Tonight it was to the chiro after driving around town between work and appointment. After the chiro we headed to Subway so I had a Honey Oat sandwhich with tuna and sweet onion sauce, and a sugar cookie.

Ohara-I am doing a sheet metal apprenticeship so I am working towards a Journeyman (or woman but there are very few Journeywoman out there soo... I dont' get to techinical since I work in a male dominated career) This is my fourth year so I will be done in may!!! Yeah!! The next few months will be pretty hectic though b/c as fourth year students we attend the craft championships in the state, and then the winner of state goes to nationals.

wgoat5 - yeah it has made me sick before also, heck I made a cake one time for a family wedding (grooms cake) and had to travel 6 hours to take the cake, well I was eating the scraps the day before when I was making it and we had to pull over on the side of the road a few times for me to get sick... it took me about 4 days to get all of the "sweets" out of my system before I started to feel better. It sucks but I guess it is a good thing b/c then it means that I must be giving my body the good stuff!

Melissa - oh cereal, I wish I could get away with that. Maybe when BF goes on vacation in a couple of months.

It is nice and cool here is iowa too, It looks like we have finally gotten rid of the hot weather, or at least for the next couple of weeks! I love this time of year, windows open, oven on during the day! (and not sweating to death b/c of it)

Last night I had the most disgusting thing happen. WARNING IT IS GROSS. I had bought hamburger on Monday night. Didn't go to cook meatloaf and some hamburgers for DH till Tues. night. OMG it was so gross. I opened the package no over powering smell. I made up 3 burgers put them in the pan. I mix up the meatloaf to put in the oven. The burgers start to cook and smell really bad. They literally smelled like COW POO. LIKE COW POO. I almost got sick from the smell. DH use to work in a processing plant and said it sounded like they got intestines mixed into the hamburger. So I go to the store today to get my money back and to tell the butcher what had happened. He explained to me that the sell by date is basically for them. And that you should cook meat especially hamb. the day you by it or freeze it. I haven't ever had this happen to me before. But I think the problem goes deeper. He then tells me that the one that I bought that was on sale was a 80% and that they themselves don't grind it there. They get it from a plant and then they regrind it with some of theres.. So it is ground twice.. So he gave me a new package of Hamb. the 93% lean that they grind. This is the one I usually get. But the other was on sale. I need to cook it tonight and I am scared. That smell really got to me. I now know not to get the cheap hamb. from there anymore.


Well I better go for now DS wants the computer..

Hi y'all I am new to this topic its nice to read all these * and get ideas ( sorta in a food rut ) ( I need new inspirations !).

Last night we had Chinese Chicken Cassarole. A recipe I got from my aunt simple easy and kids love it.


4 grilled chicken breasts * diced*
2 cans cream of mushroom soup
1 large onion * chopped*
1 whole celery bunch * chopped*
6 dashes of tabasco
2 tbs water
2 tbs soy sauce

put in the ove to heat through and cook the veggies * about 20 mins at 375*

then on the top put a can of cashew halves and a bag of chinese crispy noodles and put back in oven to toast the topping just a little bit about 5 mins.

Then let cool this is one of those meals that is best when its cooled off a bit or reheated.

Kay I HATE buying hamburger meat...it's so hard to get a good ground beef these days....about 10 years ago I found a * gag * bandaide in our ground beef.....now I can't stand it!

I think today we are doing bubba burgers! (prefrozen patties, they are SOOO good)

kay- good Lord, I was gaging reading that. I'm so picky about the meat I buy it ain't even funny.
Leily--what a cool job field! Hey, how is the house hunting going?
Ohara--you still tired, I am! Must be something in the air.
Christi--mmmmm, chili with hot dogs. that sounds good right now and I'm not a big hot dog eater.

