Chocolate Filling

Great in cakes, as a strawberry dipping sauce or whatever you need a nice chocolate sauce for.

Ingredients

  • 1/4 cup powder sugar
  • 1 tbsp cornstarch (or 2 tbsp of flour)
  • 1/4 cup cocoa powder
  • 1 can (12oz) evaporated milk
  • 1/2 cup semi-sweet chocolate pieces
  • 1 tsp vanilla extract

Instructions

  1. In a medium saucepan, mix powdered sugar, cornstarch and cocoa powder together. Gradually stir in evaporated milk.
    Add chocolate pieces and cook over medium heat, stirring constantly until mixture just begins to boil and has thicken.
    Remove from heat and stir in vanilla. Refrigerate for 2 hours or until chilled.

Sounds delicious! Can't wait to try it, but can you tell me if this would have to be refrigerated once placed in a cake? The evaporated milk throws me off.

I've been trying to find a chocolate sauce to fill a cake with that will be almost like chocolate milk type syrup.....something really gooey. Does this filling harden like fudge? Or will it be gooey when you cut the cake open?
