. A friend of mine was lucky enough to win a Mothers Day lunch through a local radio station, at a very swish restaurant and she got to take 3 friends. Guess what I was a friend, how lucky was I??? So now I'm going to make you all jealous
. We were greeted with champagne and smoked salmon spoons. There was a constant stream of champers, red or white wine or soft drink. Entree was stuffed zucchini flowers with ricotta, seared tuna, watermelon wrapped in proscuitto(?), scallops with bacon and lamb in filo pastry (decisions, decisions so I tried everything
). The main was schnapper fillets on Israli couscous or lamb fillet with kippfler potatoes I got the lamb (yummo). Dessert was panna cotta with mixed berries or what I had profitteroles with custard cream encased in chocolate mousse, mkolmar I immediately thought of you, thought you might of been the chef
. As I waddled out to the car to go home I thought how lucky was I to have a lucky friend ![]()
As both DH's mother and my mother have passed on and 2 of the kids were working we weren't going to do anything special. But another friend had different ideas and asked us to lunch at her place with her family. It cost a salad and a chocolate slice
. We had a great time.
I have been one very honoured friend on 2 occasions this week and couldn't of asked for nicer things to happen ![]()
It was very saddening to read about Kay and K2s news, my best wishes to you and the families.

So sad to read all the news.
Last night's supper was changed. We went to my mom's and had smoked tenderloin, mashed potatoes, cream cheese corn, biscuits, and I don't remember what else. It was kind of blah. Some of my family members have heart problems so they don't use salt. They need a lesson in seasoning without salt. Everything was kind of bland.
So my meal planned for last night is the meal for tonight.
Tonight DH cooked for my MIL, mom and I. It was suppose to be a meal that I wouldn't help him with and I wasn't suppose to do any clean up either. YEAH RIGHT! He did good but I did end up having to assist him and I did ALL of the cleanup. Still a good time though and a happy mothers day.
Tonight dinner was: Salad with toasted pecans, mandarin oranges and fresh mozzarella that was marinated in a balsamic vinegar, vegetarian lentil soup, bacon wrapped filet mignon, large portabella mushroom caps baked with olive oil, sundried tomatoes and a cheese blend, seasoned red skinned potatoes, italian bread with tuscan dipping oil, peanut butter cookies (he bought the pilsbury brand from the store in a tube
) and a low calorie with 4.1 grams of fiber dessert that I made. (it was okay--but I like a real dessert! This one had only 95 calories and 4 grams of fat....my mind just doesn't grasp that....kidding) It was ricotta that I blended smooth with a little sugar, almond extract, vanilla extract and some amaretto liquor that was topped with a sweetened strawberry and blueberry mixture.

Thanks all for the compliments on my winning cake - 2 days later was the next competition, and the evening before i still didnt know what to do, but eventually at about 6pm the night before, i covered the dummy and then started fiddling - i didnt place, but got a silver certificate - lol i was surprised as it was really just a few hours of work - and not marvellous i might add - lol

I have caught up on the posts, but cant remember what happened to who, it has been way too long
I have been pretty busy with cakes, and my folks and stuff.
4 weeks ago, my mom went into hospital to get her blood pressure and her diabetes under control, well they told her she was heading for another heart attack - last one was 12 years ago - they gave her 6months to live, and 12 years later they were warning of another!!
so she was booked out and had to go in for an angiogram the next week tuesday, was also told they would be putting in stints to keep her arteries open - she has very small arteries!!
whilst they were doing the procedure and put in the first stint - she told the dr she had severe pain, well , she had another heart attack on the table, but thank goodness it was there , as they pulled her through
they then stuck her in i.cu. with the baloon thing in her leg etc, the next morning they had to remove it as it was leaking the blood - then she almost bled to death, they just couldnt stop the bleeding, they struggled for about 2 hours
the next day they sent her home!!! not even into a ward or anything, straight home, and she isnt well at all, she is very very short of breath, wishes she had died, wants to die, and so on and so forth, today she has started back at work, im hoping that this will do her good to be with other people etc...
so between cakes - just when i thought i had some time to do some baking for my family , i ended up helping my dad out with the garden services so he could be by my mom with all this going on!!
My eldest brother is also diabetic - as am i, but he isnt interested in keeping it under control though!!! he had a sore on the bottom of his foot near his toes, and went to the hospital, they removed a layer of the skin and stuff, and treated it, sent him home with meds etc, and now 4 weeks later, well he has gangrene!!
so now we are wondering what they are going to do, he isnt on a medical aid or anything, so he has to go sit at the government hospitals and wait his turn to see a doctor - which here takes the whole day sometimes 2!!!
I have a feeling they are either going to cut out that piece of foot down to the bone, or they might even amputate his foot - which is horrible, but then again so much better to loose just your foot than your leg or more!!
He is staying here in the cottage on our property with my folks at the moment ti lll this is all sorted out, and this is really freaking my mom out aswell - well so much for her not allowed to be stressed!!! -lol
Now that i have some time to catch up on the house, baking for family and stuff, my ds and i both have the flu!!! yukky
O.k. i am so sorry for the long vent, but that is why i havent been able to come eat here, have to do it in the kitchen lol or on the run

