Glace Poinsettias
I had an idea for this design and couldn't find any reference to see if it would work out. So I gave it a try. I'm very happy with the result -- it's pretty much exactly as I had pictured in my mind (rarely works out that way!). It's the NFSC recipe with Toba Garrett's glace (plus butter) icing. TFL

Candy's Cake
So a friend of mine always buys her own birthday cake. : ( This year, her daughter and I conspired to make her a special cake. She likes snowmen, penguins, hockey (specifically the Red Wings) and Jimmy Buffet. It was interesting to think of combining all of this in one cake! Chocolate fudge cake with raspberry filling and vanilla buttercream icing. TFL

Chrysanthemums
Friend said, "You choose the flavor. And make it a fall theme." So I went with gum paste chrysanthemums on a spice cake with apple and dulce de leche fillings, ivory-colored vanilla buttercream and fondant. The wrap is inspired by many here on CC, but especially AsburyArt who did a gorgeous cake with a white chocolate wrap.

57Th Anniversary
Cake for a co-workers parents. At first, she didn't have any requests but white cake and some lavender accents, and a small memorial to her sister. Only wanted buttercream. Said, "We're simple people. Just keep it a simple cake." But then her nieces asked her if there'd be fondant. They love to watch the cake shows and love what they do with fondant. So I really got to have some fun with it. After it was done I thought maybe I should have added some more roses under the pillow. But I didn't want to take away from the two on top, which are representative of the husband and wife. I'm never confident with "needs more" and "enough's enough."

Under-The-Sea And Jungle Birthday
This is a birthday cake for 9-year-old cousins who celebrate their birthday together, so the parents wanted one cake with two themes. Sarah wanted under-the-sea, Cole just wanted chocolate cake. Bottom tier is strawberry with strawberry filling. Top is triple chocolate fudge with dulce de leche filling. Got to try out some new techniques with the coral. Microwaved royal icing was very successful. Unbreakable gel not so much. Probably would have been ok, but I didn't have enough time for it to cure completely, so I couldn't use it. This was a ton of fun. Wanted to add a lot more stuff, but just didn't have the time.

Bright Birthday Cake
Birthday cake for a 29-year-old's birthday. Cake is strawberry margarita with Key lime buttercream. All covered in fondant (should have had a thicker layer of buttercream and rolled the fondant a tad thicker... you can see a lot of bumps in the top). Top is marbled. Gumpaste flowers and disco dust on the black decorations. Thanks to moonbabel and Jaime3679 for inspiration.

Buttercream Transfer
First time doing a buttercream transfer. I used to cut paper stencils and trace with a toothpick in the icing, then pipe and smooth. LOTS of work! So when I was asked to do this cake I decided to try a buttercream transfer. This was sooo much better! So quick and easy, with a better result. : )

Teen Boy Birthday
Birthday cake for a friend's FES. She wanted something "not too sweet" so I thought this would be the perfect cake to use ganache under fondant (which I've never done before). I think the flavor will be fantastic, but I definitely need more practice on smoothing the ganache and fondant better. You really can see EVERY little bump. And I got more air bubbles that I had to work out than when I use buttercream. I do like how sharp you can get the edges. The cake is triple chocolate fudge with dulce de leche filling. I used the Planet Cake recipe for the ganache. The top is dark chocolate fondant and the rest is vanilla fondant. Everything is dusted with cocoa powder to give it a soft, antique leather look. TFL

Fondant Rose
My first attempt at a fondant rose (well, third actually). The first was done following the Wilton method. It came out way too fat. Then I tried another, correcting what I thought were the problems with the first, but ended up with a pine cone-shaped flower. This was the third one, and I think I got it right! I also tried a little petal dust to get a somewhat realistic color. I think I need to experiment with that a little more to get it just right. I'm hoping to use some of these on an anniversary cake I'm doing in a couple of weeks.
