Last night we had grilled ham sandwiches after 6 parades.

Kay--we have Christmas parades in Dec.

I take my kids to them. They love it even though it's cold. We bundled up well enough that we didn't get too cold. My aunt use to take us to them all. She still goes. We rode in the last parade with the animal welfare society. We had fun and got a lot of candy.

Tonight is sandwiches, potato salad, macaroni salad and deviled eggs. I threw a surprise 24th b-day party for my fiance yesterday and we have a looooot of leftover food...and also a lot of leftover cake. That's what I get for making a 3 tier cake for 12 people!

i think everyone kind of forgot about dinner last night. we ended up eating at like 10! we had chipotle....
salad bowl w/ chicken, white rice, pinto beans, fresh salsa, sour cream, and cheese.

i tried making cake balls yesterday but it came out really sticky and kind of pasty. i think its because i added pineapple but anyway - the idea sounded good but it didn't end up that great. oh well.

kay - yeah, i'm 21 but i felt old because it was a disney channel song and all the kids in the audience were like under 14 so in comparison.....yes, i'm old. icon_lol.gif

noreen - a 3 tier cake for 12 people!!! omg! you can send some left over cake to me though!

juju - you guys have 6 parades?!?! we only have one and i don't really understand why its in the beginning of december.

Hey, Y'all! Happy Sunday! icon_lol.gif

I ain't been worth a hoot today, y'all. I bet I ain't done three productive things the whole day! icon_redface.gif Have y'all ever had one of those days where you just didn't have the energy to move? Yeah. Well that was me, today.
Did the dishes twice (for Sunday brunch and dinner.) Did a load of laundry. Changed DS's bed. That's about it.

Dinner tonight was:

Chili mac Hamburger Helper
Salad w/ fresh ranch
Seasoned skillet potatoes
Water

Rum cake (omg---so good)

Ok the tree is up (not decorated) but hey it is up. Now I have a runny noses from unpacking the tree. My allergies always get me when I get something out that is stored for a year icon_cry.gificon_lol.gif Maybe thats why I dread putting the tree up icon_lol.gificon_lol.gif

So for supper I put Roast in crockpot for French Dips YUMMY

Knox dunce.gif You had a working vacation. You deserved the day to POWER LOUNGE thumbs_up.gif Sometimes aren't you glad Hamburger Helper was invented. Just for days like you had. And very busy days that you can't take the time to slave over the stove icon_lol.gif And Rum cake one of my favs my Grandma use to make for christmas. I found her recipe and plan on making it this year for Christmas thumbs_up.gif

mxpark Did you have a busy night last night?? I am going to try some more cake balls. My first ones were kind of mushy also. But still tasted great thumbs_up.gif that is all that counts

noreen Yum potato & mac salads I love them but I am the only on that eats them so I don't get them much

juju I guess we don't do them here. So I didn't think about it. That would be fun COLD but fun thumbs_up.gif Our homecoming one is always so cold I can't imagine one right now

They always do the Christmas parades on the first Saturday of December. They got snowed out this year and rescheduled for yesterday. I live in an area where I can get to a lot (approx 20) towns in one day. The times were 9am, 11am, 1pm, 2pm, 3:30pm and 6pm. There were more on this day too but scheduling conficts. We can't be in two places at once...lol. My kids got a ton of candy, a bear (one per child), and an apple and orange. Most of the candy will go to waste but they have fun.

Today we had Chicken Cordon Bleu(homemade), corn, green beans, and mashed potatoes. (Parade candy for dessert)

Chicken Cordon Bleu Recipe (all amounts are approximate I used what I had)

4 oz cream cheese
1 cup cooked Minute Rice
3 lbs Boneless Chicken breast, pounded to 1/4 in thickness
Swiss cheese
1 pkg shaved ham
1 egg, lightly beaten
16 Ritz crackers, crushed

Preheat oven to 400*F. Mix cream cheese and rice until well blended.

Place chicken breasts, top-sides down, on large cutting board. Top each with ham slices and rice mixture. The top with slice of swiss cheese. Starting at one of the short ends, tightly roll up each chicken breast. Dip in egg, then in cracker crumbs, turning to evenly coat each chicken breast. Place in greased 8-inch square baking dish.

Bake 35-40min or until chicken is cooked through.

***I didn't have shaved ham so I just cut up the ham I did have and mix in with rice. I also couldn't keep the rice mixture in the chicken if I rolled it in the egg and crackers. So I just brushed egg on top of the chicken in the pan and sprinkled with crackers. Like I said all amounts are just guesses. Sorry I'm one of those cooks that starts with a recipe and adds her own stuff to it....lol.

midnighsnack, a twinkie?? FANCY! Just kidding!

Knox: There's a stomach-bug going around so be careful and rest up, I hope it's just a fluke of a stomach twinge for you. DON'T GIVE IN TO THE TREE! UNITE WITH ME! at least till the kids beat you down and make you get one like mine are doing. I'm trying to hold out till sometime this weekend too!

Ohara: Mom just left with her cake balls. Chocolate with flaked coconut, chopped walnuts and raspberry flavored syrup. Chocolate with almond toffee flavoring and heath bits and yellow cake with hazelnut flavoring and mini-choc. chips all of them dipped in Ghiradelli dipping chocolate. Cake balls taste really good but I think the love affair between me and them are over, I'd rather have ice cream icon_razz.gif

Feeling a little better every day, I tried eating what I made the kids and it didn't sit well in the first bite so I had a cheese stick instead. OMG, midnight snack and I are in the same commercial! icon_eek.gif

We finished decorating the tree tonight. icon_lol.gif But still have to do the rest of the house. We decorated with the ornaments the kids made or special ornaments. Like the old ones my Grandma gave for my first tree. First year ornaments and such. Are tree is a tree of LOVE. My Mom has made several ornaments over the years. Recent ones are wooden ones they are so pretty but AAAGGGHHH No room on the tree. icon_cry.gif A few years ago I got a bigger artifcial tree because of the ornaments. So now we decorate the rest of the house with the wooden ones.

So tonight was a mac-n-cheese with smoked sausage, peas and carrots
mixed in it. Easy and the kids love it.

juju thank you for the recipe. I will definatly have to try it. I always tweek recipes and make them my own. I am also one the does approximate measuring as well. But not with my cakes and goodies.

Knox I hope you get to feeing well. We gotta laugh alittle at the table. I wouldn't have put it up but DD kept bugging me icon_cry.gif You already went shopping though.I wait till the last possible minute to get gifts. I leave for a little while and poor knox gets cooties! Have you been kissing boys? That'll do it!

It has been so busy here! We had to go to dh's dept party and I had to finish the cake (in my pics), get me ready, get the noodle ready and then he stayed up half the night! I think he ate something that just didn't sit right with him and he was up way too late! icon_sad.gif So we've been trying to catch up on sleep!

Can I join the demented group too? I used to work in nursing homes so I'm familiar with the rules! icon_lol.gif

Thanks guys now I'm going to have to make shrimp(one of my favs-mmmm) and mac n' cheese! (not all in the same meal though)

Last night:
Thai curry chicken with mixed veggies
jasmine rice

Tonight we had:

Pecan crusted talapia
seasoned cheese grits
spinach
and it true toddler fashion the noodle ate nothing! He would only drink his milk. At least over the course of a week he eats good.

I'll be good and get to the table more this week!

Dodi now what is wrong with shrimp and mac-n-cheese in the same meal??
