Yep, shortage of a lot of nuts like pecans too in the south. My family is in Kentucky, Alabama and Tennessee (and lots of other states) They are feeling the pinch. A lot of beef farmers are selling off their herds since the price of feed has more than doubled.

Where I'm at we have tons of pumpkins though. I hope it rains soon down in those southern states.

Thanks for the welcome guys.

Last night we had Gypsy Chicken, which is one of those dishes you do with a BBQ chicken. It takes longer to cook the rice than it does to make this dish. Everyone likes it.

My son is doing his Higher School Certificate, that's his last year of school before he goes to Uni or the big wide world of work. It's rather tense at the moment here. His 1st exam was yesterday, Engineering a very heavy topic. Today is English. That is also the reason I'm not on the computer much, he's more important at the moment.

Christi - Can't believe you've never had lamb chops icon_surprised.gif , spring lamb (that's what season we're in is yummy, can be a bit fatty though. 2 minute noodles are a packet noodle that takes, you guessed it, 2 minutes to cook and it has a flavouring sachet with it. I'm sure you have something like it.

Oh and I agree with Barb saying a lot of these great Aussie recipes and making them are two different things icon_lol.gif

Tonight I made beef stroganoff with noodles, peas, and cottage cheese.
I had peas cottage cheese and a cup of noodles. Not a great dinner for me, very little protein. I am still hungry tonight. Maybe I'll have hot tea.

Melissa...just to tired to fix something different for myself tonight. Funny you would say fried chicken, it's my favorite. But if your bringing chicken you have to make mashed potatoes and creamy chicken gravy to go with it. Oh yeah and could you make angel biscuits too please. ( You don't think I've been thinking about food lately do you? icon_wink.gif )

Sauted w/ garlic & curry- chickpeas, zucchini, peppers, carrots, white beans. Brown Rice.

I cannot wait until Pizza day---- Saturday!

I made spaghetti for supper .. Fast and easy LOL I was working on cakes..

Ohara how are doing with the weight loss?? But you do need to eat better LOL I for one can't stand cottage cheese unless it is in lasagna YUCK


Sparkle your gypsy chicken sounds yummy Can you share your recipe??

Melissa while you are making fried chicken with all the fixin count me in.. You are going to make a huge road trip aren't you LOL

I don't know if we are having a shortage on pumpkins here or not. But I need to get my butt in gear and get one for DD since it is her fav holiday... Her B-day is the 28th so she thinks it is her holiday and only hers LOL

Good Morning all--

Hope everyone is doing well today, going to be rainy here all day, I have to work anyway!

MKolmar-the vet visit went well, if you're not the Vet or her assistants, Cookie is not very cooperative, you can here him growling a mile away when he gets in the waiting room! I feel sorry for him though, he's been through alot ,with a major operation and all. This was just a tyroid test to maintain his doseage of meds. You would think it was the end of the world!

Last night was Roast Beef Hash and biscuits and fruit.

Have to run, I hope everyone has a great day.

Well last night was KFC. We went to my BF's Sister's house and his dad brought us a large array of KFC to make our own bowls. I think something was bad in it though b/c me, my BF, and his sister were all feeling sick last night and I am still not feeling well today. But then we got to watch home movies of their family, oh my was that fun seeing everyone so young! (After it was over I was thanking the lord my parents never had a camcorder, the pictures are bad enough!)

Tonight I am not sure, I have a cake to bake/decorate tonight for tomorrow, we are also having both of BF's nephews over, and I also need to get ready to go camping tomorrow. The local Drive in is having a special Halloween night, showing 4 horror movies, and we get to camp out at the drive in! I can't wait, I just hope a lot of our friends can make it. So I really am not sure what tonight and tomorrow hold for dinner

Tonight the kids are having tomato soup with whole wheat goldfish crackers and whole wheat pretzels.
Dh and I will both have chili again with cheese sprinkled on top. His might be in a bread bowl though.

Hey guys,

Last night I went to a committee meeting (cake decorating) and whoever's place it is usually the President they supply dinner with contributions from anyone that wants to bring something. Usually we have cold chicken, salad, potato bake and pasta salad. Of course we have dessert and that varies from yummy to extra yummy oh and fruit cause everyone is always on a diet icon_lol.gif .

Kay you asked for the recipe for Gypsy Chicken, here we go:-
1 BBQ chicken, meat removed and chopped. Fry 4-5 rashers on bacon till crisp, take out. Saute a chopped onion, 1 green capsicum, 250g (1/2lb) mushrooms in 1-2 tablespoons of oil. Add bacon, chicken, and 2 1/2 teaspoons paprika. Mix well. Add 300ml (just over a cup) of milk mixed with a dessertspoon cornflour (cornstarch) and 1 1/2 tablspoons white vinegar. Add 300 ml sour cream mix through. Do not allow to boil.
Serve with rice.
You guys still use Imperial measurements right? So I gave you both. Though you don't have to be precise. Enjoy

Can someone tell me what "biscuits" are when you have them for dinner. Here they're sweet and we usually just have them for morning or arvo tea.

