Looks like this thread has died. I want to thank all the people that gave me the confidence to think I could do something wonderful, I'm not there yet ( certainly a long way to be as good as you ), but you all have inspired me . I may become a 300 lb. Weepole ( the kind that don't fall down ), but I will make the most OUTSTANDING cupcakes....because of you. THANK YOU ALL ,and the Best of a New Year. I think of you often

Can you believe it's 2010? I get giddy imagining all the amazing cupcakes coming our way this year. I have managed to lose almost 60 pounds (bye-bye baby weight) but if I had my druthers I'd put it all right back on eating cupcakes. It's been like torture staying away from them. icon_cry.gif So... who is going to invent sugar free, fat free, calorie free cupcakes that TASTE good??? You'll be my heeeerooooo!! Come on, please? icon_razz.gif

Mel, that's great! You've got willpower! I think there is a WW recipe where you just add applesauce to the mix but once you get rid of the craving for sugar it's best to stay away from it. I made eggnog cupcakes but still need to fill them. With all the snow I can't get a trip out to buy some Bettercreme to fill them with. Might have to use whipped cream this time. icon_wink.gif

Me too like Melvira have attempted to make fat free/ low fat and/or sugar free /low sugar cupcakes and they just taste horrible!

Melvira, I've scoured for your caramel filling & can't find it & I know it's here somewhere. I'm looking for a thicker filling that'll won't break your teeth but won't run everywhere if I use it in a cake. Thanks

question for Mel: I am using bettercream (chocolate) to fill chocolate cake with a malt filling...I love the richer version...can I use white pudding with the cream cheese? I tried the chocolate to make a malt filling and the chocolate pudding made it too chocolatey? thanks, pat in ohio

I think you have to use the vanilla Bettercreme to get the malt flavor but you could try a vanilla pudding mix. Great things have been discovered by experimenting!

Here is Melvira's recipe:
Malted Cuppies Take Over Earth!!

1 Devil's Food Cake mix
1 pkg Devil's Food Jell-O pudding mix
1/4 c. Carnation malt powder (chocolate or vanilla)
1 Tablespoon Hershey's cocoa powder
4 eggs
1 1/8 cup water
1/2 cup vegetable oil
2 Tablespoons vanilla
Pinch of salt

Preheat oven to 400 degrees.

Mix all ingredients to moisten, then scrape sides of the bowl and beat on medium for 1 minute. (Batter will be THICK!) Scoop into cupcake liners or nut cups. Place in oven and immediately drop oven temp to 350 degrees. (If you bake in multiple batches, raise temp back to 400 between batches.) Bake for approximately 28 minutes, or until done. Yields 24-28 cupcakes.

Malted Filling

2 cups Bettercreme
1/2 cup Hersheys Whoppers Malt Syrup

POur both ingredients into mixing bowl, whip to semi-stiff peaks. Fill cooled cupcakes. Will fill 24-28 cupcakes.

This is my favorite vanilla cupcake recipe although I'm not vegan. I substitute buttermilk for the soy milk or use vanilla soy milk. I also use the oil instead of margarine. They are better tasting the next day and may seem kind of blah until you get the frosting on. I some times use buttercream or Bettercreme depending on if I need to color it. Bettercreme doesn't take color very well but I love it's creaminess.
I've actually tried them all for cupckes. SMBC, IMBC, cooked frosting, etc.

I need help pricing a potential cupcake order -- she wants pineapple upside down cupcakes for 130 people at a wedding next year. What do you think, how much would you charge (either per cupcake or per dozen)? How would y'all price that order?

You have to figure out your cost first and then how much your time is worth. Don't forget to figure cost of running your oven, dishwasher, electric, buying supplies, etc. Also extra if you are going to add decorations. Are you going to fill them?
It helps if they are all the same flavor--cost wise and time wise. If they just wanted a dozen or two they should be charged more per dozen because they aren't cost effective otherwise but since they are ordering so many you could give them a bulk rate. Check out some other bakeries in your area to kind of get a feel of their costs for cupcakes. (not including grocery or warehouse prices)
That's a lot of cupcakes! Sounds like you will be busy!

Bob, where are you at? That may help to determine pricing as well. I think minimum would be 2.00+ per cupcake, most of the bakers Ive seen or threads Ive watched charge each cupcakes as a "by the slice" price, 300 cupcakes = 300 slices of cake

That's how I quoted it, as a "cake per slice" and I never heard from her again. I'm thinking she's more familiar with the 50 cent Walmart specials and thought that's how they should be priced. icon_confused.gif I'm good with it though, I'd much rather be working on a cake than cupcakes. icon_biggrin.gif
