Me too! I was married for 2 years (long story there) no kids. I have one cat.

I am not sure that I could be married again either. Well if mr right came along but, I have not even had a date in 4 years thumbsdown.gif BOHO!! Oh well I stay so busy I dont know if I would have time to date.

I am going to Famous Dave (BBQ place) I already know what I am going to eat. Country Roasted chicken, fries, corn, & cornbread muffin... YUM I can not wait. I am hungry now. I am going to go fix me some oatmeal.

Hey Monica-I can bake-never said I could spell!! icon_lol.gificon_lol.gif Sometimes leftovers are the best thing to me! That book is also on Amazon.com but I couldn't get the link to post!

That's what last night was-leftover scramble-run to the fridge and see who can get to the best leftovers first! icon_lol.gif

Tonight-have no idea yet. Ds and I are going out apartment hunting while dh studies today.

Lots of times what I do is cook a pot roast (which I cook until it shreds and then add gravy to it) and then that is what I will eat at work for a few days (it tastes soooooo good!!). Pretty much when I do cook for me it's so I will have foos to eat while at work. I work night shift so the cafeteria isn't open. And sometimes leftovers taste better. Especially spaghetti!! I love leftover spaghetti!!! icon_smile.gif

Lazy Susan,

I work nights too!! I love it but it has screwed up my eating schedule. Do you sleep during the day or in the evening? I like to stay up in the morning and then sleep in the evening, it feels more like a normal routine.

I have to be careful about what I take to work to eat because our Supervisors are very picky about what they will let us eat out on the floor===computers and such...

I usually sleep from 8:30 am until about 4 pm. I work 12 hour shifts. I'm pretty lucky cause I can eat anything I want at work. Lot's of times we leave to go get take out.

Makin' chicken cordon bleu in the crockpot today.

I had to make a mad dash to the cake store today (they're not open tomorrow) so I could buy pans and high-ratio. After I got through there, I went on over to Target. Drooled for a while over the KA Artisan in red they had. icon_cry.gificon_cry.gif

It's only like 91 degrees here in K-town today--so I'm glad to have the house clean and dinner done for tonight without all the mess/heat! thumbs_up.gif

I wish I would be somewhere with internet cafe's. Quetico park thousands of acres of land that is just beautiful. There are only a small amount of permits to get into the park every year. We will be flying into the middle of the park on a sunday and paddling our way to the U.S./canada border-most likely this time of year we will only see about 4 other people. Our trip will take us about 50-60 miles (we still haven't decided on route A or route B yet-probably won't decide until we fly in and see the water level of the rivers) Motors are banned in the park except for one small group of people. There are only so many planes allowed a day over the park to help preserve it.

But I have the day off after I return from my trip so Guess where I will be that day!

Dinner tonight.... I don't know, my BF isn't home so will probably be ramen noodles or Spagettios and meatballs (i SOO need to go grocery shopping!)

I knew I forgot something in my last post.....

Care to share that recipe? Anything in the crockpot is always good for me.... but usually it is beef b/c that is about all I know/feel comfortable making in the crock-pot. Although I must say I do make a killer beef and noodles after cooking my Beef in the crock pot.

Leily--That is going to be an awesome trip!! I am more of a "motel" kind of girl, but the canoe trip sounds wonderful. I looked at some of the photos and it is beautiful there. Also, I see that you are a Golden Retriever lover too!! I have a big, fat Sally dog, she is 11 years old and spoiled like you cannot believe.

Hehe, yeah I sure like my hotels but once every few years is fun to get out there!

I sure am a Golden Retriever lover. The one in my Avatar was our family baby, we had to put her to sleep this last spring she was the queen and she knew it! The golden rescue in my signature is an organization my family has gone through 3 times now to get goldens.

Dinner tonight... well still haven't decided, BF got home, but had a little to much to drink out on the river with friends today... so not sure if I should get a meal for us or not.... I had a snack of tortilla chips with refried beans though and that was pretty good.