Dinner was a lot of different things--- I made granola bars with choc. chips-honey and peanut butter and granola bars with choc chips-honey-raisins-sunflower seeds and peanut butter, scrambled eggs, french toast made with texas toast for the kids and french toast made out of a french baghet for DH and me (the bread dipping mixture was egg-milk-cinnamon- sugar and apple spice: then I sprinkle a little sugar on them when they are cooking on each side) topped DH's french toast with heated up fresh peaches. Also, made some peaches and cream muffins (next time I'll put a crumb topping on them) and of course bacon.

I have a lot of dishes to wash so I'm gonna get going and then crash after I put the lil' ones to bed.

Peaches and cream muffins

2 C all purpose flour
1 C sugar
1 1/2 C fresh peeled and chopped peaches
2 large eggs, lightly beaten
1 C. sour cream
1/2 C canola oil
1/2 tsp vanilla extract
1/2 tsp almond extract
1 tsp baking powder
1/2 tsp baking soda

(you can also add a lil' cinnamon if you want to the mixture)

Preheat oven to 400 degrees.
Mix flour,sugar, baking powder and baking soda.
Add peaches and lightly toss to coat.
In another bowl combine eggs, sour cream, oil and extracts: mix well.
Combine wet ingredients into dry, stir till just mixed (will be thick)

Fill greased muffin cups 2/3 full.

Here is the topping I'm going to use next time since the tops needed a lil' something.

1 1/2 C flour
1/2 C packed brown sugar
3/4 tsp cinnamon
1/4 C. cold butter

Cut butter in the mixture until it resembles coarse crumbs.

Sprinkle this on top of the muffin mixture and bake at 400 degrees for 25-30 minutes.

I swear you all out cook me all the time...WELL...lets see I tried to put together tomorrows dinner LETS SEE HOW THAT GOES...burnt the burgers to a crisp tonight so it was chicken noodle soup and crackers icon_sad.gif needless to say...DH was NOT a happy man!!!

Melissa....yes it's the air here in Ohio. Do you think I could use canned peaches, drained well, in the muffin recipe.

Kay...Yes that is disgusting. I actually had that happen to me recently, just with pork chops. Yuck. Sorry, you had to deal with that. What did you feed them all for dinner?

I had most of the day off. DH took care of DD this afternoon and evening. I ended up going shopping with my dear friend. It was so nice not to have any thing I HAD to do today. Or a time I had to be home. I did spend way more money than I should have. Everything I bought was on sale, if that counts for anything. I had a salad with chicken for dinner.

Melissa that muffin recipe sounds AWESOME..

Ohara that night of NASTY... I had already sauted mushrooms to put on hamburgers for Dh beakfast/supper.. So I made him a cheese omlet with mushrooms. And the meatloaf was to be supper for us the next night. So we kind of had left overs.. I was so GROSS I did make Dh the Hamburgers with the free meat the next night.
almost holding my nose just incase. but NO SMELL THANK GOD. I mixed up some meatloaf but froze it for later this weekend.. Not going to take a chance..

Melissa I am so picky also on meat but never knew thay did that with there chaep meat.... NOW I KNOW I am still not wanting to cook or eat meat

Ohara--it would probably work with drained well canned peaches, I just haven't tried it yet, but I would think it would work, just make sure to chop them up though.

Kay--I once bought the grocery stores brand of meat on sale and found a piece of metal wire in it! I now go to the meat market when I can and buy their ground chuck on sale or ground sirloin. (NEVER---NEVER---NEVER--BUY JUST HAMBURGER) It's all the leftovers and who know's whats in it. Learned last semester that they use ANY part of the steer to make h-burg (that's any edibal part---did you know eyeballs are considered edible) I was literally gagging watching them go into details in class--I wasn't the only one though. Oh and of course they had a video to show (gag!) I won't even get into the chickens-- icon_eek.gif All I'll say on that is to not buy from the large companies like Tyson, Perdue and so on.

mmmm monica your dishes sound sooooo good!
cakescraps--how did the shrimp enchiladas verd turn out --that sounds like something that would go over well in culinary class.

I should have probably posted this a while back in the beginning of spring --the start of grilling season---but just now thought of it.
I have some great tips on making sure you have juicy burgers, if you want them.

