White chocolate pumpkin cookies
I made these for the first cookie party I ever entered last year and they came in first place! Every year I get requests to make these- they are fast and it makes a large yummy batch.( you can use chocolate chips if you don’t like white choco or do like I do and make it a combo of half and half)
White chocolate pumpkin cookies
Ingredients
- 1 cup softened butter
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 1 egg
- 2 tsp vanilla extract
- 1 cup canned pumpkin
- 2 cups flour
- 3 1/2 tsp pumpkin pie spice
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1 package white or choco chips (10 -12 ounces)
- 1 cup chopped pecans or chopped walnuts(optional)
Instructions
- cream butter and sugars in bowl
- beat in egg, vanilla and pumpkin
- combine dry ingredients
- gradually add to the cream mixture
- drop by rounded teaspoonfuls 2 inches apart onto ungreased baking sheet
- bake at 350 for 12- 14 minutes or until firm
- cool on wire racks
- * I usually drizzle chocolate on top of them for a finished look
