i waaaas making cupcakes for stepdaughter's red ribbon week at school but since she just started this school i didn't know that they are not allowed any baked goods AT ALL!!!! icon_eek.gificon_surprised.gif so instead of decorating them with red ribbons i put some on some old drop flowers i had laying around. (pictures in gallery) but now i have about 50 cupcakes that i don't know what to do with! icon_confused.gif

juju - you and my mom must be on the same hamburger helper brain wave! icon_lol.gif

knox - you need to teach me how to cook some southern food! i've never had black eyed peas nor okra (which i've heard you talk about before). anyway - it all sounds delish and i would LOVE to try it!!! icon_biggrin.gifthumbs_up.gif

I WONDER WHY I"VE NOT GOTTEN ANY REMINDER E-MAILS ABOUT THE SUPPER TABLE TODAY??? detective.gifdetective.gif

Wierd.

MXPARK: You can't really screw up on the black eyed peas, girl! They're super easy! Just go to the dried beans section, and get one of those bags of blackeyed peas that are dried.

Put 'em into a big pot of cold water, and swish 'em around with your hands. Pull the ones out that float, look stupid, or any pebbles you find.

Rinse 'em through a strainer, and set the pot onto the stove eye. Fill up the pot of beans with double the amount of water that you have in beans (at least.)

Put about 3 ham hocks in there, and a package of country ham pieces. You don't have to rinse it or anything. Just drop it all into the biggest stock pot you've got handy. Mines about a 6 quart, I think.

Anyway, now you've got: a pack of beans, double or triple the amount of water to cover the beans, 3 ham hocks, and a pack of country ham...right? Ok. NOW: Turn the stove eye on to almost high heat. Not quite, but almost. Add some black pepper and a couple bay leaves to the mix.

Cover it and leave it alone. In about 45 minutes, go back and check on it. You're gonna want to add some more water right about now. Just take a big ol' glass or two, and dump it in there. Stir 'em up a little. You want it more "soupy" than "beany." (You'll totally need more water than you think you will--seriously.) icon_wink.gif

NOW: Turn the heat under the pot down to about medium. Leave 'em alone for another 45 minutes or so. Go in there & check on 'em. Stick a fork into the ham hock skin. YOUR HAM HOCK IS YOUR "GUAGE" on when the beans are done. If the skin's still tough--add some water if needed and leave 'em alone for another 30-45 minutes.

Main thing's not to let 'em get dry in the pot. Then you'll have burnt to shit beans, and a nasty smelling house for about---oh...4 or 5 days. thumbsdown.gif

Now, some people like to soak their beans over night, before cooking them. Saves on the cooking time. But you've still gotta cook the meat forever, so I say--just do it all together. thumbs_up.gif

Now, when the beans and ham are done, just slice up some red onion and bake a quick loaf of cornbread, and voila'! Country cookin', girl! icon_biggrin.gif

Sorry for being late to supper...been busy doing nothing. Tonight was date night but DH fell flat out hours ago. I didn't have the heart to wake him.

Supper last night was Pizza & salad

Tonight the kiddos had Cheese Ravioli
I ate carrots and yogurt,(waiting 4 DH 2 awaken)
DH is having Sweet dreams

KC so nice to know there is another Meatloaf disaster story floating around here, other than mine. ... For anyone who wants to know my story here it is.

~~I made a meatloaf for dinner, my very first! It smelled so good and looked beautiful. I was so proud. I served my DH first and then my 2 young daughters. My oldest ate a bite and so did my little one. I asked them if it was good and they both looked at me and said, "Mommie I don't like it." I took a bite from one of their dishes and in horror realized I had found the secret recipe to ALPO!! I spit it out so fast I broke the sound barrier. Then in double horror I realized I had served my DH first and his plate was empty!! Needless to say we went out for dinner.~~

Please excuse me as I depart this dinner table. I'm to hungry to just talk about food , I need to eat.

Ok checkin in late to the table. Cake from He!! Kickin my butt. All but DD done and house cleanin before the party at 5 tomorrow night. I guess you can say supper was fish sticks and tator tots. I had a few bited of tots on the run. I didn't get enough dang fondant for cake today icon_cry.gificon_cry.gificon_cry.gif So I improvised and used vanilla and black to stain the waffle cones for the turrets for castle. At this point spellin gis out the window so beatr with me. I am glad I took a break to check in.

