Hope your weekend was good, it's nice and cool here, the way fall should be at last.
Ok,
So Friday we finished the rest of the Lasagna with a salad and fruit.
Saturday was portobello burgers, pasta salad and fruit
Tonight Chicken Parm, roasted red potatoes, rigatoni with vodka sauce mixed with ricotti and mozz, and a salad,
Impossibly easy pumpkin cheesecake for dessert.

It cooled down here also. It is raining as well... So tonight was chili night...
Late Last night I made steak, cheesy tator tots, and green beans for DH and I.. But earlier in the late afternoon I made grilled cheese sandwiches for DD and DH... Then she went to a friends house to watch the game and snacked over there..
Melissa I hope you get your homework all done..
And we had zasanga last week so we are good for awhile on that... LOL We ate leftovers forever..
I bought a roast on sale so I will be making my French Dips SOON I been craving them YUM Melissa you craving them now LOL
I didn't read back to far... My back is hurting when I sit at the computer.. It always does when the weather changes so fast.. From 90's to 60's in a day I get real achy.

I didnt have to cook last night DH made chicken enchalidias and sauted squash.
Tonight I belive I am going to make Polish sausage and cabbage. Not sure we will see. The kids would want spinach over cabbage.

dinner is a chicken rolade stuffed with sundried tomato pesto and montery jack cheese, honey glazed carrots, salad with tomato and crescent rolls
Kay-Got all of my papers done and was in bed by 12:35am, not to shabby! I have my interview for the scholarship tomorrow--I'm so nervous!!! I meeting with 3 chefs that are all excellent in the area. I just hope I don't make a fool out of myself.
Tonight I made a new recipe. It was yummy and I could eat it as it was healthy. I made tamale pie. DH liked it and picky eater DD ate it and had more
. So I will be making it again.

Please pray for my DH, his close cousin shot himself Friday and my DH has almost had 2 nervous breakdowns. Going today to try to get the oil message that the cousin left on the garage floor. His only message left was a "I'm sorry" wrote in oil. I am really good about getting oil out of concrete so I agreed to help get it out.
We haven't really eaten since Friday. Kids have been staying at my mom's. Too much for them to handle to see Daddy break down.
Hope you all have a wonderful day. And please remember (I know I probably don't need to say this to any of you) that NOTHING is soo bad that you feel you need to end your precious life.

That is such a horrible thing to happen.
Well the interview for the scholarship could have went a lot better. They just couldn't see culinary education tying in with special needs education. I think they just really wanted me out of there to move on to the next applicant that might be worthwhile. Oh well, if it's meant to be it's meant to be, if not then it's not.
Melissa, I love your attitude. Your right, if it's meant to be it will be.( I said a little prayer anyway

Last night we did projects around the house, so dinner was a little late. We had left overs. DD ate early and had left over mac n cheese with tuna in it.
DH had beef and noodles with mashed potatoes, and I had a turkey burger with smashed cauliflower( mine wasn't left over I made it just for last night.)
I hope every one has a great day. It is finally cool here. I do like it warm, just not 90.

Well this is a short stop at the dinner table tonight, the next 4-5 weeks will be very hectic, so you won't see me as much but I will try to sit down at least once a week. I received two more orders for the next two weeks, on top of getting ready for the state competition for school, and my projects at work are getting to a hectic pace. I also went in to my annual appointment two weeks ago and I got a call on monday that I have to go in for more test, my test came back abnormal-They couldn't get me in until next week and then I have to wait another week for the test results... let me tell you I am going crazy after only two days, I dont' know if I can make it two weeks ![]()
But for dinner tonight was a hot dog, chips, and a snapple... yummy gas station food since I had another class tonight. Next week is only one class so I might get some more sleep then. We have been eating out way to much since we have been running every direction, but I am hoping next week to get to cook a few meals.

Checking in real fast before I go to bed..It is 38 here VERY COLD I got my warm jammies on and still shivering... But I don't want to turn the heat on yet....
I made French dips tonight for DH and I ..For when he gets home.. It should warm me up pretty good..
Ok gotta go I baked 2 cakes for this weekend and sewed on a quilt tonight and I am wiped out..

