DD got married 7/22 in Grand Cayman then had reception 8/19 in Utah - we have not been home much and had limited access to CC - missed everyone a bunch.
I was only to St. Augustine once, but loved it.

joanmary--i'm coming to CO in Oct.--i'll come visit you--(DS really did ask his dad if we could go to Vegas--said he wanted to play poker--i told him NO & he couldn't get in anyway--he's only 11--crazy kid--wants to gamble--let me get my MIL after him -haha)
We had breaded chicken tenders, mac & cheese, and fries.
We're having bacon wrapped pork with fried potatoes, corn and green beans unless I change my mind.
Dessert will be Strawberry Banana Pudding.

oh, I have to laugh! I really do love to cook but it's a matter of necessity now since dh is still in school and I stay at home with ds. We love to go out to eat, try new places but the student loan budget doesn't fit that in much these days! I just keep telling myself "3 more years, 3 more years..." then I can do whatever the heck I want!! ![]()

Tonight we had 'Sloppy Joe Rice Casserole'. Well that's what I call the concoction the kid's and I make by throwing the dinner in a bowl instead of on a plate. My DH had:

White Cheddar Cheese & Garlic mixed veggies.
Ice Tea
Tomorrow is my last class in Course III so DH will be providing dinner. Man, am I going to miss cake classes. ![]()

Yummy! We can 3 batches of salsa every year. If we don't give any away it lasts us all year. We get 10-12 pints per batch. I don't like eating any other kind.

mmmmmmmmmmmmm you just CANT go wrong with homemade salsa- I always go ACK when I end up somewhere where there is the store stuff- cause my homemade salsa is so chunky and fresh and not the blended stuff you get in the store LOL- havent raided my friend's roma tomatoes and jalapenos yet this year- I like to freeze mine- oh and when you drain, add tequila or whatever else you normally use to the juice- lol
Tonight's supper will be cheesy rice stuffed chicken breast and baked potatoes. Not sure what veggies.

Crockpot swiss steak with potatoes
Steamed broccoli & cheese
Fresh iced tea
Leftover chocolate marble practice cake

Drove up to Oregon to be with the family, son BBQing tri tip with corn on the cob. Brought up cake (of course) for dessert.
Here is my cheesy rice stuffed chicken breast recipe.
Chicken breasts (boneless skinless) at least 4
1 cup rice (cooked will make about 3 cups)
2 TBSP cream cheese
1 cup shredded cheese (your choice)
Lawry's Herb marinade with Garlic and lemon juice
Marinade chicken. Discard marinade when finished. Combine cooked rice with cream cheese and shredded cheese. (I add salsa to mine here but you can also add broccoli or veggie of choice). Put rice mixture into bottom of oven safe pan. Top with marinaded chicken. Cook in oven at 350* for 35 minutes.
You can change the marinade to whatever you want. This marinade is just what we like. Forgot to add we're trying a new cake recipe. Buttermilk white cake with strawberry filling....hope it's yummy.

Monday started classes again so had Subway on the way to school
Tuesday worked late then picked up Hardees on my way to a packing party for our trip.
Tonight... Brought A LOT of work home with me and still have a house to clean before Friday so we're getting out of the house for a bit and going for either Chineese or Mexican (i'm thinking a nice big taco salad)
Chicken and yellow rice and black beans then tomorrow night we'll have leftovers from last night and tonight since I doing a small craft fair deal on Sat am I'm making cookies and such at night this week to try to make a couple of bucks. Plus it should be fun-dh is watching ds-so a moment to my self!
Crockpot Swiss Steaks
1 1/2 lbs. beef round or shoulder steaks, cut 1/4-inch thick
1/2 cup water
3/4 cup finely chopped carrots
3/4 cup finely chopped onion
1/2 cup finely chopped celery
1/2 cup finely chopped bell pepper
1/2 cup medium picante sauce
1/4 cup ketchup
1 Tbsp. white vinegar
12 ounces Farfalle (bow-tie) pasta, cooked
The night before serving: Prepare vegetables and combine with picante sauce, ketchup and vinegar; refrigerate in a sealed container. Trim fat from beef steaks and cut into 6 pieces. Wrap and refrigerate.
In the morning: Transfer steaks to the crockpot and top with vegetable mixture. Add water.
Cover and cook on low for 10-11 hours.
Thicken by adding 1 Tbsp. cornstarch mixed with 1 Tbsp. water. Salt and pepper to taste. Serve over cooked pasta.

that sounds like a yummy recipe- will have to give that a try. I have a cast iron dutch oven that we used growing up and it's still growing strong. Nothing like having the proper cooking equipment
