Easter Basket

I'm very happy with how this cake turned out.

10" carrot cake decorated with buttercream icing. I attempted to make it 100% dairy free, but the icing with all shortening just leaves a really bad after taste. My husband (who is the lactose intolerant one) told me to just use butter. So I did.

I did a crumb coat and scraped off the excess. It was full of crumbs, so I added some more crumbs from the portion I took off when leveling the cake and it made a really nice looking too and bottom border, I thought.

I used mini eggs, a fancy hazelnut filled chocolate egg, and peeps as yummy accents. I can't wait to try this cake!
