AI'm making a cake for a bridal shower. The bride wants a white cake with a lemon filling, but not lemon curd, and buttercream frosting. Is there an easy lemon cream filling or can I use lemon pudding?

ALemon buttercream. Mix your buttercream with freshly squeezed lemon juice and lemon rind for extra zing!

That is delicious, I use this buttercream with both raspberry and blueberry jam for my sponge cakes. I also grate the rind into the cake batter because that's the favourite sponge in our house.

A[@]cakebaby2[/@] I'm not a big fan of lemon anything, but I make it for customers no problem! For fruit flavours my favourite is raspberry puree mixed in buttercream in a choc sponge. Yum

Sounds lovely, even more so when the wind is howling a hoolie and i cant get out to the one shop for miles where I could buy rasps at this time of year.

I shall think of your lovely cake while I demolish the last of the Christmas one of which I am now heartily fed up xx

quick & easy -- any pudding box(large instant) (in this case, Lemon) plus 1 cup milk, plus 1 cup heavy cream.  whip it up, refrigerate awhile and you have a mousse filling

Yup.^^^^ that recipe is the winner. You can add extra lemon extract too if you want it stronger.
