I feel you guys on the breakfast difficulties for sure. My 14 1/2 year old is breakfast food fan except for meat, she doesn't eat meat. My 2 and 3 year olds arent too into breakfast unless it's biscuits and sausage gravy. Not too healthy. So I make these muffins and add whole wheat germ to them also. They are good to make up before you need them and I put 2 in a ziplock and keep them in packs of 2 for my oldest to grab on her way to school or to grab and throw in my purse for those "I wanna snack Mommy" times.
You might them being they are not usual sweet muffin batter.


Ingredients

* 1 cup all-purpose flour
* 3/4 cup cornmeal
* 1/3 cup sugar
* 2 teaspoons baking powder
* 1/4 teaspoon salt
* 1 beaten egg
* 3/4 cup buttermilk
* 1/4 cup cooking oil/ I use olive oil only in my baking.
* 1/2 teaspoon finely shredded lemon peel
* 1 cup coarsely chopped cranberries
* 2 tablespoons sugar
* 1/4 cup finely chopped walnuts/optional for the nuts

Directions

1. Grease twelve 2-1/2-inch muffin cups or line with paper bake cups. Set muffin cups aside.

2. In a medium mixing bowl combine flour, cornmeal, the 1/3 cup sugar, baking powder, and salt. Make a well in the center of the dry ingredients.

3. In a small mixing bowl combine egg, buttermilk, cooking oil, and lemon peel. Add egg mixture all at once to dry ingredients. Stir just until moistened (batter should be lumpy). In another small mixing bowl combine cranberries and the 2 tablespoons sugar. Fold cranberries and walnuts into muffin batter. Spoon batter into prepared muffin cups, filling each 2/3 full.

4. Bake in a 400 degree F oven about 20 minutes or until golden. Remove muffins from muffin cups. Cool slightly on a wire rack. Serve warm. Makes 12 servings.

Make-Ahead Tip: Prepare muffins; cool. Wrap and freeze up to 3 months. To reheat: Wrap muffins in heavy foil. Heat in a 300 degree F oven for 15 to 18 minutes.

No not me....LOL! Just the day.
I did pretty good yesterday not much exercise in a conventional sense but house cleaning with a 2 year old and 3 year old IS EXERCISE.
At least an exercise of patients for sure!!! icon_lol.gificon_lol.gificon_wink.gif

So off we go to shed them unwanted luv handles and not so jolly bellies.
I am attempting to finish cleaning house and do some holiday shopping so we shall see how much I can accomplish with my little "gouls" in tow.

Keep them water bottles flowing and them heart rates up and pumpin!

Good morning

I didnt have a very good night. I should start my period tomorrow and yesterday I was just so crabby!!!! I didn't like myself very much. I did work out when I got home, but then I proceeded to eat 3 hersheys miniatures (love the dark ones!) then on to chips and dip. I did manage to make baked chicken with dijon mustard and balsamic vinigar, which was from a diabetic recipe site. However I was still very crabby when DBF went to bed and had olives and pickels.

I didn't get up to work out this morning so will have to really work hard when I get home.

I will post my quote later today, I forgot them at home.

Karate - how was that chicken recipe that you tried? I get the newsletter from the American Diabetes Asso. and I got one this morning with a new recipe. It's Cinnamon Raisin Biscuits. I get those too, I also get the diabetic recipe of the day every day. sometimes they are a little "wierd", like putting fruit with meat, that is just too strange for me I dont like sweat meat. Anyway I have found a few really good recipes and I have a few sites that I have saved and look at from time to time. I also get the diabetic living cook book that comes out every other month. I have some in there that I want to try. The only problem is that I will be cooking for 1. DBF is so stubborn and will not try anything that he doesnt know he likes already, so I have to cut down the recipes. Thank goodness for the recipe converter sites!!!

You asked how the recipe was, sorry I forgot to answer that question.

I liked it, it was very tastey, there was rosemary in the recipe also. It turned out very juicy and tender, I have a left over breast that I will be putting in my salad for lunch today.

