My cake flavor list is forever a work in progress, and currently I'm trying to develop a 'top shelf' list (ie cakes with liquor). I try to offer very different, unusual flavors, as I seem to have a lot of customers who really appreciate being able to choose something out of the norm.
So, I have a few ideas already. Some I've tried, some I haven't. I'll list those here, but if anyone has any suggestions of something you've made, had, or would like to try - PLEASE share! I know everyone here is very creative!
Here's what I've come up with so far (remember, I'm going for the unexpected here!):
Orange Galliano cake (aka The Harvey Wallbanger)
-made with vodka, orange juice and Galliano liqueur
Baileys Buttershots cake
-made with Irish Cream and Butterscotch schnapps
Campari cocktail cake
-made with grapefruit and blood orange juices and Campari
Pink Champagne cake
-made with, of course, pink champagne
Green Fairy cake
-made with Pernod (an anise-flavored decendant of absinthe)
Grasshopper cake
-made with Creme de Menthe and Creme de Cacao
Margarita cake
-made with Tequila, Triple Sec and lime juice
Any suggestions for other flavors are more than welcome!

Pina Colada Cake
White Cake Mix - 2 layer size
Instant Vanilla Pudding Powder - the 4 serving size
2/3 cup water
1/3 cup White or light rum
1/2 cup Crisco Oil
4 Large Eggs
1 tsp. coconut flavouring, optional
1/2 cup long thread coconut, toasted in 350 degree F oven, stirring often, 5-8 minutes
Pineapple Icing
1/2 cup icing sugar (confectioner's sugar)
8 ounces of canned crushed pineapple with the juice
1 Instant Vanilla Pudding Powder, 4 serving size
1 tsp. of light or white rum
1 Envelope of dessert topping mix (not prepared) (Dream Whip or similar)
1/3 cup milk
2 tbsp. long thread coconut, toasted in 350 F oven, stirring often for 5-8 minutes - for garnish
For the Cake: Combine first 7 ingredients in medium bowl. Beat on low until moistened. Beat on medium until smooth, about 2 minutes. Stir in coconut. Turn into a greased and floured 9x13 pan and bake in 350F pre-heated oven for 35-45 minutes or until toothpick inserted in centre comes out clean. Or use two 8 or 9 inch layer pans, about 25-35 minutes at 350F. Cool.
For the Icing: Mix first 4 ingredients in small bowl. Let stand for 5 minutes. In separate bowl, beat dessert topping with milk until stiff. Fold into pineapple mixture. Ice cake and sprinkle with coconut. Cut into 18 pieces.

Lime Daiquiri Cake
This cake is a deliciou excuse to make Lime Cream,
Serves 12 to 16
Cake:
1 package (18.25 oz /515 g white cake mix
3 eggs
2/3 cup water
1/3 cup rum
1/3 cup veg. oil
1 tbsp. grated lime zest
1/4 cup lime juice
1 to 3 drops of green food coloring
Glaze:
1/2 cup granulated sugar
1/3 cup lime juice
1/4 cup rum
Lime cream:
1/2 cup granulated sugar
1 egg
1 1/2 tsp grated lime zest
3 tbsp. lime juice
2 tbsp butter softened
1 cup whipped cream.
Preheat oven 350 degrees you will need a 10 inch bundt pan or 10 inch tube pan greeased and floured.
Cake:
In a large mixing bowl combine cake, eggs, water, rum ,oil and lime zest and lime juice. Beat 2 min stir in colouring. Spread batter in pan evenly Bake for 45 to 55 minutes. Cool for 20 minutes.
Glaze: In a small saucepan, over medium heat, combine sugar, limejuice and rum. Cook stirring till sugar dissolves. Poke holes in warm cake with fork or toothpick. Brush the glaze over the cake, letting it soak in. Cool completely. Serve with Lime Cream or just plain whipped cream.
Lime Cream: Combine sugar, egg, lime zest, and lime juice in small saucepan. Cook stirring constantly over medium heat until thickened. Add butter stir till melted. Cool thouroughly in a mixing bowl on high speed beat cream to stiff peaks. Fold into the lime mixture serve on the top of the cake.

Has anyone ever had Blackberry wine cake? It is really good. I had some last year at Christmas.
It's a very deep red color and had the wine in the cake and the glaze that was poured on top. Don't know how it would do for a layer cake though, as it is very moist.

I, for one, and very glad it is Friday because I am getting thirsty! Adventurous will come next, so I'll have to test out a recipe or two...how about a chocolate and wine cake?? any idea on how to achieve such a thing?

I use some type of liquor in almost all of my baking...my favorites are Disorrona, peach schnapps and butterscotch schnapps...I also use the butterscotch in my peanut butter cookies...it gives them a more creamy smooth feel...if that makes sense...
Just reading this post blew my diet!!!! Actually, I'm going to a wine fest this weekend. One of the vineyards makes some awesome wines with peaches, raspberries and blueberries. So if you do figure out how to do the wine cake - let us know!!!
