Liely--I consider myself the queen of freezer food. I made up a bunch of frozen dinners last fall to get us by while I was in school for four months. It totally worked for us.
Ham and beans, gumbo, chicken/rice casserole, Jambayalia, scalloped potatoes, though the potatoes do get a bit mealy, various curries, roasted chicken/pork, various soups/stews. stuffed cabbage/peppers. Basically, I froze anything that made more than two nights worth of food for DH and I. I put them into plastic containers that held enough for a meal for two. Soup/stew work well in quart freezer bags. They don't take up as much room. Be sure to label and date them. Masking tape works well

Leily, I don't freeze much but I have a friend who does. I can ask her what she prefers. I know my cousin made a whole bunch of tamales for me after baby #4. I just would grab one from the freezer and nuke it.
Could you make up taco meat and such and have it the freezer?
Like I said, I don't freeze much so I'm not so helpful, sorry.

I had leftover filling from the beef dish so last nights dinner was chicken stuffed with spinach- feta and bacon. I put alfredo sauce over it with some more cheese mixed in and served it over pasta with the same alfredo sauce. I just sprinkled some cut up parsley over top for color. Grilled bread with butter on the side. That was pretty much it.

Hope that all is well with everyone! Leili, I really don't have any suggestions other than what you already freeze because, like mkolmar, I don't freeze entire dishes much. Maybe stews or braised meats?

Can you make up potatoes that are diced, seasoned and cooked. I bet those would freeze okay.

Tonight was ham and cheese omelets topped with fresh chives, toasted asiago cheese bread slices and yogurt with blueberries and sliced strawberries.
Yesterday my anniversary and we did nothing for it since we were both working. It was leftovers from the night before which was creamy chicken cajun pasta with grilled bread and green beans.
Our kids made a chocolate cake and decorated it though. So sweet.

Hello ladies.

Dinner last night was turkey smoked sausage, sour kraut, corn on the cob, watermelon, and salad.

Our 10 week weight loss challenge is over. My husband lost 34lbs in that time, has since lost another 6lbs. I lost 17lbs. My husband is still wanting to eat healthy and lose weight. I am so happy, he has neglected his health for years.

Congrats on you and your family's weight loss, Ohara! I was a little heavier back in the '90's so I know how good it feels to lose the extra pounds and get into the body that you want have. Kudos to you!

Dinners for me have been nothing special. I've been on the run a lot. I've been eating a lot of burgers, Hebrew Nation Hot Dogs (I love those things icon_biggrin.gificon_redface.gif ) and salads. I have to go to the supermarket to stock up on some healthier foods because I've fallen off the band wagon icon_redface.gif .

just wanted to check in one last time as you probably won't see me for a few weeks. The preclampsia is back and we are going to deliver today before it gets as severe as last time.

Thanks everyone for the help with ideas on foods to freeze, i didn't get as much done as i wanted, but I have at least 6-8 meals in the freezer for quick use (plus went major grocery shopping last week b/c i just had a feeling) so hopefully meals will be easy over the next few weeks.

As for what we've been eating.
- manicotti
- ham, potatoes, corn
- Porcupine meatballs, mashed potatoes, green beans

I sOOOOOOooo wanted to make parmesean stuffed chicken last night but ended up in the hospital instead for observation, so I guess that will have to wait for next week.

Tonight I took my kids to the YMCA for swimming. I only have 3 of them though since my oldest is spending a night with my MIL.
My husband is still at work and it's late so I guess I'll clean.
Tonight was for me yogurt with fruit, bread with butter and peanuts. A hodge podge night.

Thank you for everyones toughts this week. We had a healthy baby boy, (6# 7oz, 19in --- he weighed double what his sister did) and my preclampsia has already started to go away. Neither one of us had anything special (no NICU visits and no bed rest restrictions for me this time) so we get to go home today. I have been missing my little girl SOOOOOOooo much.

I will be around periodically (CC is my destresser) but probably not consistent on checking in at the table. (as i'm sure you'll all understand icon_smile.gif )

I would tell you what i've had for dinners the last few days, but it's hospital food.... so not the best.

Suppers have been chili last night and tonight seafood in cream sauce with stuffed baked potatoes, carrots and salads (All fatty, but what the hay,,it's Father's Day)

I forgot to write what we had for dinner. OOPS>

It was a repeat of a few weeks ago. Beef tenderloin stuffed with spinach - feta and smoked bacon, French bread, fresh picked salad with raspberries - blackberries - sunflower seeds and sliced almonds, applesauce with cinnamon and tomato-mozzarella - basil - cucumber salad. Dessert was coconut pudding with sliced strawberries and mini - tiramisu eclairs.