Hey Leily;

That place is absolutely stunning! I've been in that general area on business with my Daddy--but that was like 28 years ago! Hope you have a great time. Don't wear yourself out, and TAKE CARE! icon_razz.gif

Here's how I make the crockpot cordon bleu:

Take 4-6 chicken breast halves and pound 'em out thin.

Take 4-6 pieces of swiss cheese, fold 'em up into a lil' block.

Wrap one slice deli ham around each block of cheese "gift wrap" style. Try to close the ham all the way around the lil' cheese block. I use the ham that's cheap in the big rectangle shaped pack.

Place the ham/cheese block inside the chicken and roll up. Secure with toothpicks or halved skewers.

Roll chicken pieces in seasoned cornflake crumbs.

Mix a can of cream mushroom soup with 1/4 cup white wine or sherry and 1/4 cup milk.

Place the chicken pieces in a triangle /_\\ shape in bottom of crockpot (or) just lay 'em around the perimeter.

Pour cream sauce over the top and season to your likin'. (That's Tennessee talk for salt, pepper, garlic & rosemary.)

Cook on low for about 4-5 hours. Some people brown their boobs before time comes to puttin' 'em in the crockpot, some don't. Whatever feels right! icon_smile.gif

Thanks Knox that sounds great... It will get filed away for a couple weeks before i can try it but It is already saved and printed!

Well last night for dinner... I didn't have food after my snack. My BF and i met his sister and some friends at a local town that wasy having their yearly festival. So after my snack I am not sure how many Schmirnof's i had.. or what else I had either... But I think I should have found abetter dinner. icon_surprised.gif

Tonight, I am on my own again so I am thinking just some chicken noodle soup and some saltines

I love meatloaf and mashed potatoes, especially if you have some little green peas to go with it!!!

Knoxcop---I finally figured out the names of the couple who moved to Knoxville. The guy's name is Bubba Still and his wife is Joy. He is a police officer there. His wife may be a dispatcher, but not sure. Do you know them??

My dinner was some watermelon!! Gotta go to bed for a couple of hours, have to work tonight!!

Come on down girls! Cindy, I did make little green peas! dh loves them with mashed taters. But I'll eat green beans too leily! love them!

How do you guys make your meatloaf. I make mine with a tomato sauce (my mom's recipe-sauce, brown sugar, mustard, vinegar) poured over the top and then bake it. Gives it a nice slightly, sweet tang!

Okay a few days behind here.

Saturday night we had bacon wrapped beef patties (filet mignon) with fried potatoes, green beans and corn.

Sunday for lunch is when Mom's family gets together. We had beef stroganoff, fried okra, mashed potatoes, green beans, corn, tomatoes, and biscuits. And some good chocolate cake with ice cream for my cousin's bday. (I made the cake).

I was wondering if any of you have heard about angel food ministries. We get quite a bit of good food for $25 a month. I'm not sure if I can list the website or not but thought I'd share the info.

The Old Man made his "signature" cornbread last night icon_lol.gif , and I fried pork chops with some seasoning, but no breading. We had some green beans & potatoes with it. MMMmmm.

I'm not sure about tonight, but I'm thinkin:

Homemade salisbury steaks
Smashed red potatoes
Sauteed zuchinni
Fresh iced tea

Tara---I Love St Augustine!!! I have a really good friend there. We went to eat when I went there to visit him, but I don't remember the name of the restaurant.

Leily---brownie ice cream sounds wonderful.

I had fat-free hot dogs on low cal buns---really very good, can't tell the difference from the full fat ones, tortilla chips and mango salsa.

Tonight DH is treating us.
We'll have Burger King at Home.

This realy is a treat as we don't eat BK but maybe twice a year.
We've had over a month of record heat and tho I was prepared to go into that oven of a kitchen to prepare dinner my sweetie stopped me. Thank goodness I had hamburg out and meatloaf was on the menu. icon_twisted.gif
