Another update on those cuppys. I wanted to see how the center will be once the cuppy has cooled. It is still gooey like a molten center cupcake. Next time I'll use this concept and make a truffle out of cream cheese and chocolate and freeze it and drop in the cuppy just before baking. I want to see how that works.

Grandma,
Don't know if it is this recipe or my replacing half the butter with oil made a difference, cuppy is very moist. The only thing I did was instead of measuring oil in glass measuring cup, used the dry measuring cup so that I am putting a little less than 1/2 of it. Maybe you can try a butter recipe by doing this and see if it works.

I had to get the shoebox type & mark them indivually because my 3 kids would take all my cutters & use them for play-doh. I finally caved & got them the wilton 101 piece cookie cutter kit, and now they finally leave mine alone! (that and my 2 yr old cant get the shoebox containers opened, lol)

My mom & rest of family doesnt care for butter cakes, so I'll prolly use oil in place of that also, But now I definitely have to squeeze that in this week sometime, I love cupcakes with a molten middle!

About MMF - one batch is 16 oz bag of MM for just about every recipe I've seen. Although I know that there are new 10oz bags of marshmallows, 16 oz would probably be best because you're getting more fondant for the same amount of work.
Sometimes I use my mixer, others I don't. If I'm going to use the fondant right then I'll just kneed it all in by hand. I find that when I do use my mixer, the amount of shortening is always off. I've always needed to add shortening directly to my fondant, not just with kneeding, but I know a lot of people don't. I guess I'm just weird.
Also, I keep mind in plastic baggies with the air sucked out, then piled in a tupperware. If it's older than a month, I throw it in the freezer. The ones in the freezer get pulled out when I need black. Mush all previous colors together, add black, and whalahh!

I made rootbeer float, Dr. Pepper and banana split cc's today and took them to my salon. The rootbeer floats seemed to be the top pick. A few liked the banana split but it is a lot of flavors going on in one mix. I made the ones from Vegan Cupcakes but I filled with strawberry Bettercreme. It just needed a strawberry flavor in there. I think I would do them different next time like a vanilla cc, for the ice cream flavor, and add all the other flavors with filling and toppings.

Oh, that sounds good. I've never even thought about banana split. Hum...I would do banana cake, cherry and chocolate fillings, maybe some nuts on top of the icing or something. Actually, I may have to try that!

This recipe was a banana cake and then you swirled chocolate pieces and pineapple jam through it before baking. I filled with strawberry Bettercreme and topped with Vanilla Bettercreme, nuts, and a cherry.

This was in holiday treat thread.
Weight Watchers Almond-Fudge Truffles - ebear
1/2 cup + 2 tbsp unsweetened cocoa powder
1/2 cup light cream cheese at room temp.
1/2 tsp almond extract
1 cup sifted confectioners sugar
Reserve 2 tbsp of the cocoa powder on a sheet of wax paper. In a food processeor or in a medium bowl with an electric mixer on high speed, blend the remaining 1/2 cup of cocoa powder, the confectioners sugar, cream cheese and almond extract.
Drop the cream cheese mixture by rounded teaspoons into reserved cocoa powder, making 24 truffles. Roll into balls and refridgerate until firm approx 1-2 hrs.
And for all of you counting calories..they are 45 cal each..1 gr fat, 1 gr Sat fat..

Now that I think of, macsmom's truffle filling can be used as a center too. Only thing is to freeze the rolled balls well before dropping them in the batter of the cuppy. I can't wait to try that next time.

SUMMER VACATION IS OFFICIALLY HERE!!! WOOHOO!!!!!!!!!!!!!!


I bought everything I need to try & make fondant on Friday, I'll need to figure it out by Monday, because my cake for Sunday depends on it. icon_smile.gif Nothin like waiting till last minute! It's for a surprise wedding shower. If I can do fondant, I was going to do a 2 tier fondant covered cake with a fondant apron draped down the side. IF I cant make fondant I'm going to do a 11x13 carved apron with fondant accents, and buy some berkels fondant. And I picked up my glycerin today, and got 2 40% off coupons for next week. and I still have a 50% off one for this week. I kinda want to get the candleholder cake stand, it'd be 20.00 then, does anyone have it? Like it/dont like it???

I can't wait to see, Chass! I love those coupons. I'm running to Michael's after dinner, I'm going to try adding tylose to fondant instead of mixing 50/50 gumpaste, so I can keep colors the same.

I couldn't find tylose powder at Michael's or Walmart! I could have sworn the Wilton makes it... any ideas on where I could find it? Does it even work that well? Maybe I could just kneed in some gum-tex?

Ive got mint cupcakes in the oven right now, I found some chocolate mint ice cream topping yesterday, and made some super chocolatey super yummy bc, my daughter tried eating half the bowl the lil chocoholic! I'm gonna mix the topping into the bc & ice those, & then finally make some key lime pie cupcakes today!

Mmmm those sound great Chass! Glad you have a lot of little helpers! I've been thinking about my next project. I think I'll make cotton candy, popcorn and snow cone cuppies. Everyone at my Salon loved the rootbeer float cuppies! thumbs_up.gif One of girls wants me to make 5 dozen more for her!

Ya, Jana was talking about them on the gourmet thread. I'm not a fan of jolly ranchers but I thought it would be fun to incorporate them into a candy bar theme maybe. The only problem is I don't know a lot of people that like jolly ranchers either. icon_biggrin.gif

I think they are sundae toppings but they were on an end aisle at Walmart. Not with the regular sundae toppings.

They were by the jelly by the ice cream toppings at our wal-mart. I dont think I could bring myself to put them on ice cream, but maybe I'll throw some of the green apple ones into a caramel apple cupcake, hmmmmmmmm.....not sure.

Bob- I really love those cupcakes!
Did anyone see bakerells's graduation caps made out of mini reese's cups? They are so cute! I'm thinking about doing them as a cupcake topper instead of on a lollipop stick.
I also still have three bags of kisses I bought to use with cuppies but haven't done anything yet. I have the candy cane, hot chocolate and cheesecake kisses, but I gotta say the cheesecake don't have much cheesecake flavor. Maybe I'll do a choc cupcake with Champa's choc/cream cheese filling and the kiss on top. Maybe a cheesecake pudding enhanced bettercream. Yum!

I also chose to ignore the comment a few pages back. Those of us that have been here for any length of time prob know better!

I stopped getting updates again and have been pretty busy. My youngest DD received her MBA last Saturday and then both my DD ran the Cleveland Marathon on Sunday! I posted picks on Facebook, but will try to get up here.
Oldest went back to DC yesterday. My DH has been sick for months. so I have been doing all his house stuff too (mowing, gutters etc) Oh boy!