night before left over lazagne and veggies and some fresh rolls
sunday - dh did a bbq, some t-bones and our wors, with veggies, roasted potatoes (as it was mothers day it was my choice - lol)
sat - was the lazagne salad and corn bread
friday - my dads birthday - snacky things and didnt even get a slice of my cake i baked - lol
tonight - i am planning on making little meat pies, so i can freeze them for evenings when i am really busy again . so we will have pies, chips and gravy for tonight - lol

Well ladies I'm off for a weekend of cake decorating, well technically speaking a Cake Decorating Seminar. We're going right down the south coast of NSW where it's pretty cold this time of year. It will be a lot of fun.
We have a trip of 6-7 hours and a group of us are car pooling, lots of food, a masked ball, lots of cake decorating hints and tips, competitions etc. I've spent all week trying to make sure the family doesn't starve without me LOL. Naturally in all good plans there is a flaw, we have a mouse in the house. We have 2 cats (yes that's right 1, 2 cats) and a mouse, something wrong somewhere
. So the peanut butter, bread and cheese have come out in the traps. Also joy of joys we have a rat (well we assume it's a rat) in the roof. I've issued instructions that these vermin should be gotten rid of while I'm away
. Well what's the use of having 3 men/boys if they can't get rid of a few icky things. I hope to come back with the house still standing

I've been trying to make sure everyone has their greens before I go. Tonight we had steak (iron) and a vegetable stir fry (lots of vitamins)
Last night was spaghetti (I was busy that didn't count

The night before was a baked dinner with vegies and lamb.

Well, I got a job doing pastries for a care center on a college campus. It only serves the nuns and priests who are residence in the care center, which is around 80 or so people. I get to make my own days and hours so that's a huge plus for me. I'll start out only working 1-2 days a week and when I'm ready I'll get to add more hours. I'm happy right now but it seems almost too good to be true. The pay isn't great but I'm fine with that since it's a resume builder.
Last night was salad with grilled chicken breast.

I grilled hamburgers and hot dogs yesterday. We had green beans and new potatoes also.
Tonight was left over pork chops, green beans and potatoes.
DH grilled steaks and I fixed garlic parmesean potatoes, and fresh corn on the cob.
I'm adjusting pretty good. Sometimes there are a few complications but I was born to deal with loads of children and chaos...lol. Only problem I'm finding is lack of sleep. I can deal with lack of sleep normally but it's more difficult when healing from childbirth and high blood pressure.

k I still haven't had time to read up.. Sorry if I missed something important..Mike will have the last week of May off without pay. They aren't allowing him to use vaction time so has to put in for unemployment which mean 1 week without income.. So I have been feverishly working my candle business.. This month I have a fundraiser going on for 2 girls raising money to go to Orlando for Bible Quiz.. Then I have a Candle Party this weekend.. So I have been focused on making money outside of cakes and it will help but not till next month.. but any little thing will help.. Our company is also launching a mineral makeup line on June 1st I am so excited because I can earn even more money.. YYYAAA especially since Mike is getting sick again.. I got to find a way out for him..
So ok for food tonight was marinated grilled chicken breasts and a foil pack of diced potatoes,carrots and onions..
Tomorrow we will be going to a surprise B-Day party for a co-worker of mine.. They are grillin burgers and Brats and we bring sides.. I made a lettuce layered salad and a ranch potatoe salad..

