Coconut Filling

I just love this filling, it complements the coconut cream frosting well!

Coconut Filling


  • 1- 14oz bag of sweetened flaked coconut
  • 1/4 cup cream of coconut
  • 3 cups half and half or milk
  • 1 1/2 cups sugar
  • 6 tablespoons cornstarch
  • 6 tablespoons butter
  • 3/4 teaspoon coconut extract
  • 1/4 teaspoon salt


  1. Process flaked coconut and cream of coconut in a food processor until finely chopped, stopping to scrape down the sides. Bring half and half, sugar, and cornstarch to a boil in a saucepan over medium heat; cook, stirring constantly, 1 minute or until thickened. SWtir in coconut mixture, butter, extract, and salt. Cover and chill for 8 hours.
