hmmm... Since last monday...

- Stuffed Parmasan chicken w/angel hair and spaghetti sauce (one of my new favorites!)
- Chicken, four cheese rice and broccoli
- Whole Chicken, party potatoes (cheesy twice baked type), corn on the cob
- Beef Tacos
- Ham, mashed potatoes, and corn
- Spaghetti

I know there was a lot more since we only went out to eat once, but can't remember what it all was, but last week was a chicken week icon_smile.gif

So it's kind of slow here today, but abosolutely gorgeous, and there's rumor that we might even hit 80 this week, such a nice change from last weeks snow. My BF went out of town for work (thankfully only gone one night this time) so ran errands this afternoon and had some work done on the car. But wore my baby girl out so she's taking a late nap.

Lunch yesterday was a Cheesy Chicken Noodle Casserole, peas, and homemade italian bread. (chicken noodle casserole used up the leftover chicken from the whole chicken the other day)

Dinner was Baked Chicken, four cheese rice, and broccoli (another weekly or bi-weekly staple)

Since we were out and about today went and had lunch with my BF's mom, just KFC, but still nice to get out for lunch every now and then.

Looks like tonight will probably be frozen pizza, what can I say, i'm lazy when I cook for myself.

Hello table family.

Snow last Friday and 80 this Friday. Crazy!! I love the warmer weather, I wish it was going to last more than just a day or two.

This has been a hard week for me. My babies left to go live with grandma on Monday afternoon. My house is so quiet, at time the silence is overwhelming. There are not words for how I am feeling.

We, my husband, my son, and myself are all doing a weight loss challenge. I was surprised that the two men were willing to participate, but very pleased. We shall see how it goes. So far it is going great.

Dinner on Tuesday was grilled lean burgers, grilled zucchini and onions with roasted potatoes.

Wednesday was grilled chicken salads with black beans, sweet corn, peppers, onions, with a sour cream salsa dressing.

oooh I just found this thread.

since money is tight and I can't eat out anymore, I'm doing a lot more cooking.

my two favorites this week are both from the food network site:

Salmon with Lemon, Capers, and Rosemary- super easy super good

Chicken Satay Stir-Fry with Orange Scented Jasmine Rice a little longer but oh, so worth it.

I've never been much of a cook so I'm really enjoying this.

Ohara...your grilled burgers sound super YUM! I love burgers and grilled veggies....DELISH icon_biggrin.gif . And those salads sound devine! I love mexican salads. I have never made one but I always to to Qdoba for their grilled chicken taco salad....that stuff will make your toes curl its so good. I couldn't agree with you more in that I am sooo happy to welcome warm weather.

Dinner for me as meat ravioli. I have to go shopping...my cubbards are beginning to look a little bare icon_sad.gif

Ohara - I hear ya on that crazy weather. We ended up with nice weather so far this weekend (we were supposed to get rain, but still up in the 70's) Good luck on the weight challenge, and don't let the guys discourage you. I hate how quickly men can loose weight and size of clothes... but that's a whole nother thread in itself hehe.

Nannie - welcome to the table. That chicken satay Stir-fry sounds good, i will have to check out the food network for it.

The last two days have been a little hectic, we ended up having more company than planned, but of course that always gives me a chance to make a full meal instead of just an entree fo rthe two of us.

Today we had Chicken Tacos with Rice and Beans, and Peanut butter cupcakes with Ganache

Yesterday was Porcupine Meatballs, Mashed potatoes, corn, blue berry muffins and Homemade Strawberry Shortcake. It was the first time I had made the shortcake, and actually the firs ttime that I had ever had true shortcake. Most people around here make it with angel food cake. Mine was definitely beter icon_smile.gif and of course it had real whipped cream too, not the cool whip.

Can't remember what I made on thursday, but must not have been to exciting. Wednesday was our 10 year anniversay, so we ordered pizza in icon_smile.gif My BF had been out of town for a couple of days so we had a family night at home as he missed his girls, and our daughter definitely missed him.

Hope everyone has a fun and safe easter, we only have one place to go, which will definitely make tomorrow a little nicer.

Happy Easter! Hope that everyone has a great day celebrating the Holiday (for those who celebrate it).