Any way I can less the amount of fat and calories in a meal I do so. I dont want my DH and DDs to need to loose weight if I can help prevent it ya know.
Every little bit helps. Besides DH is a contractor/painter and eats fast food for lunch everyday!!! But He has the metabolism of a teenage boy still at 35 so he's 5'11 and 155 lbs.! icon_rolleyes.gificon_wink.gif
That's o.k. though, when I am old and at a healthy weight and cholesterol level HE will be the one on a diet!!! icon_lol.gificon_lol.gificon_lol.gificon_lol.gif

All you non-breakfast people take a look at my last post on here yesterday and I wrote a good not so sweet muffin recipe if anyone might like to take a gander at it.


I start going to my curves workouts this saturday so I am trying to keep up my courage to go into public and work out for the first time.....is it really THAT hard and embarrassing? I'll admit I am a little frightened. icon_eek.gif

2sdae, I have the recipe at home and will post when I get home with my quote for the day.

Curves is (at least here) mostly women in the upper age bracket. You will not feel uncomfortable at all. I wish I could aford it. Perhaps next year when I get a credit card paid off I can use some of that for a membership. Its not like going to a "regular" gym where it feels like a meat market, with little young things parading around in their little tight work out clothes, and young buff guys eyeing every "skirt" there. Can you tell I have had my fill of those places!!!

I got an early christmas present from my DH and my Grandmother to be able to join...it's more expensive than I thought it would be!!! icon_confused.gificon_eek.gif

I have never really went to a real gym, just the local jewish community center and to our church weight room and gym.

I am VERY self conscious and dont like the feeling of being "looked" at.
Plus I dont think my DH would like that at all...disrespectful in his eyes to put yourself in that position, like you can avoid it in those meat markets!!!! icon_lol.gificon_lol.gificon_lol.gif

Oh well I get along much better with older women anyway...they arent trying to compete with each other, just to push themselves to get better at their fitness not at who can wear the littlest and tightest outfit!

And as one of the older women I would be there just for me, to stop the jiggle all over my body!!!

Have fun, it really is fun. I went once as a guest and it was inspiring. They have people that work there at every station making sure you work the machine properly and to answer any and all questions, and to keep everyone moving.

Balsamic Rosemary Chicken

4 (4 oz) pieces skinless chicken breast
2 TBSP Dijon mustard
2 TBSP minced garlic
2 TBSP water
1/4 cup white balsamic vinegar (I used the dark, I didn't know there was a white kind)
4 sprigs fresh rosemary
salt and pepper to taste

Place chicken pieces in a casserole dish. Smooth mustard over chicken. Sprinkle with salt and pepper and garlic

Pour water and vinegar over the chicken. Place one sprig of rosemary over each piece. Cover with foil and refrigerate for 2-3 hours to marinate

Pre heat the oven to 350 degrees F. Place the covered casserole dish in the oven and bake for 20 minutes. Remove the foil and bake for 10 minutes to brown the chicken

Not to mention you can burn calories watching T.V....not much but it all helps.

I am just so stoked to be really making progress and my daughter is feeling a little better & returning to school.
But we have to go to children's hosp on friday for another cat scan and sonogram and ekg on her heart so 1 more trip.

But we are getting there.

I cheated a little and weighed in today to help boost me along and I have laost 1 more lb. so I was feeling a little extra happy this morn. Plus my measurements were down in my waist 1/2 inch and my hips 1 inch!!!!!! thumbs_up.gifthumbs_up.gif

So let's keep them buns moving, water flowing, and smiles bright girls....WE CAN DO THIS!!!!!!!!!!!!!

Jodi, welcome. I think you'll find a lot of good support here, as well as good ideas. We take turns being cheerleader for the week to keep us all on track and we trade ideas, strategies, worries, celebrations, and fun stuff. Tuesday (2sdae) started this thread over a year ago and is our fearless leader, she's lost a significant amount of weight. We're glad you're here!

Well girls, how do you know when your body is starting to get used to healthy eating? For me? It was when I started to salivate at lunch today when I was preparing my salad! True, I was hungry, but I guaren-damn-tee you that that would not have happend 8 weeks ago! So that's my victory for the day. I've aleady eaten dinner and had 1276 calories today, so I've decided I'm finished for the day. I made this decision early because I'm going to a movie tonight (Charlie Wilson's War) and if I make the choice before I go to NOT have popcorn, then I don't have to make it in the heat (smell) of the moment. Well...maybe a diet Coke, that's it!!

