I just wanted to stop lurking for a moment and say hi to everyone here. I've learned so much from this site already and can't wait to learn more. I just finished the third of my Course I classes. Everything has gone relatively smoothly so far. My first cake was a 3D rugby ball covered with star fill-in. This week's cake was a 2-layer 9" round with shell borders, drop flowers, and two clowns (one sitting and one propping his head up). The decorations and colors are limited because of what we were working on and what I brought to class with me. I've got big plans for next week's cake. I hope all goes well.

Welcome, your cakes look good. Question/tip for you, on your second I notice use the top of the cake. Usually when rounds are put the together they are stacked top to top.
first layer of cake - the bottom of cake is on the board and the second layer you flip and have bottom be the top of your cake. Usually this give you a nice smooth top for you to ice.

I love your clown cake. I also am taking the wilton course I class. I just did my clown cake on tuesday night. It was the worst. The room I am in is so hot my clowns were falling over!! I won't be taking a picture of that!!!

Momoftwogirls, always place the top of the cake on the bottom. That way you get a nice flat surface to work on (when you are working on a sheet cake). The rounds have always gone top to top as far as I know.

No, problem your wilton instructor should have told you that. That was the first thing I was told about making cakes.
When you bake your cake the bottom is all ways nice and flat and has a nice crust. Then your trim off the top if too high in the middle, you want that to be even.

About the cake stacking thing. Well, it depends on your pans too, if they flare our and such. But personally, with round cake pans, I have always levelled the tops of them with a serrated knife. Then, the top of one of the goes onto the cake board, so the bottom of that layer becomes the top, leaves a nice smooth area to fill. Then the levelled top goes on top of the fllling, so that I have the bottom of the cake, as my top cake and it is nice and smooth.
Don't think it is a set rule, the main thing is to get the cakes to line up correctly. Whatever works!