Leily...your dinners sound awesome. I love strawberry shortcake. I've never made an authentic one...using true shortbread instead of angle food cake. I'm happy yours came out yummy icon_smile.gif I meant to tell you when you were asking about how to introduce a variety of solid foods to your little one. Williams-Sonoma has a machine called a Beaba which is like a mini food processor that steams and purees food especially for babies and toddlers. You can prepare ANY fruit or veggie and season it the way you want for your baby. There are also little trays to freeze what you make so you can have a small supply on hand. Just a thought icon_smile.gif I know that if I ever have any children...that machine will definately be in my kitchen icon_wink.gif

Good Luck on your weight challange, Ohara. You can do it.

Hope that the rest of the table family is doing well.

Dinner for me last night was Penne and Chicken. The night before was linguini All'Amatriciana (it was jarred but I plan to make the sauce from scratch next time icon_redface.gif ).

Lita you'll be disappointed with my Easter menu. Easter is the only holiday I don't cook for. We go out after church. We started the tradition years and years ago. We didn't want to wait for a table so we decided to go out for Mexican food. No wait. The kids loved it so we do it each year. I had great chicken fajitas with onions, peppers, squash and zucchini. It was so yummy!
I love Red Lobster. I always over eat, as I love the biscuits.

I went out with my girlfriends last night. I had a salad with grilled chicken, mandarin oranges, golden raisins, almond slices and avocado slices. With a fat free raspberry vinaigrette. It was really yummy!

I cooked for the guys before I left. They had a steak and a stir fry of potatoes, peppers, onions, squash and zucchini. They said it was yummy.

leily you are so correct on how quick the men lose weight! One lost 7lbs and the other 6lbs. I lost 3lbs. I am happy with the 3...would just be thrilled to have lost 6lbs! I do know that won't happen for me (at least not in one week).

It's really almost the weekend again? Where did this week go? It's been crazy busy around here, my BF has been working long hours and we're working on doing some improvements to the house (well... to our water anyways right now) Plus today I had a dr's check up (it's an hr away) and errands to run while I was there.

Tonight was Manicotti - so nice to make it up in the morning and just pop it in the oven when we get home.

Wed - Ham, Mashed Potatoes, corn and croissants - mixed fruit for late dessert/snack

Good to hear from you, Mightydragon! It must be sooo exciting to be so close to graduation. I'm sure you'll Ace your finals. Your loved ones are going to be sad that you aren't in school any more. Mightydragon it was so good to hear from you. How great is it that your almost done.

Lita sounds like you were back to cooking this week. Your dinners sound great.

leily doesn't errand day just wear you out? I know it does me. I ran errands on Wednesday morning and by noon all I could think of is I want to be home! I hope your dr. appointment went well.

mkolmar where are you? I hope all is well.

My guys continue to do well with the weight loss challenge. Once a week we take a free day. Not sure if it's today or Sunday.

Cooking has been a challenge. I am always on a diet (or so it seems) so I know how to eat lowfat and healthy. But I will eat anything, not them. I want it to be flavorful and satisfying for them so they will stick to it.

Wednesday night we had pork loin chops, risotto (used home made stock, no butter) and squash and zucchini.

Thursday night I made turkey kielbasa sausage, green beans and potatoes all cooked together and some sour kraut. Who knew that the whole jar of sour kraut is only 105 calories.

Friday night I baked a turkey breast, roasted potatoes with sweet onions, carrots and peas, we had a salad and for dessert I made an angle food cake with strawberries on the side.

Hi everyone. I've picked up more hours at work. Trying to earn more to go towards our vacation. We added 1 more day so I have more to earn than I thought. I'll be busting my butt working for the next 3 weeks until we leave.

I'm happy to hear that things are going well for you at work. Your dinners sound yummy! Work is going well for me. I still enjoy it and its a great company to work for. They are giving me opportunities outside of being a sales associate which is pretty neat. My mom is doing much better. She is home now and back to work...she is a tough lady. Thank you for asking about her.