Another busy week here and to finish it off the baby was circumcised on Friday. He did very well....as well as you could hope for I guess.
My girlfriend who moved to Utah is coming to stay with me this week. She will be here for quite a while this summer.
My daughter is loving Special Olympics. She has made some friends. Me too actually. Nice talking with parents that are all experiencing some of the same things with their kids as I do with my daughter. One mother that I have been talking to has a son 22 who has Aspergers. I could sit and ask her questions for hours. He is a really nice young man.

Hi everyone! I've been really busy (as I'm sure you all have been too).
I was really busy working on cakes for friends and family this past weekend and will be doing it again this coming weekend.
My girls caught headlice *cringe* so I feel like a monkey going through their hair everyday. My youngest I'm 95% sure is done with it. My oldest I'm not so sure about though. I hope I got it all. I chopped their hair to make it easier to handle. They had long hair and now they have short hair.
Lets see what have we ate....
salad with chicken, salad with kidney beans and cheese, soup and sandwiches, chicken parm. with spaghetti and breakfast food.
Tonight DH took me out for my b-day. We just ate a quick meal at Bob Evans restaurant. I had the cheddar potato soup with bacon sprinkled on it and had a few bites of the wild fire salad (blah! didn't like it so I boxed it up and gave it to my mom who loves it.)
I start my new job next Tuesday. I have just one more training and a police/FBI check yet to do though. I'll be working part time 2 days a week from 6am to 2pm. I'll be leaving my house at 5:40am to get there on time. I stay up late so I guess I have to change that if I want to survive.

Hey, I really like the Organic Flax Plus cereal. I ran out of that so now I'm eating Total with strawberries and oatmeal with a little honey and all natural peanut butter instead. I've never had the pumpkin raisin crunch kind, sounds good.
Today was my youngest kids birthday. He turned 4. He just kept walking around wishing everyone and himself a happy birthday. It was so darn cute. We went to Toys R US and let him pick out a scooter. Since it was his b-day he got a balloon and a birthday paper crown to wear. He even wore it to the movies. We saw the new movie UP. Now for the emotional part. I was so depressed when I found out I was pregnant with him (got pregnant while taking birth control) and even after I had him I had severe depression. I had just a horrid time and hated living. Fast forward 4 years and I couldn't imagine not having him here. I love him so much and he completes our family. Life is good and I am blessed.
My first day of work was.....well, let's just say interesting. They have no sifter or cake pans or cooling racks or other much needed equipment for pastries. I ended up making a cake in a braising pan, flipping it out to cool on 2 sheet trays that were flipped over. When I went to unflip them off of the sheet trays they were completely stuck!!! I had to take a torch used for desserts and heat up the sheet trays to try to gently pry the cake off. The cake tore. The next layer I flipped out onto a steam tray liner for veggies, that stuck even worse and took out some chunks of the cake that thank goodness were not too deep.
The strawberries I was going to use someone else chopped up. The lemon creme bruele I was going to make couldn't happen because they don't have the remakins to hold it, so I made a lemon curd instead.The cake I made tasted like death in cake form *shudder* all I could taste was straight chemicals. I have made cakes from box before and they turned out great. These were the just add water bulk kind you get from a supplier. I changed it to eggs, oil and water and it didn't help it in my mind. This was the worst box mix ever. The cake was a white cake mix that I changed to cherry with marachino cherries chopped up fine in it. I made a vanilla SMBC hoping that would disguise the grossness.
I also made their boxed brownies with reese's PB cups chopped up in it. Not happy with those either. Someone ran out to buy strawberries and they came in 10 minutes before my shift ended so I stayed an extra 1 1/2 hours making sugar free cheesecake stuffed strawberries drizzled in white chocolate.
My friend who works there also came in to say HI to me. Someone complained! The chef said he didn't care and could stay as long as I get my work done to her. I was already warned to watch out for her because she thinks everyone is out for her job. Whatever!!! He made this pastry spot for me when my friend said I was thinking about going back to work. I want to do a good job and not make things harder for him. I wasn't pleased with the products I put out at all. They were way below my standard. Now that I know how the kitchen is set up, what desserts they are use too (going to bump that up a notch and make them use to better) and what they have to work with I have a new game plan. The good news is the chef ordered a sifter, remakins, cake pans and cooling racks for me to use. Thank goodness! On top of that I got yelled at by an OLD nun at work for holding the door open for her
I was shocked and said ok and let go of the door. That door probably weighed more than she did but she didn't want me helping her in any way. So anyways, not a bad day but just different
I got a call tonight saying that they loved the desserts and were very happy. I think I'm more shocked by that than anything else. I'm making scratch items instead next week and really going to do what I want to do instead. The chef said I can make whatever I want so I'm running with that.
Dinner has been spaghetti, veggies and bread -- Pancakes, bagels, omelets and eggs ---- honey BBQ chicken with mac and cheese, bread and carrots--- salad with chicken in a multigrain wrap ---soup and sandwiches---pizza---and whatever else I'm forgetting.