Thanks Glories I neede that little lift. I thought I was the only one that was A MEATLOAF KILLER icon_wink.gif But the part that made me chuckle was your husband eating all without a problem. That sounds so much like my husband. He would probably eat ALPO if I put in front of him and not bat an eye icon_surprised.gif He eats wierd stuff bruansweiger(spelling) that stuff smells nasty icon_cry.gificon_cry.gificon_cry.gif So my break was worth it THANKS To bad for your little girls icon_cry.gif I once thought I was being nice to DS. We were at a party at my sisters. We had alittle to drink. He was hungry so my sister said he could have some cereal. He got cheerios. Feelin good I thought Ok he could have alittle extra sugar on his cereal. I put SALT instead of sugar on it. It wasn't my fault though. She had big container filled with sugar, flour, and salt. The salt wasn't marked. To someone who has had a few to drink they look the same. icon_cry.gif My son says Mommy I think the milk is bad. Then my sister figured it out and started laughing. She then went and made him some more cereal icon_lol.gif

Monica I know what you are going through. Get well soon. I still have this crap hangin on. I have had it about 2 months. Goin to the doc again next week if I can't shake it. Been on drugs twice now. Get rest if you can thumbs_up.gif

Ok off to castle cake and cleanin. Check in with you guys later icon_cry.gificon_lol.gificon_cry.gificon_lol.gificon_cry.gif It is almost over icon_lol.gificon_lol.gificon_lol.gif

mx I had already cheated at this point. The 50% coupon for wilton clinched the deal with my weeks for he!!. I knew I should have bought another box. But I didn't want the waste either. And DH was still to tired to go out. And I couldn't get anyone else to bring me some. So improve was the way to go. I kind of walked away for tonight though. Cause I forgot about the top and really need fondant to do it. I have decided to use marshmallows in the morning and tint them. I hope it will do what I want. I need the top of castle look. So I better get back to cleaning my **** of a kitchen so I can have a party tomorrow. And I can fifnish the cake in the morning. One good thing. The cake for Great nephews B-Day cakes. Grand -Ma picked them up was WOW!! And got a call from MOM and it was exactly what she wanted like invitation for big cake. And I had free range for Smash cake it was from me for gift. thumbs_up.gifthumbs_up.gifthumbs_up.gifthumbs_up.gif Made me feel icon_biggrin.gificon_biggrin.gificon_biggrin.gif I had to redo the big cake cause I dug into it on accident. And had to rebake and decorate. I think Iwas under more stress and screwed up. But my DD cake is really stressing me. But she is here and telling me mommy I like it that way. MONICA: Glad you're getting a little better...just takes some time, I reckon. icon_rolleyes.gif

KAY: Yep...Knee deep in cheesecakes. I delivered SIX of them yesterday. I'm making one right now (a large) for a birthday party tomorrow. SHEESH!

My oldest son just got fired. Again. Dear Maude--I think I've finally convinced him to get the testing started for disability. He's always going to need help of some kind. I feel so destroyed right now. I wish I could take his place, and that he was out right now with a bunch of kids just being happy and being 18. Not in the cards, I guess. Feels like death.

Sorry to pour it all out on these pages. I'm really private at work though--I have to be. And I don't think my friends have a clue as to what's going on.

Tonight's dinner is

Ranch wings
French fries

Thanks for being there, Y'all.

Hey Gals...stopping to rest my feet and to get a bite to eat. DD is baking tester cakes for a wedding in Jan. I get to clean the kitchen and do whatever else she may need done. While we're on a break she and DGS went to a friends house for dinner. DH and 13 yr old are in Austin. He took her there so she could go with her cousins to see the Austin Ballet Production of 'Sleeping Beauty.' So it's just myself and the 2 litttle ones. Our Gormet meal for this evenings supper was, SpaghettiO's. icon_redface.gif Well it makes their little heats happy when I let them eat -junk- food, and I'm all about happy little hearts.
