When Do I Put The Stick In The Cookie?

I'd like to try a cookie bouquet, but not sure on when to put the stick in the cookie. Also, is the paper type that is used for choclate lollipops ok for that? Anyone have any suggestions? Thanks!!

There are a couple of ways to add the stick. I prefer to put it in the cookie before it bakes. Cut the cookies slightly thicker than the sticks you use (yes the paper ones are fine) cut out the cookies and arrange them on the baking sheet, then insert the stick to about mid-point in the cookie. Let them cool completely, before you try to handle them by the sticks.

Some decorators 'glue' the stick to the back of the cookie using melted chocolate or candy melts.

I prefer to insert my cookie sticks immediately after I pull them from the oven, while they are still VERY hot! You should try it several ways....some insert before they bake, others after, some use melted chocolate to attach them....and I've ready where one person actually hot-glues the sticks to the cookie BAG and when she ties the bag at the bottom that is what holds the cookie in place! Do what works best for you....and as others have stated, don't mess with them until they are completely cooled! If you must move them, use a large spatula and pick up the cookie, not the stick!

I am very new to all this and just made a batch of Penny's cookies. They turned out really well. They are crisp around the edge and a bit softer towards the middle.

I inserted the sticks the minute they left the oven and I found it to be way more simple than doing them when the cookie is raw. Inserting the stick when they come straight out of the oven is very simple and doesnt change the shape of the cookie in anyway.

I also noticed that you are less likely to have to do any patching up or even go through the cookie when it is cooked as it is a little bigger when it is baked.

I also noticed that (for me anyway) the cookie stick was much sturdier than when I made a batch where I put the stick in while the cookie was uncooked!
