Anyone Know What That Spray Is? It's Driving Me Crazy!

So I'm now a certified Food Network Challenge Junkie (cake challenges of course), and just about every one of them shows a decorator (Mike M. especially) spraying something out of a can on their finished piece. WHAT IS THAT STUFF?

It looks like a can of air to me, but that just doesn't make sense.

It's seriously driving me crazy not knowing!

it's a preval sprayer... just type that in the search and you'll get a lot of threads about it...

It might also be cold spray. If there is sugar on a piece or chocolate, the cold spray will set it faster.

If it had a clear jar attached to the bottom, it was the Preval sprayer; but I'm guessing it was cold spray.

What is cold spray, and where can you get it?

It is called Freeze Spray and is meant to be used on pulled sugar or chocolate display pieces. Cold air is sprayed to quickly set the sugar or chocolate.

do you think this spray could be used on fondant flowers? to help them dry faster?

Zakia6 I don't think the freeze spray would actually dry the fondant or gumpaste, if you think about the sugar pieces or chocolate displays the spray is used to quickly set the warm pulled sugar use to attach two pieces together, same with the chocolate, the pieces are put together with a smear of melted chocolate and hit with the freeze spray to make it set up instantly.

i posted the same question after the princess cake challenge - doug gave me 2 links to find it but it's pricey....not sure if i'd use it enuff to splurg & purchase it but saving the link in case something ever comes up where i know i'll use it
