If I understand correctly you are making a stacked cake.  Yes, Ihave used the Wilton hidden pillars & plates and yes, it does work very well.

You don't say how may tiers you are making but if it's just 2 or 3 you don't even need to use that.  You can use plastic drink straws and cardboard cake boards for support :)  Again, it does depend on how big your cake is - size and # of tiers.   I have made 1000s of cakes using straws and no pillars.  Check out my photos.

They'll work fine, you'll have to cut the pillars to the height of the cake, but you can do that easily with a serrated knife. I've used them like that before for cakes that I didn't trust to not sldie around for whatever reason.

AWell its going to be a 3 tier but they are pretty big and I don't trust just using straws but would still use a cardboard under every cake if I use the pillars and plates the sizes are 16, 14 and 10

Yes, you use the cardboards to handle the cakes while you're icing them, then put them on the plastic plates to assemble the cake. You can use packing tape loops to attach them to the plastic plates, too.

I use wooden dowels and plastic tuffboard separator boards, and I wouldn't worry about the cake collapsing as long as it's dowelled correctly. I don't like the cardboard rounds, but the tuffboards are greaseproof so I trust them to not get weak and greasy.

The tape that I use is jut packing tape from taples, nothing exotic. I sell the tuffboards in my tsy shop, or o can get them from other cake supply stores. Do a google search for tuffboard cake boards and a few sources should come up. You can buy them directly from th manufacturer but I don't know if they sell small number of them since I get them in bulk. Maybe try the "home use" section on their website?
