Ok, y'all--here ya go!

I use those bags of dried beans that have like 8 kinds of dried beans & lentils in 'em. You know--like they'll say, "8 bean soup mix" or "12 bean mix" --and they're over there by the rice and dried beans in the store.

FARMHOUSE SAUSAGE STEW

Large sized box chicken broth/stock
Boquet garni (small piece of cheesecloth with herbs in it like rosemary, thyme, peppercorns, and I use 1 tiny piece of dried chili pepper--tied up tight with a piece of kitchen twine!)
1 lb. beef sausage/kielbasa, sliced
1 cup chopped onion
1 cup chopped celery
1 Tbs. minced garlic
1 28oz can italian tomatoes
1 ham hock (more if you have a BIG pot)
1 Tbs. salt
1 or 2 chicken breasts, chopped
1/2 bag bean soup mix mentioned above (more if you have a BIG pot)
12 cups water

Rinse and pick over beans. Place beans, water & ham hocks in stew pot and bring to a boil. Boil for 30 minutes, then reduce to low boil/simmer and give it about 45 minutes. Drain MOST of liquid off, leaving about 1/4 liquid in pot with beans.

Pour in chicken broth and rest of the ingredients. Simmer for about 2 hours on medium low. Stir occasionally.

Serve with crusty bread, or the cornbread of your choice!


Some people like to saute' their vegetables, but this recipe doesn't require it. I like it because it's just a "dump it in" kind of thing. Easy to make when you've got kids and laundry.

Tonight? I should make 'em eat leftovers!

Had cake class tonight had to make it easy. Tacos or taco salad they had there choice. I have 2 cakes to make for the weekend so I need to start baking. And final course 3 is next week so I gotta get my roses completed.

oooh....we had tacos tonight too! thursday are hectic around here. my dad is taking some classes to get his contractor's license. my hubby teaches a class for those who want to get their real estate license and get into the financing business. younger brothers all have music lessons (piano for the little ones and guitar for the oldest). Stepdaughter has ballet and jazz class. Mom has english class tonight also so its me and my 4mo son to cook and drive the kiddos around.

juju - BIL is a cop so i LOVE hearing about all the latest action so when i started reading your post i literally moved to the edge of my seat. lol!

knox - i LOVE LOVE LOVE chocolate kahlua cake. its my most requested flavour. as well as my kahlua white cake. if you don't mind my asking, do you make yours from scratch? i've found several recipes for this since i've started caking.

kaychristensen - unfortunately i didn't get a funnel cake either. i didn't think we'd be at the fair for very long since it was a weeknight and the kiddos had school the next day so i didn't pack an extra bottle for my 4month old. anyway - we ended up staying a bit later and my son got really cranky as we were waiting in the longest line for funnel cakes so dh said we should just leave since people were giving us dirty looks. lol. oh well - i didn't need the extra calories anyway.

mxpark I am feelin for you icon_cry.gif Now we have to wait till next year. I was going to try to make some on my own. But there is just something about the atomsphere of the fair that makes them taste better. Am I insane or is that how you feel??? Or is it the fatty oil that they fry it in?? At home I use a lighter oil in my fryer DH hates when I make fries "They don't taste the same as McDonalds" That is unless I make homemade fries. Then he can't get enough but they are alot of work so I usually buy frozen and fry them up.

Thur. are crazy here right now also. After school kids have paper route about 6 blocks from the house so I have to drive over to it cause it crosses a HWY and I won't let 7 yr old go On bike across it and her Brother who is 15 doesn't want to take her across it. After that right now I have cake class and DD has dance class at the same time. Dh is suppose to take her but he works over nights so sometimes if he doesn't get to sleep early enough I am struggling to find someone to take her to class. So she is starving when she gets home. And I don't get home till about 30 min. after her. So I have to get supper FAST.
Don't you love tacos EASY. Especially if you cook off Hamburger ahead of time like I do and freeze it. It cuts a step when you are in a hurry icon_biggrin.gif

kay - my dad makes his own funnel cakes with pancake mix. the blueberry mix is really yummy with powdered sugar and whipped cream! but you're right - its just not the same. and as for thursdays...i'm just glad that i don't have any lessons that are at the same time. i don't know how you do that!

Tonight I shredded the leftover roast and bbq'd it. Warmed up leftover mashed potatoes with extra milk and butter in them. And warmed up the carrots left from the roast. Very yummy leftover night.

