im making a wedding cake in the shape of cushions in a pile .the top cake is to be fruit cake and im not sure how to carve it without it crumbling or the knife snagging on the fruit pieces ...should i chill or freeze the cake first?
If I have to carve a fruitcake , the prep starts much earlier than the carving part. I make sure I have really cut up all my fruit very small before I even soak the fruit. I also don't put nuts in as the knife can catch on them and can drag and damage the cake.
It needs to be a good moist fruitcake. I also like it aged for at least six weeks , fresh cake is way harder to carve.
I have found that having the cake semi frozen is also of benefit.
Good Luck , a pillow shouldn't be to bad , the first fruitcake I carved was a Porche .
Also if you make a paste with some of your offcuts and some alcohol (wizzed in a blender) you can use it to fill in any holes where the fruit does snag on your knife, without altering the taste of the cake.
