Ohh, that sounds good too! I'm saving the scraps from the cakes I'm working on tonight. Raspberry and Mango flavors. I'm thinking those are going to be some good cake balls, if I can bring myself to make them

Cass, did you quote the woman the price in advance for your " chocolate dream" cake? Just the labor you put into the cake made the price reasonable. Don't let the cheapskate grumblers discourage you. Stick by your pricing. You must stop doubting yourself.
Hall, I'm sending you a hug, you seem like you could use one about now. Take care of your pregnant self, and blow off your " crazy" relatives. Tell them you just don't feel well enough to take on this extra job for the party.
Quick Tips from Cooks Illustrated: To keep leftover cakes/cupcakes moist as long as possible, store the remaining portion under a cake dome with a whole peeled apple. The moisture from the apple keeps the air under the dome humid and discourages drying out.

Jana,
remember we were discussing about mango kulfi couple of weeks, I made mango bread using cardamom and saffron in it. It is almost like cake and will make wonderful cuppys for sure. It was vegan recipe. Let me know if you want it and I'll post it here.

Linda, yes keep at 350. It takes about 22 to 24 minutes to bake. They are really good! Not like a spice cake but the cinnamon comes through. If you can get black walnuts instead of english that really adds to the flavor. Sam's sells them.
When I think of my Grandma and Mom shelling all those black walnuts because they were such a delicacy! They would give little bags of them as Christmas gifts to other women because they were hard to get! icon_smile.gif

Working on more Str. margaritas, mocha toffee crunch, and pink champagne cupcakes this morning.

Friday I made lime margaritas, carrot, pina coladas and strawberry lemonade.

Grandama, Jana,
This was from a blog maintained by an Indian who has become a vegan now.

2 cups whole wheat pastry flour (I used all purpose flour since that's what I had)
1 tsp baking powder
1 tsp baking soda
2 level tsp powdered cardamom seeds (I added few strands of saffron and ground them in mortar)
1/4 tsp salt
In a bowl, beat together until well mixed:
4 tbsp canola or other flavorless vegetable oil
3/4 cup sugar
Add 2 tbsp flax seed powder and beat in. (I used two eggs in here since this was for kids and they can use some protein from eggs)
Add 2 cups mango pulp and beat until well mixed. (You can get these in any indian stores. They are sweetened mango pulp. I have seen these in big grocery stores where they have asian section)
Add the flour mixture and mix well.
You can add about 1/2 cup of slivered almonds to this, although I didn't because I didn't have any on hand.
Pour the batter into a standard 9X5 inch greased loaf pan and bake in a 350-degree oven around 45 minutes or until a toothpick inserted in the center of the loaf comes out clean, or with a few crumbs stuck to it. Please note that because no two ovens are the same, even at the same temperature, the bread might take more or less time to bake in your oven. Whatever you do, don't skip the toothpick check

It was very delicious and moist. If you don't get the mango pulp, you can use baby food jar (mango) Add sugar to taste and thin it with little water so it is the consistency of a tad thinner than condensed milk.

Pat, I didnt quote her a price, it was going back forth between my sis in law & I, Sis in law was talking to her mother in law. I was only planning on charging her 40.00 anyway because she is "family", and it's the 1st cake Ive made that was easy to do! I wasnt panicking for some reason. But I was in shock when she said her her preschool's cakes are made by someone who only charges .50 a serving! I know in Omaha, that good cakes are at least minium 2.50 for plain cake & bc, fancier flavors fondant and the price starts going up.

My mom came home last night looking for the grooms cake, but the lady had picked it up about 5 minutes before my mom came home (she's divorced, I have 2 baby bros, so hubby & I moved in with her about 4 months after her divorce when she was having child care issues, I'm a stay at home mommy right now), and she was soooooooooooooooooo bummed she didnt get to see the cake in person, so what am I doing?? making another right now for dessert......icon_biggrin.gif

Thanks Valli! The mango bread sounds delicious. Do you think I can cut up and puree mangos in place of the mango pulp or is mango pulp different? We have a large "fancy" grocery store here, a few actually, I can check there.

Jana,
You could definitely do that one. Only thing is this pulp from the can is sweetened. So, you'll have to sweeten it or use more sugar in the recipe.

Grandma,
I forgot to type the response about carrot cake with cardamom. We have an indian dessert which is carrot pudding. It has cardamom in it, but no ginger. Cardamom goes very well with carrots. If you put ginger, it will sort of become spice cake (just my opinion, that is delicious too). If you are putting ginger, add some clove powder and nutmeg powder too so that it becomes a super spicy carrot cupcake. icon_biggrin.gif

Well the mocha toffee crunches were the favorites out of all the cupcakes! I made a mocha chocolate with a cup of english toffee coffee, filled with english toffee Bettercreme and topped with a mocha ganache. I simmered the english coffee in the cream and then strained it over the semi-sweet chocolate to make the ganache and topped with toffee bits.

I'm seriously going up the wall! We're awaiting word still on an Officer who got hit by a car (he's a motorcycle officer), and is in critical condition with life threatening injuries, he's a single father, of an adorable kid, and it has been 6 days now. AND THEN last night, another Officer, a K-9 Officer, so in police world, that is 2 MORE officers, got hit by a drunk driver! He was running code, and a lady turned left right in front of him! Took out the front of his suv! Him & the dog were each rushed to their respective hospitals, suv totaled, drunk in jail, her passenger in hospital, I mean seriously, how much can 1 department take? Another officer was hit back in Dec, and another in Feb. 4 accidents in 6 months!!!!

Anyway, if anyone can fit Officer Garcia into their prayers, it's much appreciated! He's still in a coma in ICU.

I'll pray Chass! My uncle is a cop up here and so I know how it goes to hear about the department stuff all the time. I think some people forget that law enforcement officers are people and have families, too!!

I did. I used a yellow cake mix subbed rootbeer for the water, put in a couple of drops of root beer extract...put some of that new a&w root beer ice cream topping into bettercreme, they were delish & 48 were gone within 15 minutes. (out of only 30 ppl)

Depends on which flavor you want stronger...the Coke or the cherry. Instead of the cherry lorann, might consider Coke syrup (can find it at grocery and drug stores) and using the cherry lorann in the bettercream?