Sparklepop...biscuits are a small round bread leavened with baking-powder or soda, sometimes with yeast. The angel biscuits I mentioned have yeast and are lighter than a regular biscuit.

I have a friend here who is from Australia. She taught me to make lamingtons. They are one of my families favorites.
Can you explain 4-5 rashers of bacon. Is that 12-15 slices of bacon?


Tonight I made panini sandwich's. The family all had italian meats on theirs with provolone cheese. I had turkey. They were really good. I made them on assiago cheese bread. It grilled up very nice. They all had chips with theirs, and I had grapes.

leily ..have a great time at the drive in. It sounds like so much fun.

Christi...you will do great on you cake. YOU CAN DO IT!!! Can't wait to see the picture.

Thumperbunny...I love Sonic. We just got one here in Columbus. I love their drinks(really it's the ice icon_wink.gif )

Kay...I am doing ok with the diet. I have lost 24lbs as of today. I am still working on losing more. I wanted to lose 30lbs before DH and I take our cruise, not sure if I will make it as I've only got 2 more weeks. Good news is ONLY 2 more weeks till we go on our cruise.

Tynie...I love pizza....I am craving it as I type.

Hi all,
Tonight we had some lamb stew, fish curry, green beans and rice. For dessert, the balance of the broken cake from earlier in the week warmed up and served with a dollop of clotted cream!!! YUMMY!!!!

Christi - glass noodles are made from ground mung beans. You can get them from asian grocers. You have to soak them in a bowl of cold water and then toss them into the dish you are cooking. They become transparent when cooked - hence the name glass noodles. The mince pork recipe : Saute 2 finely chopped garlic and then stir fry 500g of minced pork (or chicken). Add in cubed carrots, red and green capsicum and peas. Season with a little soy sauce and pepper. Add some chicken stock and simmer till meat is cooked and vegetables are tender. Toss in the glass noodles and warm through. Serve hot with rice.

Ohara - capsicums, that we're talking about, can be eaten raw or cooked, they are not spicy. They can vary in colour from green, red, orange and yellow. All have a slightly different flavour.
When we buy bacon the slices are called rashers here, didn't occur to me it would be different over there icon_redface.gif . So 4-5 rashers/slices of bacon.
What's a panini sandwich is it a toasted sandwich? It's quite amazing the different foods we have, what a great learning curve thumbs_up.gif

Last night we had a BBQ, steak, sausages, tomatoes, onion and potato wedges.

YES, today was homemade Pizza day.... whoooopieeeeee!!! princess.gif

Mine is with a Rice crust because I haven't had bread in 5 1/2 months... I'm doing the Fat Smash diet and sticking to it 'cause I'm not really deprived of anything- (except I gave up bread, white potatos for the time being.... - which I thought would be IMPOSSIBLE) 30 lbs down, 10 to go... icon_rolleyes.gif
Why are the last 10lbs always a killer...??? icon_cry.gif

Well ladies, let me tell you I ate very well tonight and unfortunately also probably ate too much! icon_cry.gif We went out for dinner to celebrate my in-laws 50th wedding anniversary and had a Chinese banquet. We had -
Scallops with asparagus
Minced pork rolls
Sauted chicken in a yam
Marinated beef
Crispy fried chicken
Grilled pork with five spice
Chinese broccolli with oyster sauce
Noodles

Yummy!!!

OHara - In America, I think capsicums are called bell peppers. I don't find them spicy at all. Some, like the red ones can be quite sweet.

Haven't eaten for a while and Im starving...BUT to make matters worse.....DH car wouldn't start this morning....have 2 cakes to deliver and I am going through SOOOO much stress (DH took my van!!!)

Hi everyone-

Just jumping in really quick to say hi.
Beautiful day in our area today, so good chance to get some things done.

Ohara-I do make my own hash. Shredded roast beef, potatoes, carrots, onion, ritz crackers, evap. milk , oregano and worchester sauce. Nice fallish meal.

My cat cookie is a very young 13, he just doesnt like to go to the vet or be bothered when he doesn't want to be! He's a real dickens sometimes!
Just received the results from the vet and his kidney and liver functions are great, and his tyroid level is right where she wants it, great news!

Let's see, Friday night was homemade chicken pizzas.
Last night, went to a diner, had chicken noodle soup which was great, and a french dip, which was not so great, oh well, can't always win!

