Ok finally able to get to the table. OMG food icon_cry.gif I ate so much earlier icon_cry.gif But yet my mind is tellin me time to eat something cause this is the time day I eat icon_cry.gif I have been cakin the last few days.

Ok we had DA deer a few days ago I broiled him(by son's request) and shouldn't have he was alittle tough. With baked potatoes. Son is now requesting my deer stew which will probably be soon cause it is going to get cold again.

We went to inlaws for the feast. I took my pumpkin cake, applesuace spice cake, and the new one I did for SIL banana cake(turned out pretty good) I now have 2 kinds of cakes DH will eat thumbs_up.gif I also made some cakes for my side of family that we didn't go to. I also made my fav niece B-Day cake for her 25th B-day didn't turn out like I wanted but it was OK. I have to finish great nephews 1st B-Day cake tomorrow. I am going to try to recreate my cars cake from this summer for another nephew(that the pics didn't turn out) His Grand-Pa loves Mater. I thought about doing something with just Mater but decided his smash cake will have Mater only on it.

I need to do a few more things for up coming small business show on this WED. So more cakin or candy makin.

KNox I am glad he showed up so you had piece of mind that he was safe at least for awhile icon_smile.gif Your cornbread stuffing sound good can you share the recipe??? icon_biggrin.gif

This cornbread stuffing recipe makes enough to fill up a 9x13 for serving, and enough to freeze a loaf pan full. I always try to do that, so that I can have the stuffing in a month or so on a night I don't feel like cooking! Just pull it out of the freezer, bake it for 1 1/2 hours at 275, and serve it with some baked chicken! Easy!!

CORNBREAD STUFFING WITH SAUSAGE & ALMONDS:

13x9 pan baked cornbread (no sugar)
1 yellow onion, diced
1/2 bunch celery, diced
4-5 cans chicken stock (I use the stock, but broth is good too.)
2 sticks butter
3 eggs
1 pound bulk sausage, crumbled
2 T. poultry seasoning
2 T. dried rubbed sage
1 cup slivered almonds-toasted

Place onion, celery and butter into medium skillet. Saute' until crisp-tender. Meanwhile, line your kitchen sink with either aluminum foil or Press N Seal. Place baked cornbread into lined sink. Crumble.

In separate frying pan, fry up the sausage, until browned. Pour the onions, celery and butter mixture over the cornbread. Add crumbled fried sausage and remaining ingredients. Mix everything up with your hands. Scramble up the eggs in a lil' bowl before adding to the sink.

The more liquid in this stuffing, the better. The cornbread just takes more liquid than you think it will. What you're going for is a consistency that still has a few chunks of cornbread in there--but pretty wet, too.

Pile up the stuffing mixture into a baking pan. Don't pack it into the baking pans--just spoon it in there loosely. You can pour some more stock over the top after adding it to the pans. Take the foil or Press N Seal out of the sink and toss it. (My Mom would've used one piece to cover the stuffing.)

Bake at 350 for about 50 minutes. I cover mine for about 40 minutes, then uncover it and let it get crispy on top for a while.

One thing that makes this one good is to add either chopped apples or cranberries into the stuffing, too. Do your own thing! It's stuffing!

I didn't cook a whole lot for Thanksgiving, since it was just us this year.

So--not many leftovers! I just finished a "Strawberry Shortcake" cake today. (TOO MANY colors!) I wasn't thrilled with it, however.

Tonight Taco salad with fried Shells (ohh my favorite) We have had company staying with us for the last week so I like anything I can just set up like a buffet and they can make what they like!

Hey yall!!

Thursday was to much food to list. I had an execellent thanksgiving.

I am thankful for all of us here at the table icon_wink.gif


Friday was corn dogs, french fries & sweet tea.

Tonight was Pinto Beans cooked with leftover ham (extra yummy!) cornbread & sweet tea. Dessert was a oatmeal creme pie & chocolate chery balls I made for my Papaw last night. He loves those things.

Ok got the cars cake done. Big one is in photos smash cake I am waiting on from the mom. My pics didn't turnout once again icon_cry.gif At least this time the mom got me some pics icon_lol.gif I think this one turned out better than the first one.

ok since Thanksgiving we have had good ??

Friday I babysat so kids had fishsticks and mac-n-cheese Me frozen burritos at 3in the morning. When I got done with the cars cake

Sat. I babysat again so kids got helper lasagna. And I made enchiladas for DH and me. But he fell asleep so I have some leftovers. I will probably freeze them for next weekend for kids.

Tonight Chicken noodles, mashed potatoes, fried bread. It got cold and yucky here freezing rain.

kay - i don't drink diet pepsi. i usually drink diet coke or sierra mist free. but i'm pretty sure that its the sugar substitute that gives me migraines. i've been wanting to try the diet sode sweetened with splenda but i haven't gotten around to the grocer lately.

Hey yall.

Mxpark- I suffer from migranes too thumbsdown.gificon_cry.gif I hate those things. 98% of the time I wake up with them. I believe that chocolate causes mine most of the time. I used to take Imitrex for them but it was making me feel like I was having a heart attack icon_eek.gificon_confused.gif So now I am on Maxalt.

Knox- I do not have anymore beans left, sorry.

knox, your right I couldn't sleep for 4 days--my CC addiction is too strong and I need to see what's going on here at the table.

