Tonight will be DH's fav meal : Salmon croquettes with a dill sauce, creek fries and homemade butter rolls. Kids made cupcakes for dessert for the next few days lol.

Well, just back from a great trip to Salem, Ma. for bewitching time.
For all that are not familiar with New England, Salem is know this time of year for the haunted happenings. Salem, of course being the city of the witch hysteria in the 1600's. We go every year for a extended weekend stay. It was great fun and nice weather, but cold, right on the ocean, so that wind coming off the water was cold. If anyone ever gets to visit that area, I highly recommend it, not only for the haunted happenings, but the history. It is the home of the House of Seven Gables and many other historic sights, a very typical old New England seacoast town. Very beautiful.
That being said, I haven't cooked in days lots of seafood and such, by such I mean things not necessarily great for you!

Tonight was sauted chicken chunks seasones with tuscany herbs over a buttered baked potato with italian cheese melted on top, green beans with salt, a lil' butter and cracked black pepper, homemade applesauce, italian bread and cherry pie.
My expedition is in the shop so life is difficult right now. I find out tomorrow if it's the engine or not. OH yeah, it only has 88,000 miles on it

I was rejected for the scholarship but I knew that just by how bad the interview went
This may sound bad but it doesn't even really bother me.
This week is going to be a rough one for our culinary class. Something really bad must have happend because our chef cancelled classes this week except for Friday. Friday is the first day we open Cusine 1300, our fine dining on campus restaurant that the students run. We will have no prep work done at all and our dishes are time consuming. I'm calling the Dean of the college tomorrow to see if us 2nd year students can at least get some prep work done. This restaurant is a BIG deal on campus and the president of the college eats there everyday as well as other heads of the college, and those in the community. It's by reservation only and we have been sold out for over 3 weeks for opening day. I'm so freaked out right now. I've been calling people in class and telling them to get their at 7:45 am on Friday to help 1st year students and do more prep instead of at 11:00 when we are suppose to be there. The other Chef has been out all this year due to surgeries due to Chroan's disease. Her next one is in January. We have a retired Chef who is trying to help out but doesn't really know what all we are suppose to do. Pray for us, we are going to need it!
Allrecipes is a great site for apple dishes and so is epicurious and recipezaar.
I just peel and slice my apples and put into a baking dish. I then put in a good amount of cinnamon and sugar and stir it around. I then put some butter chunks on top and bake it. Stirring every 10-15 minutes. You can have them covered or uncovered it's up to you. Once fork tender pull them out because they will continue to carry-over cook. These are great as a side dish, for dessert or over pancakes and waffles.
If you overbake just mash them up and make cinnamon applesauce.

hugs hi guys =) feeling a bit under the weather so handed the husband the phone when he walked in the door and told him it was his night to * cook * and so he ordered pizzia and I went to bed .... I made a cake that I hated today was suppose to be a cute hat box but was my first time using Satin Ice and I am not so sure i really like the black it kept pulling part on me /shrugs oh well.

As for the baked apple its a whole apple cored stuffed with cinimmon brown sugar and butter ( peeled too) in a small water bath and baked at the end you glaze it with more butter and sugar and spices.
I also made a homemade pumpkin pie from the umm LEFTOVERS from our poor pathetic hack o lante ( that what he looks like ) 4 kids with pumpkin knives can do massive dmg . but I got the seeds mmmmm and pie !!! ( my best friend called it a device to eat whipped cream with lol)

Hello table friends.
I have been crazy busy.(which one of us isn't) I had a baby shower on Saturday for a friend, and I made the cake. I will post the picture at a later time. I was also in charge of a members reception at church Sunday evening. My girlfriend and I did, bbq meatballs, buffalo chicken, sausage cheese balls, veggie tray and a spinach dip, a cheese and prosciutto rolled and sliced. We also had pumpkin cake and pecan tarts.(I cheated, we used already made for that many people). DD also went to 5th grade camp this week and had to be packed Sunday afternoon, so she and her daddy could have her stuff at the school while I was at the church.
I am missing my baby while shes away at camp. Today is her birthday and I am sad without her
. She comes home tomorrow afternoon. We will celebrate her birthday on Sunday when the family is all together. That's a special day as well, because she came to us from the hospital when she was 4 days old. So I celebrate both days, the day of her birth and the first day I held my angel.

Everything seems to be calming down here. The Cuisine 1300 is not opening on Friday but more than likely on Monday. I just hope that the chef is ok and nothing to horrible happened.
My expedition isn't making that noise anymore--go figure it quit once they go to check it at the shop. I didn't get charged though and they were really helpful at the Ford dealership.

Ok tonight I decided on cheesy scalloped potates with ham and carrots.. Ok But I cheated and used boxed cheesy tators, but diced up baby carrots and some pre diced ham and stuck it in the oven while I was running around. Now trying to figure out what to make for DH when he gets off work??

Hi everyone!!! Tonight is chili, but I make mine with cubed meat instead of ground meat. I normally use angus stew meat but I accidently thawed out boneless beef ribs instead. So that's what we are having around 4:30 today with sauted green beans with butter-cracked black pepper and a lil' salt with a lil' garlic powder. After we are done we are heading to the pumpkin farm with the kids. They are having a pre-school get together there and the whole family can go. So we will be eating there later at night also. They are providing pizza, juice, donuts and apple cider. (probably around 7:00-- so we are having 2 dinners
) I just hope it just doesn't rain during the hay ride ![]()

We planned on going to a farm that has a restaurant and hayrides to the pumpkin patch but dh and I have been so busy on the weekends and even on the weekdays that we just can't get away...so it might be wal mart pumpkins and face paint this year