Wish I had more time to chat but I have to study.
Tonight was mac n' cheese for 3 of my kids and the other one had grilled cheese. DH (and my mom since she stopped over) both had baked potatoes topped with chili and cheese. I had a bowl of rice crispies cereal.

Last night was our annual family halloween party for the kids. There was corndog casserole, crackers with veggies and spinach dip, chicken and dumplings, pinto beans, cornbread, chips, hot dogs, chocolate dipped strawberries and dipped marachino cherries, pumpkin cream pie, popcorn balls and brownies topped with frosting-m&m's and cut up snickers bars (I called these the diabetic coma brownies that my cousin makes)
And of course we passed out candy so I have a lot of it at my house now.

Ok guys I am wiped out... And it was only week one of 2 weeks from HELL-O I was so tired today I POWER LOUNGED TO THE MAX.. I was going to get a jump on the cakes for this week. And no that didn't happen I laid down on the couch to watch the Nascar race with DH. I was going to work on things over commercials... BBBUUUUTTT I fell asleep.. icon_cry.gif So I am trying to get things done tonight. But I am still tired icon_cry.gif

Ok what I made in the last few days..

Friday Broiled Steak, Fried potatoes,corn
Sat Diced up leftover steak, carrots,celery, and mushrooms tossed with ramen noodles for DH And for me diced up steak,carrots,celery,onion tossed with ramen noodles.
Sun.. MY LAZY DAY frozen fish with cheesy tots and I am going to make sandwiches for DH when he gets home it the morning


sparkle and barb I also was wondering about the capsicums and the rashers.. The capsicums I thought would be peppers... I think I heard it on Food Network But the rashers I was more puzzled over.. I told you guys this would be a great thread to be in on.. I am so glad you guys joined us.. icon_biggrin.gif We can learn so much from you guys thumbs_up.gificon_biggrin.gif

Sorry I gotta run and take cupcakes out of the oven..

Hey guys,

Tonight we had Spag Bol (spaghetti bolognaise) and garlic bread.

I'm looking forward to hearing what you guys have at Halloween, as it's not big here. Though we still get a few kids at the door after some treats so I have to do a made search through the cupboard. Love the sound of the "diabetic coma brownies" icon_lol.gif . Oh and pumpkin pie sounds very interesting.

Glad you filled Barb and myself in on this forum Kay never really looked at it before icon_biggrin.gif . Even though I'm jealous of the yummy sounding chinese banquet she had.

Howdy Ya'll!!!!

Tonight was breaded chicken with corn and honey glazed carrots.
DH has his meal waiting for him in the fridge for when he gets home from work. He has breaded chicken stuffed with sundried tomatoes and montery jack cheese, corn, honey glazed carrots, fresh pineapple that I've have soaking in a coconut-rum and white chocolate dipped strawberries.
I must be craving salt because I actually ate potato chips icon_eek.gif I almost never eat potato chips!

Kay--slow down girl!
Sparkle--Halloween is HUGE here in the US. I only take my kids to a few houses because they don't need all of that candy. However, between the four of them we always have bags full. Every year I ration the candy out and usually throw out some just to get rid of it. My DH has already been "Candy Taxing" the kids candy from the family halloween party. I've caught him eating more than a few treats already.

Have to go get the wee ones ready for bed now--Have a great night everyone!

Tonight I made sub sandwiches. We have been working on rebuilding the wood enclosure of our hot tub for the last 3 days. The wood cabinet basically just rotted. We get full sun on our back deck (where the hot tub is) for 8 hours a day in the summer. All that sun just destroyed the wood. I wish we were done. I was working on sealing the new wood and it started to rain icon_cry.gif
I will finish sealing it on Wednesday, as it's going to rain all day tomorrow.
So, it was just sandwiches since I was to busy to cook.

Kay...glad you got to power lounge. You deserve it.

Mkolmar..."candy tax" thats funny! My DH keeps our daughter "safe" by eating all the snickers bars as they have peanuts in them and she can't have them.

Sparklepop... On Halloween we will pass out candy bars and DH will light a fire in the portable fire place out front of the house so the kids and their parents can warm up. It is usually cold by then. After I take out little girl out door to door we will cook hot dogs and toast marshmallows over the fire. My daughter is going dressed as Belle from Beauty and the Beast.

Christi...how did the cake turn out?

barbarak...your celebration sounds great. What a special thing to celebrate 50 years together.

Welcome all the newbies I may have missed....

Tonight I made Tuna noodle casserole but had to use mac noodles instead it turned out ok.. I haven't made it in a few years.. DD isn't really a noodle person and it proved true again tonight when she said this is YUCKY.. But DS and DH had seconds .... Can't please everybody all the time LOL Her B-Day is this next weekend so she gets to choose her meal so it all works out LOL

Ok off to do the dishes GGRRRRR