Left over night here also. Babysitting again tonight so DH and the girls had the chicken noodles. And I am doing cakes so I will have left over taco salad.

mxpark I will have to try the blueberry funnel cake they sound YUMMY icon_biggrin.gif I have last course 3 class this week so it will be easier after this week icon_biggrin.gif But you have way more going on than I do. I don't know how you do it icon_surprised.gif

I was just diagnosed with Type II diabetes so my meals mainly are dirt, twigs and leaves icon_rolleyes.gif Our County Fair opens on Monday...I am so going to miss the double fried potatoes with cheese and sour cream....and the HUGE cinammon rolls icon_cry.gif

Sorry to her that anoldhippy. Diabetes runs in our family and it worries me alot. My grandparents on moms side both had it as well as great G-Ma. So good luck with your battle. There are really good recipes out there that have good taste that you can have. I have made many for my G-MA when she lived on her own. I know you can cope with this thumbs_up.gif

I had the last of the tuna (had to empty the fridg...)

Kay, cold weather has brought out the casseroles icon_biggrin.gif DH loves casseroles. Tater tot casserole not my favorite but I was out that night setting up for a catering event so I made it and left it for them to enjoy.

anoldhippie...sorry about the fair food icon_cry.gif I love fair food and I haven't made it to a festival or a fair all year. Good luck.

OK so it has been like 15 pages since I have had time to actually sit down at the dinner table with you guys, however I have been walking past quite a bit and browsing what you're having for dinner.

When i got back from Vacation I had a new monitor sittingon my desk Woot! 19" flat panel (had a 17") and was told that my next gift was on the way but it was back ordered. A few days later I come home and I have a new computer waiting for me! Yeah! So between trying to get it set up, working overtime to get caught up from vactation and get our busy season at work going I just haven't had time to do more than browse the forums icon_cry.gif

So I thought here would be a good place to try and get back into the swing of things! I miss CC!

So last night for dinner we had Chicken noodle soup and lots of OJ, my BF is sick and I think I am starting to come down with something. Tonight hopefully he is feeling better... but not sure what it will be yet.

It looks like everyone ate well while I was away from the table so I hope you have some left overs to send my way!

And thanks for that recipe! That looks great (sorry I don't remember who posted it right now.. but I did save it!)

I don't know what my poor hubby worked out for dinner last night. I got a call from my District Sales Coordinator at 3pm letting me know that we had hit our quota for the quarter and she was taking us all out for Happy Hour! thumbs_up.gif

And 1 too many Mojitos


So tonight we are having Beef Stroganoff (DH's Favorite!) to make up for the fact that I wasn't around last night and he didn't get to go with.

We went to the fair, so dinner was - italian sausage with peppers and onions, cheeseburger and beef stew in a bread bowl for DH, DS and me, respectively. Followed with dessert of fried dough and some fried pickles when we came across those later! icon_razz.gif Oh yeah, let's not forget the coffee...and DS's hot cocoa (which he dropped - he's only 5 lol)!

Tomorrow night - no clue.

Ok babysitting kids and DD had chicken nuggets and mac n cheese. Earlier for a late lunch I had frozen burrito and DH had bologna sandwiches. He is asleep right know but will want food when he wakes up so don't know what to make. Maybe some omelets. I'll have to see when he wakes up if he wants food. icon_cry.gificon_lol.gif

Ohara I'm with you cold weather brings out the yummy casseroles. It warmed up her a bit so maybe next week I will get the tatortot casserole made. We had chicken saltimboca, pesto chicken pasta, filet mignon,and sambucca truffles and capachino for dessert.

Friday night was pizza from Papa John's (I think that's what it was.) I had to deliver a cake that morning, so I cleaned house all day!

Saturday was "fend for yourselves" day--everyone did their own thing. DH ate while on shift, the little son spent the night with big son, and I had a beef & cheddar from Arby's.

Tonight, I'm starting to plan heavily for a small wedding cake that's due Friday. Should be square, with dots & scrolls to feed 50. Two layers stacked on bottom, and tiered top layer. So right now, I'm adding up cake mixes needed, sugar bags, tips, and blah...blah....blah.

I WANT A FUNNEL CAKE!!! DUSTED WITH POWDERED SUGAR, AND SERVED HOT OUT OF THE LIL' TRAILER ON ONE OF THOSE CHEAPIE PAPER PLATES WITH A PLASTIC FORK! DANGIT! icon_cry.gificon_cry.gif

DH had an Oreo Blizzard that I brought home from work later.
