it on top of a salad and it's really good too.

My DH makes what I call "yummy chicken" all he does is take EVOO and a mixture of spices (it is different each time) and then bakes it. It's fantastic. But I wanted to make something diferent, show him I do know how to cook LOL

daisygirl - one of our favorites for chicken (which we eat oh so often) is to dip the breasts into a mixture of olive oil, melted butter and minced garlic, then into seasoned bread crumbs. Cooks for 20 minutes in a 450 oven, and tastes great. Super easy too!!! And we always have those ingredients on hand. And everyone will eat it!!
