Thanks Cindy. I use the Italian meringue buttercream recipe I have posted under frostings in the recipe section. I smooth as clean as possible, put cake in freezer for about 10 minutes, heat a chocolate scraper over a stove burner for a few seconds and finish smoothing the icing. The ruffles are done with the La Girolle ruffler.