Ohara...your dinners sound yummy, also. I love kielbasa (turkey and regular). I know it has to be tough cooking for a group and appealing to everyone's taste buds when they are on a diet. I'm like you, I can enjoy just about any type of food. Do not fret...from the way your dinners sound (amazing!), I'm sure you and your group will be able to stick to it and lose the weight you want to lose. I know its hard, but don't give up. What I've learned to do is to cook with a lot of garlic, herbs and spices opposed to a lot of lard, butter, salt, and heavy creams. I also primarily make all of my salad dressings instead of using premade. This saves on some calories and fat. They may not last as long but they are really good and taste very fresh. Both Williams-Sonoma and Pampered Chef have good salad dressing recipes and light cooking recipes.

Dinner for me last night was grilled chicken breast and tossed salad with pomegranate vinegarette.
Night before was turkey stew.

How am I feeling? Pretty good until the last few days. I have been completely drained, I wasn't even this tired during the first trimester. But not as tired as I was during the first pregnancy. My last dr's apt my blood pressure was really really low (they were surprised that I wasn't light headed or seeing stars) But at this point in the pregnancy they are REALLY glad to see it this low. It is a good sign that I won't end up with preclampsia again. But they are starting me on weekly apts about 6 weeks earlier than they normally would, so if there are any complications we can catch it right away.

Mkolmar - The next three weeks will be busy getting more money for vacation, but I am sure it will be so nice, and you'll enjoy it even more knowing it's paid for and you actually get to relax a little icon_smile.gif

Ohara - yes errands do where me out, expecially when I have so many to do in such a short amount of time. Those nights I am usually in bed not long after my daughter goes to sleep (usually between 7:30-8:00). Oh those free days make the change a lot easier to deal with. Don't really feel like your missing out on so much since the change isn't always easy.


so today is finally a little quiter around here. My BF is out of town again for a couple of days so lunch today was mac n cheese and i'll be going out with his mom and our daughter for dinner tonight for Taco Tuesday at a local bar.

Friday - BF was out of town for work again so ran through Wendy's for a fish sandwhiche (went grocery shopping in the afternoon and that wore me out, so something quick on the way home works - probably really should have eaten something better though)
Saturday - Grilled hamburgers, Chips, Fruit, and strawberries over yellow cake with homemade whipped cream.
Sunday - Fettucine Alfredo, Grilled Chicken, Bread sticks and Broccoli (and this was by far the best Alfredo sauce I have ever made, tweaked my recipe i've been using and definitely a keeper!!)
Monday - Manicotti (the other half of what I made last week, was in the freezer and popped it in the oven for an easy dinner since we ate about 2 hrs apart)

Leily, I am happy to hear that your doctor is on top of things. Hopefully, all will go well with your pregnancy. We all hope that you have a healthy, happy pregnancy and baby. Its awesome that you have a good relationship with your BF's family. I've heard some horror stories icon_sad.gif I'm sure that makes things so much easier and stress free that you all can get along and that you have their support while he is gone. Your meals sound delish!

BTW...meant to tell you, KHalstead, I so agree with your signature line. NOT that I am against organized religion (I do not attend services but I do have a very close relationship with God because I know I wouldn't be here if he hadn't protected me when I didn't even know that I needed protecting) but I grew up around what I call "Saturday and Sunday" Christians....praising God on Saturday and Sunday and raising H*ll Monday-Friday. They make my blood boil at their hypocrisy icon_sad.gif

Dinner for me tonight was Maryland style crab cakes, baked beans with brown sugar and BBQ sauce, and caesar salad topped with asiago cheese.
Last night was Mickey D's (McDonald's).

Hope everyone had a good week and weekend. Was beautiful here and got to enjoy some time outside and have had all the windows open for the last week. But hoping for some rain this week for the farmers around here as they did get a lot of planting done (just a day or two though so they can get back in the fields icon_smile.gif )

Hmm.. Dinners... Well was just me for quite a few this week so mine are usually sandwhiches, macaroni and cheese, or leftovers that I find in the fridge. But other than that we had some of the following
- Spaghetti
- Ham, Mashed Potatoes, corn, Biscuts
- Orange Chicken, Crispy Potatoes, and Green beans -- The chicken and potatoe recipe were from Food Network and are AWESOME!! - I always use boneless skinless chicken breast instead of the chicken called for in the recipe and it's one of our favorites.

