That would be great! I know there is a way, but just haven't found anyone that has done it. There is still a few weeks of sweet corn season left and we are going to enjoy every bit of it!

Well tonight I am using left over cooked chicken for a chicken casserole.

Not sure if this will help tonight. But here is the recipe for anyone that wants it. Granted this is the first time I have made it but it sure sounds good. I will post the results after dinner!

2 Lbs. Frozen hashbrowns
2 10 3/4 oz cans cream of chicken soup
8 oz Sour cream
2 C Mild Cheddar cheese, shredded
1/2 C Onion
20 oz diced cooked chicken
2 C Mashed corn flakes
1/2 C Butter, melted

Comine ingredients, except 1/2 C or more cheese, cornflakes and butter.
Pour into 9 x 13 pan.
Add cornflakes and melted butter
Bake an hour @ 350 degrees
Sprinkle remaining cheese on top & return to oven for five minutes or until cheese melts on top

Just to update, the chicken casserole was great! I halved it for just the two of us and still have left overs for lunch today. 1/2 of the recipe fit perfect into a 2 qt casserole dish (think it is a 2 qt one)

That chicken recipe sounds really good! I think I'm going to try that one, and thanks for the recipe! icon_smile.gif

The lamb sounds really good, too.

I've never cooked or eaten lamb. Can someone tell me what it tastes like, texture? Anyone have any good ways of cooking it? What do you serve it with?

I'm not sure about dinner tonight!

Lamb is wonderful. To me it has the same texture as beef and a similar flavor just sooo much better! I usually serve it with mashed potatoes and a vegetable mix. Although I love it in Gyros the best!

Monica - what are sixlets?

Sixlets are these little round chocolate candy balls that have hard colored candy shells on them. The ones I had when I was akid came in a little sleeve, all lined up in a row. I loved them!

We are having loaded baked potato soup, salad, and italian bread tonight.

Tonight we're on our way out right now to chinese... I am thinking mongolian beef again, or maybe sweet and sour chicken... time will tell.

(Seriously, I don't care for chinese and I have been craving it for the last couple of weeks... what is up with that?)

I figured out what the silicone baking pans are for! My meatballs didn't come out so great... so I decided to 86 the meatballs and go with meatloaf instead. I used the stupid silicone pan. It works great for meatloaf. Comes right out. Bakes evenly. I am soo happy I figured it out. They arent for cake. They are for meatloaf! Just thought I would sure my Eureka moment!

Having some more grilled sirloins and herbed shrimp tonight! icon_lol.gif

Food City had 'em on special again--so I'm trying to get them stocked up in the freezer. I was pleasantly surprised to find the steaks had a wonderful flavor, and were not tough like sirloin usually is!