I hope everyone is doing well. All are fine here. DH is still looking for a job. Has another interview coming up. I try not to get excited about interviews...but it's hard not to....they are far and few between. For me they are at least a small glimmer of hope!
The baby is growing and changing every day. He is laughing now. He is about to get good enough control of his hands to pick up toys. He is batting at hanging toys and rattles. He is also playing with his hands now.
DD is giving a speech at a dinner this weekend. Special Olympics is doing an event with the all star football players from around the state. They include us in their special weekend. She was asked to give a speech thanking the players and coaches as well as sponsors for including us. I will be very nervous for her. But it is a great life experience.

It has been a busy crazy week..
I have been playing with my NEW MIA BELLA BEAUTY MAKEUP OMG It is AWESOME I have been playing with the colors and what looks good on me... I don't feel like I have any makeup on.. I am LUVIN IT !!!!

Jordan's girlfriend (Kirstie's Dad Marv ) had his appendix burst last week. So it has been crazy at my house. They live about a hour away in a little town and our Hospital is where they brought him. And Marv had a horrific wreck on his motorcycle 2 years ago which left him paralyzed on one side and partial on the other side. So this is a big deal for him and the family. He is doing ok but may not get out of hospital till next week. So Kirstie and her little sister have been staying here.. And I have made food for them a couple of days..
So I made Enchilladas one night, Tonight I made Lasagna.. And I have no idea what else we had....
I haven't had time to read.. I hope all is well.. Hope to catch up this week.. ((HHHUUUGGGSSS)))

This Friday we did a small b-day party for our youngest son. Saturday and Sunday DH and I were gone to Cedar Point (without the kids) to celebrate our anniversary. For those of you who may not know what Cedar Point is, it's been voted the 1# amusement park in the world for 10 years in a row. Monday night I have classes again for the next 6 weeks. Today I worked and my legs are shot. I'm going to have to get those gel shoe inserts because my calves are hurting so bad from standing on the tile. I don't want to get anymore spider veins.
I like my new job a lot so far. I hope it always stays this way....wishful thinking.
Last night was soup with sandwiches and chicken-spinach-whole wheat wraps.
Tonight was breakfast food - Scrambled eggs, eggs over medium, sliced ham, ham-mushroom-cheese omelets, bagels, banana yogurt smoothies and banana-strawberry yogurt smoothies plus blueberry muffins.
Melissa when was you anniversary? How many years? Congratulations! How fun to go to Cedar Point without the kids.
We just celebrated our anniversary also. It was June 9th. This year was #25! We didn't do much. We are taking a trip without the kids in October with friends to celebrate.
Tonight was stir fry with steamed rice. It was very yummy. One of the local specialty stores that has great produce, marks down stuff on Tuesday mornings I have discovered. They mark it really cheap! I am getting raspberries and blackberries marked down to 0.79 cents. So stir fry depends on what was on clearance. LOL.
Kay I hope things continue to improve with Kristie's dad. Are you going camping this year over July 4th?

I was nice tonight. Brooke went to stay with a friend. So Mike and I curled up in bed to watch a movie (Gran Torino which we got him for father's Day).. I had things I should have been doing but decided snuggling was more important..The movie was pretty dang good..
So tonight Jord decided he wanted to make homemade mac and cheese.. Well let's just say it was REAL CHEESEY.. And then he had gotten a container of premade BBQ Beef for sandwiches..
For Father's Day I was going to make beer butt chicken, but decided it was to dang hot outside to do on grill so put it in crockpot. Had it with homemade potato salad and homemade mac salad..Brooke had cheesy mashed potatoes
Sat was BBQ country pork ribs with homemade potato salad.

So we did eat LOL
