Oh No, What Was I Thinking???

This is kind of funny now...but it won't be in a few weeks.

Last Feb. a friend showed me a picture of a butterfly cake & asked me if I could make it for her birthday. I said SURE, NO PROBLEM. One of our other friends was put in charge of "ordering" the cake when the time came.

Last June I made one of my B-I-L a bday cake...just for the heck of it. Well, the OTHER B-I-L found out that I did that & didn't make HIM a bday cake & he's been giving me a hard time about it. So, I told him I would do one for him this year.

Last week I did a Bridal Shower cake & this morning a lady that was at the shower called me to order a cake for her grand-daughter's 1st bday. I asked her the date of the party & she said 8/11/07. No problem.

After I got off the phone w/her, I went to check my email & there was a message from that friend...reminding me about the butterfly cake I'm doing. I replied, "Oh yeah...when is that again?" Her answer...8/11/07. uhmmm okay.

Tonight hubby comes home & I ask him when is B-I-L #2's bday?? 8/11/07!!!!!!!!!!!!!!!!!!!!

Now I have THREE cakes due on the SAME DAY!!!!!!!!! I'm not a professional baker...I just do this for a hobby. How on Earth am I going to swing THIS??? icon_eek.gif

you can look at it several ways....

1. who is most likely to pay you?

2. who do you love the most?

3. who did you commit to first?

4. suck it up, and get to work... icon_smile.gif bake ahead of time and freeze. make icings, freeze. pace yourself and decorate the day before. make them simple.

Bake them early and freeze. Make all the gp and fondant figures..butterflies....flowers...other decorations now. make your BC the 9th. Work on decorating them maybe even complete one the evening of the tenth? Maybe even deliver that one that evening?If not throw it in the fridge when its done and move on to no.#2... It can be done...just remember to BREATHE...lol...HTH.

I haven't done 3 cakes at a time, but I'm guessing you might want to make in advance and freeze..

Hopefully someone else will have some great ideas! There was someone in a recent post who did 7 or 8 cakes this past weekend!

Bake early and maybe write out a list of what needs to be done. Prep everything early if possible and then work on what you can at the same time....

And then of course there's always the open a bottle of wine and see how it goes....

You'll do it! You'll be fine! Just hang in there and don't panic!

Think of like doing a wedding cake...do as much as possible ahead of time. Make all your frosting and mix all your colors a few days ahead and refrigerate. Prepare your icing bags, but don't fill them. Think of all the things you usually don't do until you are ready to work on a cake, and try to do as many of those things as you can as much ahead of time as possible. Bake the cakes two or three days ahead and as soon as cool, wrap in saran wrap and refrigerate. Ice the cakes a day or 2 before the big day, and the day before, decorate as much as you can on at least one. Spread out over a few days, it is not such a big task. You can do it with a minimum of stress if you get organized, and stay as organized as possible. And with luck, some of the same colors might be used on all 3 cakes.

Yes, it's a frightening thought, but just get yourself organized and whatever you can do in advance (any fondant or gumpaste work, etc.) do. It might also help if you write down everything - all needed supplies, colors, etc.

I had two cakes due on June 16th and another one on the 18th. The one on the 16th that I was most concerned about was a H.S. graduation cake for a young man who has allergies to milk, eggs and peanuts (his sister also has allergies to milk). So I really wanted to make the cake special for him and it also had to serve 60.

The other cake was for my daughter's birthday party. Thank goodness I had done the topper the month before. And the cake that gave me lots of trouble because my edible image printer was 'acting' up was my patriotic cake due on the 18th.

I also did cakes on June June 5th (PTO), 7th (Girl Scouts end of year pool party), 8th (for a neighbor's friend's 91st b-day) and 9th (Little League end of the year picnic).

Boy, was June a busy month and the PTO and 91st birthday cakes were for the same person and my 1st and 2nd paid cakes. The Grad and patriotic cakes were my 3rd and 4th paid cakes. So I was feeling a bit overwhelmed but it helped me to roughly sketch them out and plan ahead on colors and small details.

Don't know if this is a help or not. I hope it is. I'm sure you'll do great.

Okay, I've been thinking about the "positives" in my situation

1) The VeggieTale 1st bday cake will be a FBCT, so i can do that early.

2) The butterfly cake will be royal icing flowers & butterflies, so I can do those early.

3) The B-I-L cake is nothing specific, so I can do whatever I want to & use up the leftover icing from the other 2 cakes, right?

You can bake the cakes ahead of time and freeze them. Once they are iced and decorated they will also keep for several days. So bake them, wrap them and freeze them. Then unthaw and decorate one at a time. If you are doing fondant the cake will keep longer as long as you seal the bottom edge well.

On one of the other cake sites that I belong, someone had 41 (yes, forty-one!!) graduation cakes due the same day. She took every spare table top she had and created an assembly line type layout. They were all sheet cakes (she posted photos), but they were very nicely done as she's quite talented.

I don't know how she could stand having cakes all around her in her own home, but she managed.

I actually have 4 cakes all due the same day this weekend, so I know how you feel. I too only do this on the side. My neice's birthday is Friday and my sister decided to have her party on Sunday. And another one of my customers had ordered a birthday cake for her daughter. She was going to do the party next weekend. Then she wanted another cake for the same day because her brother was coming into town and it was close to his birthday. Fine. Then she decides she wants to move the party to this Sunday - the same day as my neices party. icon_eek.gif Now she also wants a cake for her SIL's BF who's birthday is near. What could I say. And none of these cakes are just simple cakes. I have already started making the fondant figures and I'm going to start the cakes today and freeze them. But I will definitely be busy on Saturday decorating!! Hope my husband is patient with me as he will be pretty much taking care of our four kids on his own that day! icon_lol.gif

i froze it once, and after coming back to room temp, i re whipped it and it was fine. wrap WELL and make sure its completely seeled though so it doesnt absorb any freezer odors.

3 wedding cakes on the same day is petty normal around here . . . Just get organized, make a timeline and bake and freeze in advance.
