ROTFLMBO!! I was sitting here minding my own business reading this thread, when I came across this post. I was eating ramen noodles icon_lol.gificon_cry.gificon_lol.gificon_lol.gif & they were hanging out of my mouth cause I had some chewed. If you all could have seen me icon_confused.gif I was not ever going to tell you all was I was eating again cause I feel bad. icon_redface.gif

I would love for you all to come by & pick me up!! How cool would that be?? I have never tried Cuban food but I would LOVE to. I love new adventures in food. Just not by myself thumbsdown.gif

I did eat Indian by myself two weeks ago. Man it was awesome. thumbs_up.gif

I can cook, really, yes besides ramen noodles. I just dont like cooking for my self. Its a waste. So you all just let me know when your going to swing by here I am about 5 min from I-75. Can you all imagine the fun we would have??

If you want my recipe Monica I'll give it to you! Tara wants it too so I'm happy to share! Mine isn't as good as the really real stuff you can get in restaurants like in Tampa but I try! Mine is kind of semi-homemade (NOT like the hack Sandra Lee,but I digress...) I love Indian food and Thai too. When we lived in New Orleans we used to go to the best Indian and Thai places.

Here it is. You can make it 2 ways-a little healthier is to use boneless,skinless chicken breast or you can use chicken with the skin still on (not as good for you but so yummy and more authentic)
Preheat oven to 350
I start with Vigo yellow rice (for just me, dh and ds I use the small package but they have bigger packs,more family size). Place rice in baking dish that has good fitting lid. Add the water and olive oil indicated on the package. Then I add minced garlic (we love garlic so I add alot but you can add what you like), if I have time I chop onion and cook it till soft and add it to the mix, otherwise I use onion powder, some oregano, a little basil,a couple of bay leaves, mix and then add your chicken. I salt and pepper the chicken and sprinkle with a little Sazon Goya sin achiote (it's a seasoning packet) then I sprinkle the rest on the rice. Cover with the lid and for boneless chik I bake about 45 min for the chicken parts with bone about 1hr 45 min. When making it with the chick with skin the rice comes out wetter but that's ok! After it's done I like to add some frozen green peas and mix in and let set for about 5 min. The peas cook from the heat so you don't have to pre cook them.

For the beans I pretty much follow the recipe on the can of goya black beans. I don't really measure so I use amounts to my taste but here is the regular recipe:

2tbsp olive oil
1/2c onion finely chopped
1/4c green pepper chopped (if I have it I use it,if I don't it no biggie)
2 clove garlic minced
1 15.5oz can goya black beans,undrained
3/4c water (again, I don't measure but you'll figure out what you like)
1tsp oregano
1 packet of the Sazon Goya seasoning
1 tbsp cider vinegar
Cook onion, pepper and garlic in oil until tender. Stir in remaining ingredients. Bring to a boil, then reduce heat to simmer. Let it cook down at least 10 min or more depending on how thick you want it.

I usually put my rice down then the bl beans on top and my chicken on the side.

Make it just for you girl! Use the small pack of rice and two chicken breasts. It will be enough for 2 meals with a little left over!

went out to eat I had a rib eye sandwich on grille and buttered long roll and it was topped with onion strings. YUMMY! I could eat this all the time.. the rib eye was very soft and cooked perfet. ok, now I'm getting hungry again!

mmmm.. I have the allrecipes.com book.. I made Chicken Danielle. Chicken breast smothered in mushroom sauce placed on a bed of spaghetti noodles and green beans on the side..

We used to go to a restaurant in New Orleans called Zea's and they have this amazing side dish that is roasted corn grits and I found a recipe on-line that is supposed to be a copy-cat version. It turns out pretty good but not the same as the restaurant. You have to roast the corn on the grill and then make the corn grits with chick broth and heavy cream, some salt and pepper.
