A yummy take on a classic pumpkin roll type dessert. I decided to marry the flavor of a pumpkin cake with a maple flavored frosting, much to the delight of skeptical friends & family. Sure to be a Thanksgiving favorite!
Pumpkin Cake w/ Maple Nut Frosting
2 c cooked pumpkin
2 c flour
2 c sugar
1 c vegetable oil
2 tsp cinnamon
2 tsp baking soda
1/2 tsp salt
Maple nut frosting/filling
1/2 c unsalted butter, softened
4 oz. cream cheese, softened
2 1/2 c. powdered sugar
1/2 c maple syrup (not the pancake kind)
3/4 c chopped walnuts
Combine eggs, sugar & oil. Then add rest of ingredients, mix thoroughly. Pour into two 8 inch pans bake @ 350 for apprx 35 minutes.
Cream butter & cream cheese until smooth. Add sugar & syrup, mix until smooth. Fold walnuts into frosting.
Makes enough to frost & fill two 8 inch cakes.
