Yay Alex!!!! She was on facebook earlier, so I was hoping everything had gone well, but I had to walk out the door to get my kiddos from school.

Now it's time for Alex to rest up & get recovered so he can go party for his b-day!

Hey Chass I'm there! And of course with all of us being close family members and Aunties to her sweet boys ..for us everything we want to taste test is on the house!

Hubby said he'd fly us out! We have a four seater. I think her opening is on July 4th though. Did I see that right? Would be fine with me but you probably want to be with your kiddies Chass. And of course the weather has to be good. It would be about an hour and a half flight.

What kind of a shop did she decide on?

I practiced the rosebuds last night! It took about 20 of them before I got one I liked! I just don't like buttercream flower making! icon_mad.gif

I have never done a bc rose Grandma, I'm afraid to! I did try some with fondant to put on a cupcake, they were mini, I think you can see 1 in the pic of my hubbys cake. Sad thing is, I didnt want to go to Mangelson's to get more fondant, so I bought a big box of airheads & tootsie rolls, I was going to use those to make some. For the life of me I couldnt do it with that, but here comes my 9 yr old with 2 dozen beautiful perfect airhead roses.

I just made some red, white & blue cupcakes for my mom to take to work, a little early for Memorial Day, but I was bored & needed a couple more dozen for her employees, I sent some in last week, about 40 of them, and they got really mad when they ran out, and 1 guy thought the velvatop icing was so good he LICKED it out of my cupcake courier, I was so grossed out when she told me that.

Yup Grandma, I think I actually like it better then bettercreme, but sssshhhhhhhh don't let the Bettercreme Queen find out, lol.

Hey Chass does that velvatop color the same way that bettercreme does ? Bettercreme does not color very dark like buttercream.
Yes Mel did post that her shop opening was the week of July 4th!
GrandmaG, Im sure that with lots of practice you can whip those beautiful flower buds out with no problem!

Fiddle has all the hundreds of recipes, and one of us can answer any question you have, I wish I had started printing it all off at the begining! I tried printing it a couple of months ago, and it was well over 200 pages, lol, so I didnt icon_smile.gif

On these sheet cakes I'm making to put the little rose buds on. It is a red velvet but she doesn't want cream cheese frosting. icon_confused.gif Any suggestions? I was thinking of using Bettercreme and sneak a box of cheesecake jello in it. Do you think she'd notice?

Nope, the cheesecake pudding would probably help. I would ask her if you could do a "cream cheese enhansed buttercream" or something. An icing with mostly butter/crisco but part cream cheese (less than half), too. Like a compromise? It'd probably be easier to decorate with, too. Just an idea. If not, try the cheesecake bettercreme or load up your buttercream with butter flavoring.

I think Indydebi's bc would taste really good on a red velvet cake. I'm going to use it on some butter pecan cupcakes next week.

mango filling? I made a mango filling last week by cooking down mango nectar with an egg yolk and cornstarch. That worked wonderfully.

It's me! I'm Carrie. LOL! Had trouble signing on tonight. I've been AWOL for awhile, sorry, but yes...I need a mango filling recipe!

The cake has to sit out overnight, so I need a shelf-stable filling. I'm "winging" the mango cake itself (using my white cake recipe with added mango puree and a bit of rum extract), but have never attempted a fruit filling. HELP!

Another update...so far the bleeding has tapered off in the pregnancy. I hit 12 week mark late last week and have an appointment next week. Provided there is still a heartbeat, then everything should be in the clear.

Everything I see says you have to refrigerate the mango filling. Can you find a grocery store that sells it in the sleeve? They are shelf stable.

Hall, I think I found some ideas for you! Here is a link that talks about raspberry filling but you could sub your mangoes. Also, could you find Mango jam? That would work whipped up in buttercream or bettercreme.

Have you tried the big Hyvee store on Hamilton Blvd or the Walmart in South Sioux City. They both carry alot of stuff the others don't. hth
