
Oktoberfest Cake
Beer stein cake for my husband’s birthday! The design on the stein is the House Targaryen sigil. I always like to read helpful hints about construction, so I thought I’d write out a long explanation. Thanks to SandraSmiley for her help with the lid and handle! Everything is edible except for the beer stein lid and the can (which I chose to make non-edible due to weight concerns). The lid is fondant-covered Styrofoam. The can is real. For the beer, I used the “Boiled or Poured Sugar Recipe” on this website and poured it over a sharpened wooden dowel, turning the dowel all the time, until I got an effect I liked. Then I drove the dowel through the cake into the cakeboard, and hot-glued the end of the dowel onto the can. All of the accessories are made of fondant and hand painted with food coloring. The cake board is covered with fondant, textured by hand, and painted with food coloring. The “foam” is melted marshmallows. The “sauerkraut” is coconut colored with food coloring and mixed with piping gel. I painted the cake with luster dust mixed with everclear and then dusted with charcoal petal dust, which gave it an aged pewter look. Then I steamed the cake to set the dust. For the handle and lid, I formed a C shape for the handle out of floral wire and used floral tape to attach the handle for the lid at a 90 degree angle to the C. Then I poked a hole in the lid so that I could easily insert the wire. Then I covered everything with fondant mixed with tylose. The cake was Durable Cake with peanut butter buttercream and chocolate ganache. I used five six inch rounds.

Mah Jong Case Cake
It's been over six years since I last made a cake, but I came out of "retirement" to make a cake for my grandma's 88th birthday. No one deserves a cake more! And luckily, I remembered most of the skills. Everything is edible except for the box lid (which is foamboard covered in fondant). I drew the mah jong tiles using food coloring markers, cut out the horse using a steak knife (because I couldn't find my x acto knife), and used very dry fondant panels to form the sides of the box. The 100-dollar bills are edible images. The cake itself was white almond sour cream with chocolate ganache.

Philadelphia Art Museum Cake
My cake replica of the Philly Art Museum! The main building is vanilla cake with chocolate ganache and homemade caramel filling. The side wings are vanilla cake with chocolate ganache and fresh raspberry filling. I used a few new techniques here, which I liked. For the windows, I placed black fondant on the buildings, then cut out panels of ivory fondant measured to size. I used a fondant cutter to cut out windows, froze the panels briefly (5 min) so they wouldn't distort, then applied them to the building. I don't know if you can tell, but I cut gelatin sheets out for the windows and applied them using piping gel. This was probably one of the most challenging cake experiences I had. Philly had a bout of 90+ percent humidity for four days in a row, causing my fondant to melt and slump. Then I had to drive it 3.5 hours to DC and bring it to a party on a rooftop in the hot and humid DC weather. I'm just glad it survived!

Jungle Cake!
I made this cake for my nephew's second birthday, and I think it may be my favorite cake ever! I assembled it on site, so had no idea how it would look beforehand, but it turned out surprisingly cohesive! Flavors were white almond sour cream with swiss meringue buttercream and homemade raspberry filling. Figurines are modeled by hand out of fondant with tylose added. Leaves were cut out painstakingly with an exacto knife! Many thanks to ceramics by you, who inspired the giraffe, elephant, and lion. Thank also go out to the other jungle cakes on cakecentral, especially another monkey one who inspired monkeys holding the letters but whose name I forget!

Vegas Cake!
I created this cake for a casino night. Everything was edible except for the Vegas sign! The sign had lights around it that flashed on and off. I drew the queen of hearts playing card with edible food coloring markers. The coins are fondant and the 100 dollar bills are edible images. The poker chips were white almond cake with homemade raspberry filling and Swiss meringue buttercream. The dice were white almond cake with chocolate ganache. The playing cards were rice krispie treats. Two big dowels driven through the right stack held everything together!

Law Office Cake
I made this cake for my law school professor to thank her for writing me a letter of recommendation. I recreated real items from her office. The desk and counter (under the windows) are white almond sour cream cake with chocolate ganache. The walls are foamboard covered in fondant. Everything else is gumpaste! The cake is 100% edible (with the exception of the skewer holding up the Tiffany lamp and the foamboard base and wall). Lots of techniques in this one: hand-painting for the bamboo and trees, figure modeling, drapery, etc.

Usual Suspects Cake
The Usual Suspects line-up reproduced in cake! I made all the figurines by hand using fondant mixed with tylose and aine2's tutorials. The figurines are replicas of the people from the movie--right down to their clothing and hand gestures. The middle figure is a replica of my professor, who I made the cake for. Cake is on the bottom and background is foamboard covered with fondant.

Rat Terrier Cake
I made this cake for a friend. It's a replica of his dog, complete with a birthday hat and bowtie that the dog once wore to a party. This was a white almond sour cream cake with chocolate ganache filling. The head was made out of rice krispie treats. A big dowel through the center held everything together!

Penn Law School Cake
Cake I made for the University of Pennsylvania Law School's graduation! A replica of the school. This was enormous, measuring 2.5 feet by 4 feet and using 11 batches of WASC (that I baked in my Kitchenaid and tiny oven!). I also had a minor breakdown because of the immense humidity that caused all of the fondant to melt 24 hours before the event. But it turned out okay!

Roulette Wheel And Board
This cake was enormous! The cakeboard was 3 feet by 5 feet. The roulette wheel actually spun--I built the cake on a cakeboard with a wooden dowel and stuck it into a rotating Christmas tree stand. My boyfriend built a raised cakeboard for the cake so we could stick the motor underneath. Red velvet with cream cheese frosting for casino night!

Tiger Cake
My entry in the New York Cake Convention. It took 2nd place for 3-D Sculpted Cake, Intermediate Division. Body is all cake. Paws and head are made of rice krispie treats. Many thanks for Susie108 for her help and to gossimerwings for inspiration. I've added some construction photos which hopefully will help! To support the head, I used four dowels nailed into a wooden circle. I drilled a hole into it and stuck a dowel through to keep the head in place (see photos).

Crayon Cake
Thanks to kiraboo for the fantastic original inspiration and instructions! I saw it and had to try it. I donated this to a local homeless shelter for their monthly birthday party for kids. The kids loved it and insisted on eating specific colors of crayons. The crayon tips are fondant-covered ice cream cones.

Cylon Helmet
Chocolate cake with peanut butter buttercream. Carved out of 4 8 inch rounds and a dome baked in a bowl; the crown is built up with rice krispie treats. Structurally, it was one of my hardest cakes. I wish it were a little neater (especially since this design shows every flaw!) but was generally happy with it.

House Of Cards Cake
Red velvet cake with cream cheese frosting. Playing cards done in white chocolate using chocolate molds and fondant poker chips. This was for a Casino Night at my college house and I used edible images of the college house crest on the back of the cards. Thanks to gilpnh for the original idea!

Law Cake
Cake I made for two friends who just finished taking the bar! The lawyer is glad to be finished with a mountain of legal texts and has started drinking. Red velvet cake with cream cheese frosting, covered in mmf and gumpaste decorations. The lawyer figure was the hardest part- I mixed the gumpaste with too much water and it took forever to dry!
