Double chocolate with a hint of mint, perfect for the holidays. Consider making a double batch, as these will be gone before you know it.
Mint Chocolate Cookies
4 cups all purpose flour
1 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups granulated sugar
1 cup brown sugar, packed
1 1/2 cups butter
1 bag (1 1/2 cups) mint chocolate chips
Preheat oven to 350 degrees Fahrenheit. Prepare a baking sheet with cooking spray, set aside.
Combine flour, cocoa, baking soda and salt set aside.
Beat sugars and butter until light and fluffy.
Incorporate eggs and beat well, scraping the bowl as necessary.
Sift dry mixture into wet mixture and mix well.
Fold in chocolate chips.
Drop by tablespoon onto baking sheet, 3 inches apart, slightly flatten each mound.
Bake 8 to 10 minutes.
Cool for 1 minute, then remove to a cooling rack.
