Diane and anyone else in the know.

Ok so I finally have a good computer and I am trying to learn to put pictures on this sight. Somehow we got one posted in the Galleries--we have no idea how, but I am getting comments which surprised the heck out of me. I was so excited I could hardly stand it. What I really want to do is post pictures in the chat here on the forums. Please tell me how to do this. And also how do I find info on doing an Avatar???

Diane---I will need some help on Flickr also so will Flickr mail you over there. At least now people will know that I actually do things and just don't explain a lot of stuff that never happened. THIS IS SO MUCH FUN

When you are posting a reply if you scroll down a little you will seea button that says add attachment click that button and follow the directions there. there has been a bug in the system for awhile though and people are saying they can't post pics.

when you upload to the galleries in the purple underneath where the forums and recipes buttons are they have a button to upload pics. but to upload one into a thread you have to open an attachment. It took me awhile to figure it out only because I can't see it when I type.

Grrr. I was so far behind here. I get no updates anymore. If you have the new Cricut cupcake wrapper cartridge, set the size to 8 on your Expression machine. ..comes out to the right size for regular cupcakes. Cass had her baby !!!! YEA!!!!

I shared this with the Gourmet thread but since I made them cupcakes wanted to share on the Cupcake thread too. icon_smile.gif

The jalapeno mango cake turned out good! Not an overly sweet cake at all. It has a nice tartness to it actually. It takes a few steps but is a nice change and something different. The jalapenos combined with the sugar takes out the heat.
I made my own jalapeno/mango jam but I'm sure you could find it in gourmet shops or farmer's markets.
I took a jar of the jam and mixed it with 8 oz. of cream cheese. Then I mixed it with 2 liquid cups of Bettercreme whipped. You can use this as a filling. I made cupcakes so used it as a topping and made a SMBC mango flavor for the filling.
For the cake:

5 or so jalapenos seeded and diced. Cook in a pan of 1 C water and 1 C sugar until tender. Drain.

1 box BC white mix
1 C flour
3/4 C sugar
4 eggs ( I may use whites next time for a fluffier texture)
1 C mango puree and 1/3 C water
1 C lt. sour cream or if you can find mango yogurt
1 dram mango LorAnn flavoring
pinch of salt
Mix according to box directions and then add 1 diced mango and the
chopped jalapenos. Bake at 350.

I haven't been using the oil lately and tend to like the cakes better without it but if you prefer it then add 2 TBL canola oil.

I just tried to post my Email address to you in a private message and I couldn't get it to work!!!!!! Darn , stinking computer. I'll try again. I'm on Facebook. Has anyone used the Halloween candy corn in cupcakes? Do they just melt into a glob, do they retain the corn stripes?

I've seen many mentions of Bettercream (or Bettercreme-not sure which spelling) and also Pastry Pride. Are they the same? Where do you buy it? I'm in Henderson, NV, near Las Vegas. Thanx for any help!

Well, it just seems that my cakes were too oily with the oil and tends to hold together better without it and the original WASC doesn't even call for it. I think the sour cream makes them moist enough. I might substitute an egg white for one of the eggs next time though and see if it will make them fluffier. Ina Garten says her baking got better when she added extra large eggs. I only use large eggs, only because they're always on sale, but did add the extra 4th one. I added extra water because the pulp tends to make the mango cupcake more muffin like otherwise.

I'm going to be making mini-cupcakes and sell them as "Poppers" at an upcoming festival....when I read about your jalapeno mango cake, I thought perfect...Jalapeno Poppers...!! But how would it be without the mango...?? I would love to be able to have a jalapeno cupcake....?? Any ideas how to tweak the recipe to do just jalapeno and have it taste good...if not, how would jalapeno-mango poppers sound...??

Yes, you can just use your favorite vanilla, white or yellow recipe and toss some candied jalapenos in. Make some cream cheese frosting and toss a few in that too! Otherwise, any fruit pairs up well with jalapenos. Berries, plums, cherries, pretty much any fruit goes well!

I buy pastry pride and it is awesome you will love it! I am in Utah so I'm not sure where they would sell it in Vegas but I do know you can buy big tubs of prewhipped bettercream at Sam's Club...the one by me said it would be about 37.00 but it has TONS in it. People have suggested scooping out 2 c portions in baggies and freezing it all...hth

Thanks Grandma G for the Jalapeno Mango recipe---sounds really good!!! This will be one I will bring into work for the crew.

I am going to try a banana cupcake recipe this week and somehow incorporate chocolate and peanut butter----I've seen the same sort of cupcakes called "Elvis Cupcakes". I'm also putting together in my head a peach cobbler cupcake recipe......Once I decide what I'm doing I will put the recipe and pictures (if the picture problem has been fixed)..... thanks again for sharing......
