Toblerone Mudcake
This is a good alternative to just plain chocolate.
Ingredients
- 250g Butter
- 100g toblerone
- 100g dark chocolate
- 1/4 cup water
- 1/4 cup booze of choice ( I use baileys or similar )
- 3/4 cup buttermilk
- 1/4 cup vegetable oil
- 1 1/2 cups caster sugar
- 1 TBSP honey.
1/3 cup cocoa
- 3/4 cup SR flour
- 1 cup plain flour
- 2 large or 3 small eggs
- 1 tsp vanilla extract
Instructions

combine the first set of ingredients in a heavy based saucepan and heat gently until sugar and butter and chocolate are combined , set aside for a half hour to cool .
Whisk in sifted dry ingredients , eggs and essence.
Cook in a tin lined with baking paper , at 160 degrees celcius for the first half hour , reduce heat to 150 and cook for a further hour or hour and a half , until a skewer comes out clean.
This cake keeps very well and actually improves with age.
do you use unsalted butter?
I know I am possibly a little late answering , but I didn't get a notification . I used to use unsalted and add a pinch of salt, now I just use salted as I feel chocolate needs a little salt.
