Easter Basket
I'm very happy with how this cake turned out. 10" carrot cake decorated with buttercream icing. I attempted to make it 100% dairy free, but the icing with all shortening just leaves a really bad after taste. My husband (who is the lactose intolerant one) told me to just use butter. So I did. I did a crumb coat and scraped off the excess. It was full of crumbs, so I added some more crumbs from the portion I took off when leveling the cake and it made a really nice looking too and bottom border, I thought. I used mini eggs, a fancy hazelnut filled chocolate egg, and peeps as yummy accents. I can't wait to try this cake!

Corvette Tire
This was my first attempt at fondant. I bought already tinted black fondant for the tire, and made marshmallow fondant for the rest. I think I just used a box chocolate cake and canned frosting. This was supposed to be practice decorating for my daughters first birthday cake, but I ended up running out of time for her cake and was unable to decorate hers with fondant.

Dragonball Z
My mom wanted a dragonball z themed cake for my brothers birthday, and I wanted to try out my giant cupcake pan, so I did a representation of Goku when he goes super saiyan. I didn't read up on the pan and made the cake according to a 9"x2", so it was kinda dry and overdone, but it was still good. I made a chocolate shell for the bottom of the cake, which was awesome, but maybe a little thick. I used just a basic buttercream to sweep the hair up. It didn't work out as I had planned, but my brother understood what it was, so I guess that counts lol. I think my icing was too thin for what I wanted, and I think I'd use fondant to get the effect I was looking for, if I were to do it again. Then I made dairy free chocolate cupcakes that were super easy and very moist. I shaped them and piped them to look like a dragon. I was very happy with how they turned out, but I think if I were to do it again, I'd use a different tip and try to get a scale effect.

Naked Rapunzel Tower
I am doing a naked wedding cake this summer, so thought I'd do some testing before hand. I did this for my nieces 5th birthday. This cake needed more layers but I ran out of time. It ended up a bit dry as I had to make it several days in advance (I was leaving town). I have since learnt there are tricks to keeping it moist longer and will apply these tips when it comes to the wedding cake. Anywho...this is a basic white cake dyed purple, with a cream cheese buttercream dyed pink. I layered the buttercream, then made a dam and made a layer of fresh strawberries followed by a thin cover of buttercream before adding the next cake layer. Too many decorations for the short cake were just a store bought fondant. The braid was over 3 ft long and, in hindsight, not something that should be made days prior to decorating as it kept breaking when I was trying to wrap it around. The tower itself is rice krispy with skor toffee bits. The wood accents and purple roof were made of modeling chocolate (butterscotch chips for the wood, vanilla dyed purple for the roof). I learned a lot by making this cake, and overall it turned out nice. I forgot to take pictures before I rushed out the door, so sorry for the bad pictures. It looked so much nicer in person :)
