Never got to do the crockpot swiss steak last night, so I used the round steak pieces tonight to make:

Braised steak & gravy
Brown rice w/parsley butter
Green peas

Last night DH fed himself and the kiddos 'MickeyD's'
DD & I had Taco Bell after cake class

Tonight:
Tex-Mex Casserole Pie
Macaroni Salad with bell pepper,celery, & green onion
Peaches
A lot of ice water. The weather is still to hot for me to let the family have anything other than ice water.

Right now I'm going to have a cup of coffee with a small slice of cake.
DD's final from class, Banana cake torted with chocolate pudding, yuuummmyyy icon_biggrin.gif .

Tomorrow night is a free dinner at the Ramada Inn. Have to listen to a presentation but hey free food...lol. Hopefully it will be something DH likes so I don't have to cook when we get home.

Tonight, it's probably something from the "square food" menu. I call those pre-packaged dinners like Stouffer's lasagna, or those Freezer Queen steak & gravy things "square food."

So tonight will probably be something like that.

Okay, Okay, since I'm not coming to Tenn. anytime soon here's the recipe. First remember this, nothing is measured.

Tex-Mex Casserole Pie
~From Gloria's Kitchen~

In bottom of casserole dish place corn tortilla's softened in hot oil. Or crust of your choice.
On top of crust place pre-cooked taco meat mixed with vegetables and salsa. Alternate layers when using tortilla's. If using a pie, Bisquick, pizza or biscuit crust do not layer. Sprinkle generously with Longhorn cheese and onions(optional)
Bake at 325 until cheese bubbles or according to temperature and time recomended for your crust.
You can garnish this casserole with guacamole, sourcream, salsa, diced tomatoes, grated cheese, chopped onions, or jalapeno's.

This is a fast easy dinner to fix which is right up my "I hate to cook " alley.

Well we went to the meeting and they served ham and cheddar on crossaints. With potato salad and cheese cake. So hubby was still hungry...lol. He just ate leftover burrito meat though and called it good. Although now he wants me to figure out how to make crossaints that big...lol.

Tomorrow is a church meeting so I'll eat there. Hubby is on his own...lol.

Sunday we're headed to visit my brother and spending the night. I bet I'll end up cooking because his wife hates cooking for people...lol. Oh well I don't mind. Just call me Betty Crocker...lol.

Tonight the Old Man took the evening and went to his friend's house to watch the game, so I made 'em a cheesecake. He ate there.

Wendy's for the kiddo's, the new healthy choices.
I'm on my way out with my 2 oldest DD's for a bite to eat right now.
Nothing for DH, He's stressed.

Which leads to why DH is stressed. Our fridge is DEAD!!! icon_cry.gif
He went shopping today and came home with information overload. He's under pressure (wow I just heard that song in my head...freaky), anyway he's under pressure because he hates it when we spend money eating out. Howdy!
Last night we went to a local BBQ place-sooooo good! We got dh's student loans so we could finally go out! Now it's back to homecooking!
Tonight-my version of chicken marsala, wild rice and green beans and triple chocolate chip cookies!

I am wiped out this weekend-I did a craft fair yesterday-sold $42.50 in cookies and cupcakes-yeah me! But I am tired! I made 58 alligator cookies, cupcakes, also started cookies to send to friends in TX, ran out of time making a cake to take so I finished it today (uf cake in my pics) and we took the leftover cookies to the Ronald McDonald house today! Whew! I'm not doin' nothin' tomorrow! icon_wink.gif

Hey MorningGlories-have you guys checked the classifieds for a fridge? They have some great bargins sometimes!