Thanks for the compliment, but I think we are so use to it that's it's not appreciated like it should be. I'd love for someone else to cook for me for a change, but don't we all.
Tonight is smashed potatoes, roasted cauliflower, French bread, chicken cord on blue and fresh sliced peaches.

I forgot the pectin today other wise I'd be making freezer jam. I have a lot of fresh fruit on hand so I'll be doing that very soon.

Obviously, I can't spell in the post above.
I didn't make that meal yesterday, it was hot so it was sandwiches.

Today I made the chicken cord en bleu that was breaded, smashed potatoes, roasted cauliflower, grilled bread and macaroni and cheese.

We are making homemade ice cream right now along with strawberry freezer jam. Busy day in the kitchen.

How quickly a week goes by icon_smile.gif Thank you for all of the thoughts and well wishes. So far i've been lucky and have a night time sleeper icon_smile.gif only getting up once at night to eat. And with me and my BF home my daughter is back to her regular routine of in bed by 8 so I've still been able to get some sleep (which i really didn't think i would see for another 2-3 months)

My BF's mom and dad have been here when my BF hasn't so it has really helped me to recoup, guesing i'll have them for the next week too, but i'm already starting to feel better, just wish that my lifting weight restriction would be done so i could pick my daughter up (right now someone has to hand her to me or i have to get down on the floor with her)

But since we've had help i've been cooking lunch and dinner for us and for whoever is here to help us out. (and i haven't even gotten to the frozen meals i have, figured i better save those for when our help isn't around as much icon_smile.gif )

So far this week we've had:
Chicken Noodle casserole with green beans
Tacos, spanish rice and refried beans
Spaghetti and french bread
Stufffed parmesean chicken with angel hair and pasta sauce
Cheesy beef and veggie pasta (another kraft recipe)

Hope all is well with everyone. We've had some pretty bad storrms the last week, but we finally saw some sunshine today and it looks like we'll have it for another 3-4 days, now if they can just do something with this humidity.

oh and for those asking what we chose for a name....
John Alan

John is a family name
-first boy born to a male in each generation is a John.... our john is at least number 15 or 16...this is just as far back as they've been able to trace it so far (in the 1400's is where they're at now). Still have some people working on tracing the family history back even further.

Sorry I've been MIA...its been crazy here and HOT! We finally put in an AC because we both couldn't stand it any longer icon_biggrin.gif . Everyone's dinners sound delish! Great to hear that you are healing well and that everthing is well with your family, Leili. John is an awesome name. Its cool that there is a history regarding his naming. Its funny...I don't have any children yet but as most women...I've got the the names all set to go. If I have a girl, she will be named after two patients I frequently took care of during my nursing days. I cared about them as if they were my own. If I have a boy...thats a no-brainer. He will be named after his father...thats if there isn't already a junior (I'm sitting here gritting my teeth icon_lol.gif). Anywhoo...I just thought I'd share that. I'm still waiting for my knight. I just hope that I am not blowing dust off of my ovaries when he arrives.

Kakabebunny....I'm in the same boat as you this weekend. I have a cake and some cookies due plus I am scheduled to work at my job. Let's just say that I'll be burning some midnight oil.

Dinners for me have been:
Grilled kielbasa and spaghetti salad
Smoked Chicken Breast, tossed salad and a repeat....smoked zucchini (yum...I think thats my favorite veggie now).
Today was a cheeseburger with mushrooms.

Just thought that I would pop in and give a quick wave. I hope you all had a blessed holiday weekend. We had a nice time here. My oldest was born on the 4th so it is always a party here for the 4th!

We have been eating picnic food for the last couple of days.

Turkey brats, burgers, baked beans, macaroni salad, water melon, chips, deviled eggs, and Mississippi mud. We also had adult frozen punch that a friend brought.
All yummy!

HAPPY BELATED 4TH TO ALL OUR AMERICAN TABLEMATES. Managed to skip down to Grand Marais MN for the fireworks......great as usual. Hope everyone had a great holiday.

Dinners for me have been cold fare because of the heat & humidity,,,,sub sandwiches, cold salmon burgers, potato salad and tonight going all out with bacon & eggs, yum

Hope that all is well in your neck of the woods. Ditto on the Happy Belated July 4th. Hope that everyone had some yummy BBQ to devour icon_smile.gif . Dinner for me have been simple and no-fuss. Its just too dang hot to really get that stove and oven fired up icon_wink.gif . Dinners have been taco salads, regular salads, hot dogs, cheeseburgers, bruchetta on crostini. Tonight we are eating out...some Via Vanetto's Pizza (a local pizzaria who makes the BEST Sicilian pizza I've ever had).