I have some bacon strips I crumbled up and put aside in the fridge yesterday so I'm going to make pasta with homemade marinara sauce-sauted chicken and crumbled up bacon with a layer of cheese melted on top. And the cheesy bread I make a lot. It's really easy to do to! I just buy a regular french baghet and slice it in half. Put a layer of softend butter on it, sprinkle on whatever seasoning I want (usually, garlic powder is the main one and whatever else sounds good at the time) and then put a good ol' layer of any italian style shredded cheese on top and bake. YUM! You can also make french bread pizza's this way too. Just slice the french bread in half and put a little seasoning on the bread, put you pizza sauce or marinara on it, layer whatever meat (pre-cooked!!) on top and then a layer of cheese on top of that, then bake.
Hmmmm, come to think of it--maybe I'll do that instead with the leftover bacon. Bacon with cheese pizza for kids and bacon with cheese and chicken french bread pizza for DH.

Okay, ended up doing Campbells salsbury steak veggie soup, pasta and cheesy bread. DH only wanted the soup and kids just the pasta and bread. I still have the bacon so I've got to do something with it by tomorrow.

Friday night took oldest DD out to dinner. Went to Spaghetti Warehouse. I was very disappointed in the food and service.

Saturday I woke up early (4:30 am) so I baked cinnamon raisin bread. It tasted good just wasn't quite right. DH and I had plans to spend the day at a local blues festival, so I made homemade vegetable beef soup and I baked Italian bread (DH's favorite). We also took hot cocoa and cookies. After DD's soccer game we went to the festival. We had a GREAT day. Only would have liked it to be a little warmer( and no wind).

Tara...what are acre peas?

Christi....no fair posting yummy breakfast. lol I love breakfast food, just don't want to go to the effort this morning. Pathetic I know. icon_redface.gif

Melissa....I am no fan of cold weather either. We had frost this morning. I have a tendency to not like fall because I know what's coming. I am trying not to be like that this year. But so far it's a struggle. icon_cry.gif

stickytoffeepudding......I love quiche. DH doesn't so I usually only get to have it out...or at "girl" parties.

Ohara--I LOVE the blues!!!!!!! My grandpa use to make me sit and listen to it with him and I got hooked. He always would say "boy, that's so lonesome ain't it" My Dad and I listen to it a lot. Drives my DH nuts but he'll listen to some of it.

Everyone else must be busy so I'll chat with ya'll later!

We had koesher all beef hotdogs, bananas, yellow zuc (the zuc. tasted really odd bitter taste and had a funky color so I took one bite and threw it out)and chips.

I just made some more granola bars and getting ready to make some muffins for in the morning.
Tara--I love warm weather (as long as the humidity isn't horrid) Today we had a high of 68, but it's suppose to warm up a little again throughout the week.

mmmmmm, Mongolian BBQ tonight! We have a Stir Fresh restaurant near us, it is always so good, you put what meats/fish you want in your bowl, fill it up with veggies, add the sauces you want, and the guy/gal at the big o' grill cooks it up for ya while you watch 'em, they plate it when done and you take it back to your table, all you can eat too! Best part is I DON"T HAVTA COOK!! gotta luv it!

bbq pulled pork (on the smoker as we speak YUMMY

grilled potatos with onions

corn on the cobb

and tomato mozzerella salad with some basil oil icon_biggrin.gif

dessert is a creme coconut cake with a light whipped fresh coconut frosting and a drizzle of chocolate

kids desserts are reese peanut butter cup cookies and milk or with banana cream pie icecream

(making emergency cakes to put in freezer tonight....had 2 last minute cakes last week...Not going to be up baking all night this week icon_sad.gif )

Darn dogs chewed on satellite wire so now we all have to actually spend quality time together LOL bawhahahahahah icon_biggrin.gif (14 year old is so disgusted LOL)

where we lived in FL the humity IS HORRID just about all the time. i will say today was a nicer day than most.
