I have got to try this recipe! However, I will have to use Crisco -- this time. My question is, how do you know how much "liquidated" creamer to mix in the shortening? All of it?

Also, I have a 4.5 qt. and 6 qt. KA. Which should I use? Do you think it will be too much for the 4.5? Or, not quite enough for the 6? Since the buttercream has to go over the beater, I wasn't sure.

Jukesbox:

here is the 6 quart recipe and I think the 4.5 is here on CC somehwere:

3 lbs sweetex (usse a kitchen scale)

6.5 lbs powdered sugar (use a 4 cup measuing cup, 4 cups=1 lb)

9 tbsp wedding bouquet

11 tbsp hot coffe mate liquid



cream sweetex and liquids on first speed very well. add half amount of powdered sugar, let mix 30 seconds, then add rest of powdered sugar. scrape sides of bowl very well turn speed up one notch, mix for 9 minutes. scrape sides of bowl around top, mix for 1 minute longer. (Do not turn off mixer durning this scraping!) now, turn off mixer, remove paddle and cover with plastic wrap. let sit for 1 hour or longer.

I made SS for the first (and only) time and it was a disaster. I cannot get Sweetex here locally so I read a post that someone used Walmart brand shortening instead. Mine was super gritty and greasy. I had a 5 qrt bucket filled and don't know what to do with it. I'm afraid to try it again with Crisco...it makes soooo much icing. I'm jealous because every post I read is so wonderful I feel like I'm a loser. icon_cry.gif
What should I do?

K, did u make sure it was a FULL trans fat walmart shortening?

The zero trans fat kind will mess it up for a lot of people.

Yes, I just checked my can and it is all vegetable shortening. I think that is one of the reasons someone on CC recommended it. I followed the youtube directions as I was making it. I used C and H ps and powdered creamer mixed the way you suggested. I'm at a loss as to what I should change. idesperately want to be a SS user. icon_biggrin.gif

we will figure it out, I promise!

Every now and then i get a gritty batch from the PS. sometimes they are just crap, LOL

see if the ingredienst has trans fats listed in them. if yes, go buy another brand of PS and try again.

It should work withut sweetex

I tried sugarshack's recipe before my final wilton course 2 class. It is amazing! My instructor tried a taste and was convinced I had bought it from a bakery!!! I used a bench scraper for the sides of the cake, and parchment paper with the fondant smoother. I finished it with the computer paper with the fondant smoother. It was so smooth that she thought I had bought the cake at a bakery too. I passed along the recipe and this website for great ideas. Thanks sugarshack for sharing your awesome recipe.

Shola,

That is exactly what I did. I don't have a KA so I halved the recipe and it worked great with my hand mixer. I just made sure my bowl wasn't too big or too small. I think the one I used was a 12 cup capacity and it worked great. It was a tupperware bowl. Good luck!

The recipe is at little higher up in this thread (posted Jul 5 by susarshack herself). She posted the full recipe for the 6qt KA, I need to find the quantities for the 4.5qt KA, but I'm sure it's here at CC. HTH icon_biggrin.gif

Where can I find wedding bouquet flavoring?? Is it okay to use a different flavor, i.e. almond flavoring, until I am able to get wedding bouquet? If I use a different flavoring other than wedding bouquet do I use the same amount in the recipe? Thanks for any input.

I can't wait to make this I order her Buttercream and Fondant dvd's and I am dying to get them!I can get wedding bouqet at my local cake supply store,I personally don't like it.I have read were others use different flavorings so I would think using almond would be okay!

You can order the WB online, sugarshack's web site has it. Here in Texas I can find it at the cake decorating supply places with no problem. If you have a place that you like for your supplies and they don't have it they can probably order it for you. In the meantime you can use another flavoring and I would use the same amount i.e. vanilla, or 1/2 vanilla 1/2 butter flavor which to me is the closest to WB. HTH

What does the wedding bouquet flavoring taste like? Does it have almond and vanilla? Butter? What's in it?