Lita - Yes I am definitely lucky that I get along so well withmy BF's parents. They definitely take good care of me and i'm part of the family. Unfortunately it's the relationship with my mom that is the standard MIL horror story and it's getting bad even between me and her. But they now live about 6 hrs away, which has made it easier to deal with.

Ohara and Mkolmar Thank you for the info in my other thread. I have so many people that say i'm crazy and I shouldn't worry so much, but just knowing that there are a few people out there that are along the same lines as what we are thinking makes me feel a little more comfortable with what we want to do.

It was a good but busy weekend. We had friends over Saturday. Special Olympics started so we had a track meet Sunday. We went to early church, grabbed a quick lunch then off for the meet. It was quite cool and breezy so it was a long afternoon. We were just going to grab subway on the way home but I wasn't feeling it! So we just came home.

Dinners....
Tuesday I made stir-fry with brown rice. Just had to be careful with how much sauce to use. DH loves his with lots of sauce. He said it was still good with (much) less sauce.

Wednesday I made chicken spaghetti. Again DH was skeptical about what a "serving" of pasta would be. He again was pleased. I sliced chicken breasts, onions, peppers, squash and zucchini. Stir fry them (with out oil) then add spaghetti sauce and serve it over the pasta. We had a salad also.

Thursday was track practice so we had leftovers and a salad.

Friday I made burgers. I use 90/10 ground beef. For my burger though I usually use ground chicken or turkey. I sometimes mix 1/2 beef and 1/2 chicken. DH said he would like to try that. He liked it that way.
We had black beans and rice and sweet corn.

Saturday night we had friends over who are doing the weight loss challenge with. I wanted to show them what great things you can eat and still stay on the challenge.

I did shrimp cocktail, salad, grilled sirloin steaks w/ mushrooms, steamed little red potatoes and green beans. I also made an angle food cake.
Dinner was good.

Sunday was leftovers and a salad.

mkolmar vacation is coming hang on. I know you are working really hard to make this happen for your family. I can't wait to hear what a great time you all have!

Lita how are things going with you? Thanks for the encouragement! I know we will be successful... I already feel like I have been with my husband. He has done so well. I couldn't be happier about that!

leily your welcome. It is hard to go against the "norm". I hear a lot of the newer moms in our "circle" are discussing and choosing different vaccine plans. They are your kids and your responsibility. I completely agree with mkolmar, I don't blame the vaccines for my daughter being Autistic, but there is that tiny thought in the back of my head that says what if? I can't go backwards and change it. I can and do make my own decision with some of these newer vaccines.

Hey Ladies,

I'm happy to hear that everyone had a great weekend icon_smile.gif. Everyone's dinners sound yummy! Leily, you are very fortunate to have been embraced by your BF's mom and family...especially since you and your mother don't have a good relationship. I know exactly how you feel. My mom and I have a VERY complex relationship.....it's like I hate you but don't leave me. I do love my mom and I know that she's there for me but I don't trust her as far as I can throw her. As long as I'm not happier than she is she is fine. My family has done me extremely dirty and she expects me to just forgive but the depth of what they did to me will stay with me the rest of my life. It influenced some major decisions and they scarred me emotionally and psychologically.....so I can't forgive. I just hope that if I ever marry (or even find a good man, for that matter) I am fortunate enough to be embraced by his family because mine can kiss my A**.

I am doing pretty good, Ohara. Just tired. Thanks for asking though. Work is going GREAT! I taught a class on vegetables on Sunday morning and it was soooo much fun icon_biggrin.gif . That's why I love that job so much....because I get paid to do what I love...cook, bake, and decorate icon_biggrin.gif . I'm happy to hear that the diet is going well. I told you that you could do it! Your dinners sound creative, nutritious, and delish.

Now I just have to get my personal life togather. I am getting a little restless waiting for my knight in shining armour. He better hurry the H*ll up....I think I have waited long enough and I am not getting any younger.

Lita good to hear that you are well. I hope you find your knight. I'm sure it is frustrating waiting!

Busy week here. The weather has been very nice. Good weather to work out in the yard. I have most of the flower beds cleaned out and one more to edge. Then I will be ready to do some planting and also mulching. I love the way it looks after it is mulched so I am making my self wait to do it when all the hard work is done!