I feel great but the dr said they bone in my neck is not growing together like it should. So now I have to wear a bone stimulizer for 4 hrs a day. Atleast I get to take off the neck brace for a short period of time. HEHEHE
I am still working on getting the strength to hold a pastery bag and work with it. I am losing orders but the attorney said to keep track of it and the guy who hit us would eventually have to pay for the loss of income.

I missed my first day of class today, my MIL was in a car accident and I went to go pick her up and stay with her for a few hours. She's in her mid 60's and has never been in a car accident. She's also from Poland so even though she knows English well, she had a hard time understanding everything that was being told to her. My FIL passed away a little over a year ago and never let her do any of the paper work so even though she's been paying for car insurance she doesn't know if it's liability or full coverage. She doesn't even understand the difference. I tried explaining it all to her but she was just to shaken up. Not sure if the car is fixable yet or if it will be considered totaled. Her airbags went off and usually that's a sign that they will lean towards a car being totaled instead of fixing it. I feel so bad for her. 6 windows in her house need to get replaced. The glass is practically falling out and now this. She doesn't hardly have any money either. But she is okay and walked away from the car accident so she is still very lucky.
Tonight will be bagels with eggs and cheese and cereal for the kids and DH and I will have left over stuffed shells pasta from last night.

Last night was a doozy.. I h ad 100 cupcakes ( and could only find a 12 and a 6 tin set so took FOREVER) , 2 1/2 sheet cakes ( one which trying to allow my kids a chance to see what moms doing.. greeze the pan .... well it stayed mostly in the pan so technically I had to make 3 1/2 sheets). I started at 11 am and did not finish till 3 am. I was dog tired. So kids had Wendys DH did too. I squeezed a turkey sandwich in there somewhere.
Today is DS # 2 6th birthday so I best get going and make his fave dinner.. which I am almost sure is going to be chicken nuggest and FFs..

Melissa sorry to hear that your MIL had a wreck but glad she is at least ok!! do you all have some kind of state help for elderly people who need home repair? Call your local or her local government

Today I am attempting to make French Dip ..... The recipe I had called for 5 pds of RUMP ROAST...cost me 17.00!!!!!! Better be good GRRRRR lol.... Anyways...I am working on 2 cakes this weekend...one I am really excited about but won't tell cause I haven't done one like this before and the other is a CCC made for Bus Drivers appreciation week on Monday.
I also have a problem...does anybody know where I can get plus size 5 year old's clothes? I have a 5 year old in a size 9 jean and I'm sooo tired of cutting the things off....she was my big baby...almost 12 pds
....but she is as tall as a kid getting ready to turn 7 and I am having SOOO much trouble with clothes and I hate to just stick her in sweat suits ![]()

Tonight was vegetable ham soup, cinnamon baked apples, broccholi with cheese sauce, baked potatoes and cornbread.
I'll have to look around for aid for her, she doesn't understand the process of trying to get help so I'll check everything out for her. Didn't even think about that Christi--Thanks!!!!

Just a quick stop by the table.. I have 2 cakes this weekend and several for the next 3 weeks.. I have alot of nieces and nephews with B-Days this month as well as my DD... And plus I have 3 other cakes for 2 other people this month also... I am going to try baking some up and freezing ahead so I don't have them all at once..
I also found a craft consignment shop.. And I am getting some of my crafts ready to take there. They are also going to consign the candles I sell.. I am so excited about it since Christmas is coming up and I could make some extra money YYYAAAHH
Hey Christi I was going to post you my recipe but I didn't get back to the computer soon enough. If You didn't see it when I posted before.. It is so easy 1 4lb roast trim the fat, put in crockpot,dump in a can of beef broth, a can of Cambell's French oion soup, and a can of beer. Cook in crockpot on low for 7 hrs.. And the juices are there for the dipping.. They are so yummy and addicting.. I know a few people have done it without the beer and substituded pork roast for the beef. They said it still turned out AWESOME.. I am sorry I didn't post it earlier. I got this recipe from allrecipes.com

Homemade Vegan Pizza - made the crust, vegan melty cheese, soy sausage & soy pepperoni, lots of veggies. lots of spices.
Salad : romain lettuce, cranberries, cashews, Lime (vegan) jerky and Homemade asian dressing.
This may not sound appetizing to most people- but it was INSANE! I've been vegan for 11 years and actually remember eating meat/ dairy, etc. This pizza was the TOPS!