Welcome to the club, Jodi! I'm sure oompa loompa's are very cute, but I know what you're saying!!

Well done on becoming so healthy Susan! Salads are an effort for me....I much prefer a plate of vegetables!

Well, our business trip was interesting......we'd been up there for a couple of days when DH rang to confirm the meeting time, and the fellow we were meeting said he was cancelling!!!!!!! We managed to arrange a meeting with someone else, and he's quite keen to be a dealer under us, and is possibly going to order 4 boats next week. Will have to wait and see what happens, but at this stage, we're pretty excited!

Well, I don't think I'm in dieting mode at the moment....the last couple of days I haven't really cared what's gone into my mouth! I'm not sure how to get out of this rut....

One good news! All my PJs are too big. I'm losing the pants!! That's a good thing!

I couldn't go to my aqua-aerobics on Thursday. The class is done in the high school pool and there was an electric problem on Thursday morning (maybe a little fire in the electric system) so the school was closed. So instead I did some stationary bike, it's boring! but at least I had some exercises done!

I know what you mean about the "rut" sonia. I have been having trouble getting my wheels spinning too! But yesterday I was thinking if I could lose as little as 1 pound a week I could be at my goal for summer. It doesnt seem like such a huge task. Of course we all know it is harder than it seems! Let's just not get into that "all or nothing" mentality.

Susan: that is so awesome that your tastes for healthy foods are dominating! Yea! I love that feeling...I want it back!!! There was a time a few years ago when I went on a diet and I would see a donut and not even have a desire to eat it.

I missed out on a lot of exercise this week due to bad weather and my earache yesterday morning. I decided to take all of my kids with me while I went to the urgent care late afternoon yesterday. I just couldnt bear another sleepless night! So I have an ear infection, which is weird since I don't ever recall having one as a child. Plus I havent been sick or anything. The doctor seemed a little surprised too. Oh well I feel a lot better today, but it feels all plugged up which is super annoying.

Okay I know it is the weekend, but I wont let it be my excuse to eat like a hog. LOL!

This is just a quick message to say "see you all at the end of next week" I am off to Atlanta tomorrow and today I am washing clothes and packing then dinner with the family so I can see the kids before I leave. I will check in either on Friday when I get home or Saturday morning.

I will keep in mind that I need to "dine" not eat and to take my time!!!! That will be my goal while I'm gone.

Merissa that's terrible about your ear infection. I've never had one but dh had one years ago and said how painful it is. Hope you recover quickly, I know I would not be able to stand that plugged up feeling.

What is this real age thing, I must have missed it. Not sure I really want to know, I'd probably be 5 years older than I am.

Merissa, ooooouch! I hope you feel better, that sounds like it hurts. A pound a week sounds very reasonable, you can do it, we're behind you. I'm staying within my calorie range but not feeling motivated myself, so I can relate. I've been really hungry all week and not exercising, which of course makes me feel worse emotionally. I think I need to start eating more protein. Live in the Gray!

Casey, if you go to www.realage.com you can take a test based on your habits that shows your body's "real age" as compared to your biological age. It's interesting and very informative because they give you all kinds of suggestions for decreasing your real age. I first took it a few months ago and was a full 12 years older than my bio age, but just this week I took it again and re-entered my new habits and am now only 2 years older! I can't wait to take it again!

Ohhhh, I'm hungry today, I absolutely hate that. I'm finished eating for the day but want more. I'm just over my low end range for calories but it's 9:00 and I feel that's too late, especially since I didn't exercise. Definitely going to try and find higher protein food while grocery shopping tomorrow.

Good LORD...it's taken me almost 3 hours to get to this page! What a PIA!! Casey and Sonia, I don't know why, but your last posts didn't create and ending point to jump into. So obviously, I won't spend this time looking again...I say if it takes this much trouble to find it, we need to start a new one.

I'll kind of be missing for a few days, my family is visiting from San Antonio, arriving tomorrow and staying through the week. I'm taking a few days off work to take them around but I'll check in when I can.