Tonight was easy! I made salad with cubbed chicken tossed with some italian cheese and then wrapped in a tortilla. So I guess I made some form of a semi-healthy wrap with that one. My kids are all different, one will only eat hers with the chicken and lots of ketchup in a wrap. ewwww! (I also make them just chicken in thin strips with BBQ sauce and some that are an oriental version.) The kids and I also had some wheat crackers, cheese sticks, mandarin oranges (and for those who don't like lettuce in their wraps) salad on the side.

DH just got home and has 3 wraps waiting for him, but he's being grouchy again so maybe I should just eat them instead. icon_wink.gif

knox - my mom gets them as well so i think they're heriditary (sp?). they haven't been too bad lately but i used to get them really bad where i would have to stay in bed all day because any type of stimulation would cause my brain to feel like it was going to explode!!!! icon_mad.gif

monica - what is Imitrex? i've just recently asked the doc for some meds for my migraines and he gave me caffeine pills basically. which have not worked at all. not even to lessen the pain. thumbsdown.gif my mo has taken quite a few things and everything has taken care of the migraine but has left her feeling really sick in other ways so i'm hesitant to ask for any medications for them. icon_cool.gif

Ok checkin in at the table real quick. I am cakin for another show for this Wed. Doing cupcakes and a few husker football cakes.

Mxpark I have a friend how gets them really bad also. Recently they had her go to the hospital to give the meds introvenious (sp??) and now she is on the meds orally. I don't know what it was but she was kind of sick to her stomach, She said it has helped her though. I can check to see what they have her on if you want.
P.S. I love homemade refried beans. My BIL is mexican (great cook also)

Knox I did take alittle break yesterday. I didn't do any cakes(I should have) Only made late breakfast for lunch and the noodles for supper. It was freezing rain here so I didn't leave the house. I just vegged all day mostly. I still am on the slow side right now icon_cry.gif I need to get off here to get my butt busy icon_lol.gif And a ? on that stuffing can you use box jiffy mix. I know that is probably a bad ? Don't punish me to hard icon_lol.gif But I SUCK at homemade cornbread. icon_cry.gif

Well I had left over night. DD had chicken noodles, DS had left over pancakes, Not sure if I want enchiladas or noodles. MXPARK- Here is a link to Imitrex. http://www.migrainehelp.com/ .I do not know how to describe what it is. All I know is that it go rid of my horrid migranes. I do not take it now cause it made my heart & chest hurt icon_confused.gif Now I am taking Maxalt heres a link to it. http://www.migraines.org/treatment/promaxlt.htm I like it alot better. I actually had a migrane at church one day & did not have any meds & this lady gave me Maxalt. I love it. If you do NOT have health insurance its over $200.00 for 9 pills icon_eek.gif I know expensive thumbsdown.gif

Hello again. Been a few days since I posted as well. Too much food over the weekend to post. UGH!

We had chicken nuggests and french fries last night.

I get migraines as well but the only meds that will work for me are the ones that knock me out so I don't take any. Mine are mostly sinus/allergy related. It helped once I started taking allergy meds. But I still have them occassionally.

Do you think you could get him to give you the name of the hotel. I bet they could at least give you an idea of what they are serving up. I know Risque doesn't fill her cakes (just read this tonight) but she may have heard of this cake/filling. I'll never understand people that think everyone one knows exactly what they are talking about/want especially when it's a restaurant item!

chicken (cooked at store)

knox - wrap turkey frame, legs, wings (whatever is leftover and to be used for soup) in cheesecloth. Put 1-1/2 onion, 4 carrots, 3 celery stalks (all finely diced), 1/4 tsp salt (actually dh wanted more) 1 to 1-1/2 tsp (we like 1-1/2) pepper, a small handful of basil and another of thyme and another of parsley flakes in bottom of crock pot, cover with wrapped turkey, add water to almost the top (I usually supplement with either boullion packets or chicken broth). Cook 6-8 hours. An hour before serving, lift turkey out, let cool, dice and return to soup. I'm not much of a cooker, but this is pretty good.

Hurry up kind of night getting ready for tomorrows show. It is going to be crappy here tomorrow. Cold, windy and possible snow icon_cry.gif And I will be loading, unloading and setting up my candles and cakes by myself. I hope people brave the nasty weather and come out.

Anyway we had spaghetti and Schwans breads. I made that so tomorrow they can have leftovers.

Gotta go frost me some cupcakes.

Thanks for the welcome back Knox! Had you fooled though huh! LOL been 4 days now?

Well actually been sick since Sunday and my throat hurts sooo much when I swallow. Finally gave in and went to the doctor yesterday b/c I havent' been able to yead/drink more than a cup or two of liquids since sunday. Told me I have tonsillitis, when I look at the back of my throat I can't see any openings around my tonsils-they are swollen up pretty bad icon_cry.gif but hopefully the medication will help to clear that up but I still can't swallow much at a time it just hurts too much icon_sad.gif

So if you really want to know my meals (or food partially eaten) for the last few days.

Orange Juice
Yogurt
Pudding
Chicken Broth

Quite the combination eh? I am more afraid of not staying hydrated enough so i've been pushing through it, but it isn't fun.

But I have been craving some spagetti or Broccoli and cheese soup with bread.... guess i'll just have to wait

Went out for Mexican with DH and our neighbors. It was ladies night. Margaritas for $1.50 Yum!