Dinners this week

Monday was grilled pork chops, squash and zucchini and salad

Tuesday was stir fry with left over grilled pork chops chopped up in it served over brown rice

Wednesday I made grilled chicken/beef burgers, oven baked sweet potato fries and salad.

Thursday we had track practice so after we had turkey sub sandwiches, salad and pretzels.

Tonight we are using our free day. Looking forward to it.

We have friends coming for dinner on Saturday night. Not sure what I will cook yet. I have to think on that and come up with a plan!

Hi everyone! A quick stop at the table to grab a bite and run. I've been working a lot. Yesterday I worked 3 jobs, so I worked from 6am - 1:35 am.
I'm so tired, but it's all for vacation so it's worth it. Next week my work schedule is only 1 day! Yes!!!

I cant really remember anything I ate or cooked. It's all a blur. I think I remember chicken, pasta, fruit, veggies and pork loin. Not sure. I could be making that up at this point as my body and brain aren't functioning properly.

Hi everyone!!! I'm new to the "table" icon_biggrin.gif but I love this thread!!!!

I have a 3year old little girl an 11month old who started walking yesterday and a sweet wonderful husband.

Last night dinner was pistachio crusted Halibut with grilled asparagus tossed with carmelized shallots.

Tonight was Butternut Squash ravioli in a spicy bur blanc with leeks and grilled red peppers.

Good to have you back, mkolmar! You worked from 6:35am-1:35 am icon_eek.gif . Wow...I thought pulling doubles in nursing was bad. Its all good, though. Your hard work will be rewarded when you are relaxing and enjoying your family on your vacation. I know that you must be excited! I'm excited for you icon_smile.gif A little R and R can be good for the soul and psyche. I'm sure you all are going to have a ball!

Ohara...your meals sound healthy and FANTASTIC! I'm happy to know that everyone is doing well in your neck of the woods. I'm sure that gardening has to be very soothing. I wish I could garden.....but I don't have a green thumb AT ALL. My house plants rarely stay alive icon_sad.gif . I can take care of breathing beings but botanicals and I don't mix....even though I do love flowers.

Hope that all is well with Leily and the rest of our table mates.

Dinners for the past few days...
Tonight...baked turkey wings, broccoli cheddar pasta, and peas (courtesy of mom)
Last night...Subway's Veggie Delight (I was at work)
Friday....Grilled Chipolte Chicken breast and salad with pomegranet vinegarette
Thursday....bratwurst and salad with balsamic vinegarette
Wednesday...Fried prawns, mashed sweet potatoes, and tomato-cucumber salad (mom again...I was surprised with dinner after work)

I had a girls ice cream date tonight so I threw together some leftovers but last night I my husband treated me and made dinner. We had spaghetti with spinach and jerusalem artichoke pasta.

Tonight I just threw the leftover pasta in a pan with some butter, leeks, red peppers, and some peppered flank steak. Delish.

My daughter told me today that she wants to make cake (*sigh*, I'm so proud) lol. So we made a chai tea cake with chai frosting. It turned out tasty but tasted really really really sweet so I think I have to adjust something somewhere. icon_smile.gif have a good night!!!!

Welcome to the table anxietyattack! Your dinners sound really good. I know you are a busy woman with two little ones to care for.

Lita I find that gardening is a lot of work. I really enjoy the way it looks when it's all done. Our weather has been cruddy so I haven't gotten out for several days.

mkolmar that's a lot of working. I know you must really be looking forward to your vacation. Amazing what we do for our families.

leily I hope all is well with you.

I called the dentist yesterday because I had a wisdom tooth hurting. I thought that it might be infected. The dentist was going to be out the rest of the week so they said come right in. He ended up pulling two wisdom teeth. The one was really infected. I am praying that I heal quickly!


Dinners...

Saturday we had friends over. I grilled chicken breasts, peppers and onions. I made a corn, black bean and rice salad. We had a lettuce salad to start. I also made a fruit and pudding trifle for dessert.

Sunday we had a track meet all day. I packed our healthy lunch. I made turkey kielbasa sausage, green beans, little red potatoes and sauerkraut.

Monday night I made Italian vegetable soup. Yummy and warming.

Tuesday they had to fend for themselves. I didn't get home from the dentist until 6:30pm. I had snack pack pudding.
