This was a replica of a Folly where a couple got engaged so it was the perfect subject for their cake. It was Chocolate Biscuit cake and ideal for firm structure.
These were the favourites of a wonderful man in his youth, they were painted with Cocoa Butter/dusting colours.
Mermaid made with Modelling paste and coral made from Isomalt with golden sprinkles mixed through it. The theme was ‘Relaxation’.
Save The Bees
Was so delighted to receive Gold and Best in Class for my cake which was inspired by “sustainability” at Cake International, Birmingham. The flower centre was made dot by dot, making bees was also painstaking as I kept loosing the gelatine leaves but it got from Ireland to UK intact and was a labour of love overall.
Made this for a little friend who is a Big Harry Potter fan, it was a chocolate cake, made the stands with Fondant which had CMC added for strength.
St. Anne's Church, Cork. Ireland
Made this church for our local sugarcraft exhibition and was delighted it received a Gold award. This was a sugar sculpting made to scale and took 12 weeks to complete. The Church continues to be a place of worship since 1722.

This was a replica of Sandycove Martello Tower in Dublin where two James Joyce enthusiasts met and later married so it was an ideal subject for their wedding cake which was carved from Biscuit cake.
